This Mexican Chicken Marinade is made with a blend of olive oil, lime juice, garlic, chili powder and herbs and spices that create juicy and tender chicken!

Mexican Chicken Marinade

garlic ((about 3 cloves))

coarse kosher salt

In a large resealable plastic bag (or a large mixing bowl), add all the ingredients and toss to combine.

Add the chicken (I used 3 pounds boneless skinless chicken breasts) and toss with marinade to coat.

Seal bag or cover and marinate in the fridge for 2 to 8 hours.

Remove the chicken from the marinade and grill or cook until the internal temperature reaches 165°F.

Place all of the ingredients (except chicken) in a food processor or blender and blend until there are no large chunks of garlic left. It will be a thick liquid.&nbsp;

Pound your chicken breasts so that they are uniform in size. I usually like to keep them around 1/2 inch thick so they cook evenly.&nbsp;

Place the chicken in a zip-top bag and refrigerate overnight or for at least 3 hours. (Overnight is preferred for the best flavor!)

Heat your Lagostina panini pan over medium heat and cook the chicken for about 5 minutes per side or until cooked throughout.&nbsp;

Allow the chicken to rest for about 10 minutes before cutting. I just place it on a plate and cover it with foil.&nbsp;

Make the marinade: Into a bowl, add chili powder, cumin, smoked paprika, oregano, brown sugar, cilantro leaves, lime juice, olive oil, salt and black pepper. Mix all to combine.

Marinate the chicken: Place the chicken breast or thighs in a shallow dish or a ziploc bag ( plastic bag ) and pour the marinade over the chicken. Mix it to combine. Cover the chicken with clingfilm and let it sit for at least 30 minutes or up to 24 hours in the fridge for the chicken to be well-infused.

Cook: You can bake, grill, air fry, or pan-fry the chicken as desired.The internal temperature of cooked chicken should register at least 165F/74C with an instant read thermometer.

Classic recipe, simple and delicious. I added 3 cloves of fresh, grated garlic and the zest of one lime. Grilled the breasts at 425° for 8min on each side. Perfection!
