Make this easy halibut recipe with green beans and cherry tomatoes in 25 minutes! It bakes in a flavorful Mediterranean-style sauce with citrus, olive oil, fresh garlic, and spices.

One pan Mediterranean Baked Halibut Recipe with Vegetables

lemons

Private Reserve Greek extra virgin olive oil

In a large mixing bowl, whisk the sauce ingredients together. Add the green beans, tomatoes, and onions and toss to coat with the sauce. With a large slotted spoon or spatula, transfer the vegetables to a large baking sheet (21 x 15 x 1 inch baking sheet, for example). Keep the vegetables to one side or one half of the baking sheet and make sure they are spread out in one layer.

Now, add the halibut fillet strips to the remaining sauce, toss to coat. Transfer the halibut fillet to the baking sheet next to the vegetables and pour any remaining sauce on top.

Lightly sprinkle the halibut and vegetables with a little more seasoned salt.

Bake in 425 degrees F heated oven for 15 minutes. Then transfer the baking sheet to the top oven rack and broil for another 3 minutes or so, watching carefully. The cherry tomatoes should begin to pop under the broiler.

When ready, remove the baked halibut and vegetables from the oven. Serve with your favorite grain, Lebanese rice, or pasta. It's a great idea to add a hearty salad like this Mediterranean Three Bean Salad. 

I'm new to eating/cooking fish, and this recipe is so easy yet flavorful and healthy. It's one of my husband's favorites (and mine!).  I've found it's forgiving if I don't have quite the right herbs on hand or if I use different vegetables. Thank you for sharing such a winning weeknight recipe!

Super easy to prepare. I used broccoli crowns and small chunks of zucchini and thin slices of potato. Added a bit more oil and fresh, finely chopped parsley, basil and chives. Baked on pan for 20 mins + 2 additional minutes under broiler.  Served with Forbidden Black Rice. Excellent!

We made this recipe tonight.  It was very easy to prepare.  We had nearly everything except for the green beans which we substituted broccolini (we would have used the green beans if we had them on hand).  It didn't take long at all to cook and the flavors were a perfect match for each other.  We had couscous on the side.

It plated perfectly, as well.  Simply beautiful colors and flavors.  Everything in the meal is good for you.  Very healthy.

I'm a huge fan of sheet pan dinners and this one will be a favourite whenever I can get the freshest fish. I added some tiny potatoes  — no bigger than the tomatoes — and put them in first for about 5 minutes before adding everything else. Delicious!  I grew up in the Middle East and love Mediterranean flavors, so I will be trying more of Suzy's recipes.

What a delicious and simple recipe.   I’ve made it several times, and it’s great every time.  I cook the vegetables first for about 8-10 minutes before putting in the  halibut.  Then add it and cook at 325 for 12 mins, then broil for 3 mins maximum.  It comes out perfectly.   Thanks for the great recipe.

I brought home 30 lbs. of halibut from Alaska last year and have tried many different halibut cooking methods and recipes since. This recipe is my favorite! Not being an oily fish, I learned the hard way that halibut is easy to overcook and it gets dry and tough. Suzy's recipe adds the right amount of olive oil to keep the halibut moist and tender. It's an easy recipe to prepare, cook and clean up. I didn't have ground coriander but the internet suggested caraway seeds and cumin as a reasonable substitute so I used a 50/50 mix of those two spices and it worked well. I only had cherry tomatoes on hand so used those cutting each in half. Halibut fillets can be thin on the outer edge and pretty thick on the other side so I cut off the thin side and sliced the thicker part across the middle so I had three equal sized boneless pieces. The recommended cooking time was perfect! I toasted a couple pieces of crusty bread to go with and together they made a perfectly delicious and healthy supper! Definitely worthy for serving to guests! Thanks Suzy!!

Your recipe was delicious as usual. I substituted asparagus for the green beans, as that was what I had.  Another time I would start the onions off in the oven 5 minutes before the green vegetable and tomatoes to make sure they are roasted just a little bit more - just personal preference.  I also cooked the fish in a separate dish so that I could whip it out of the oven as soon it was done - hate overcooked fish.

Very easy to make.  The halibut was very tasty, moist and juicy.

The flavors were outstanding. I would have given this 5 stars, but the fish turned out overcooked. I think 15 minutes in a 450 degree oven is too long for fish, not to mention the broiling at the end (which was necessary to caramelize the veggies). I think next time I'll marinate the fish for 20 minutes and grill it separately while the veggies cook in the oven. And definitely using fresh dill weed!

I was not able to get halibut where I live so I substituted tilapia and for the veggies I used zucchini, yellow squash, red peppers, and onions...DELISH!  My 17 year old even ate it all!  Thank you!  Will be making again!

Loved this recipe I am always looking for quick fish ideas.  A few tips..I put parchment paper down on the sheet pan for easy clean up...tossed each veggie individually and then placed on the pan and finally I only used 1/2 cup of olive oil and it was plenty.  Will make again for sure!

Tried this tonight and had to amend the recipe due to lack of decent extra virgin olive oil and only one lemon.  I had a small bottle (approx 2/3rds cup) of Greek Kokkino dressing (which is mostly olive oil with red wine vinegar and greek oregano) - so used that instead of olive oil and the little bit of vinegar absolutely shone through.  Also had to use red onions and shallots instead of white onions and they really 'popped' with extra-yummy flavor!  This dish was a HUGE hit with my wife, who is a bit picky when it comes to fish texture and 'fishy taste' and the halibut was just perfect for this Mediterranean sauce.  I might be tempted to marinate the fish a little next time, to allow the flavors to penetrate more, but overall this was an unqualified success.  Thank you for this and i'll be searching for more of your recipes in the future, versus random google search by ingredients.

Loved this, I used sea bass as this was what I had and added some cut up gold Yukon potatoes and kalamatas. I think I’ll use this dressing on all my roasted veggies from now on, so good! So good on the fish as well!

I tried this recipe last night except instead of green beans I used fresh asparagus.  I also used frozen (thawed) halibut.  Since it was just me and I used 2 smaller pieces of halibut I cut the sauce recipe in half.  I also just used cherry tomatoes, no onions.   It was DELICIOUS!!!  I cooked orzo for a side with some more lemon juice and parsley and drizzled a little bit of the extra sauce over it after plating.  Great dish!  I will make this again!

Made this last week with a B list assortment of vegetables from my fridge. Liked it so much I actually bought broccolini and grape tomatoes to make it again tonight. Yum.

A no-fuss white fish dish with minimal prep, all baked in one tray with new potatoes, juicy tomatoes and tender asparagus

Heat oven to 200C/180C fan/gas 6. Put the potatoes in a large roasting tin and drizzle with the oil. Season and roast for 20-25 mins.

Take the roasting tin out of the oven, turn the potatoes over and add the tomatoes and asparagus, nestling among the potatoes.

Place the fish on top and squeeze over the lemon. Top each fillet with a smear of butter, season and return to the oven for a further 10-12 mins or until the fish is cooked and the vegetables are tender.

Give your fish a Mediterranean makeover with this tapenade topped beauty. So gourmet, yet so easy!

Heat all of olive oil, except for 2-3  tablespoons, in a pan over medium heat. Add in cherry tomato halves and garlic and give it a good stir. Cook till the garlic starts getting aromatic, about two minutes. Stir in chopped roasted bell peppers and cook for 1-2 minutes. Mix in the chopped herbs. Give it a mix. Add chopped olives and capers and cook for a couple more minutes. Stir in a splash of lemon juice and drizzle a little bit more olive oil.

Tzatziki Sauce Recipe

3-Ingredient Mediterranean Salad Recipe

In a small bowl, combine the spices to make the spice rub

Pat fish fillets dry and season well on both sides with kosher salt and black pepper, then rub all over with the spice rub.  Set aside for now.

Prepare the lemon basil sauce. Simply combine all the ingredients for the sauce in a small bowl or mason jar. Whisk well together. Set aside.

If serving this grilled fish gyro-style, prepare the pita etc. Prepare Tzatziki sauce according to this recipe, and prepare the Mediterranean salad according to this recipe. Set aside for now.

Coat the bottom of a large cast iron skillet (or a non-stick skillet) with extra virgin olive oil. Warm skillet over medium-high heat until the oil is just shimmering but not smoking.

Add fish fillets and grill on one side for about 3 minutes or so without moving it (the underside should look golden and crispy). Then, using a fish spatula, turn it over to the other side (it should release easily from the pan). Grill for another 3 minutes or until this side turns nice and crispy as well. (You'll know your fish is ready when it turns opaque all the way through and flake apart easily.)

Serve fish hot. Add a splash of fresh lemon juice on top and a generous drizzle of the lemon basil sauce.

To assemble grilled fish gyros, use 1 pita wrap (or large lettuce leaf) per person. Swipe a bit of tzatziki sauce over the pita, add the grilled fish and lemon basil sauce, then add a bit of the Mediterranean salad and olives to your liking. Wrap or fold pita and enjoy!

This is one of my favorite recipes! If you sprinkle a little cardamon on too it will be more like shawarma. I love it with baba ganoush.

Just wanted to say that I've just made this and it was super delicious. Me and my wife both loved it, the spices make the cod really special. I did only one thing differently - I am dairy intolerant so I used soy yogurt for the tzatziki but it worked out great. I didn't even taste hints of soy when I ate it. Thanks so much for the recipe!

Mediterranean Fish in Tomato Sauce

tsp sugar (or 1 tsp honey (optional))

cayenne pepper

tsp red pepper flakes

red bell peppers, peeled and sliced ((see notes))

Cauliflower couscous, regular couscous, rice, or mashed potatoes

If your fish is frozen, thaw it in the refrigerator overnight. Rinse your fish fillets with cool water and pat dry. In a small bowl or 2-cup measuring cup, whisk together hot water, tomato paste, paprika, sugar or honey (optional), cayenne and 3/4 tsp salt (if you&#39;re watching your salt intake you can cut it to 1/2 tsp or less, as needed).

In a large saute pan, spread out the cilantro or parsley, roasted bell pepper slices, and garlic cloves to make an even "bed" for the fish fillets.

Place the fish fillets on top of the bed of herbs, peppers and garlic. Sprinkle lightly with salt and pepper, then sprinkle evenly with the red pepper flakes.

Pour the seasoned tomato paste liquid over the top of the fillets, coating each fillet with sauce. Turn on heat and bring the sauce to a medium simmer.

Reduce heat to medium low, cover the saute pan, venting slightly, and let the fish simmer for about 15 minutes, basting every 3-4 minutes with sauce, until the fish is opaque and flaky.

Remove the lid from the pan and turn up the heat to a higher simmer. Let the sauce simmer and reduce for about 5-7 more minutes, continuing to baste the fillets, until the sauce thickens a bit and the largest garlic cloves are soft.

Serve fillets over couscous, cauliflower couscous, rice, mashed potatoes, or your favorite starch (use cauliflower, rice, or potatoes to make gluten free). Top the fish with sauce, garlic cloves, and sliced peppers. We usually serve it with a light spinach salad, roasted vegetables, or sautéed greens on the side.
