Sesame Garlic Miso Butter Mushrooms

lbs. button or crimini mushrooms (see notes)

softened butter (vegan butter, if needed)

miso paste (gluten-free, if needed)

garlic (very finely minced)

Heat the oil in a large frying pan over medium-high heat. Add the mushrooms and cook, stirring occasionally, until the mushrooms are brown all over, about 15 minutes.

While the mushrooms are cooking, make the miso butter. Mix the softened butter with the miso paste and garlic cloves.

When the mushrooms are cooked, add the miso butter to the pan and cook the mushrooms for two minutes more. Drizzle the sesame oil over the mushrooms and serve right away.

Creamy Miso Mushrooms

oz 400 gramsrams mixed mushrooms

onions (sliced)

olive oil

miso paste (white or brown miso)

water

garlic

soy sauce or tamari sauce

sea salt and black pepper

cream (or vegan cream)

Add the mushrooms to a large, high-sided baking tray and roast for 10 minutes.

In a bowl, whisk the oil with the garlic, soy sauce, miso, water, salt and pepper, stirring to combine well, then mix in the onions.

Pour the mixture over the mushrooms in the baking tray and gently stir to coat. Return the tray to the oven and cook for a further 20-25 minutes, stirring occasionally or until the mushrooms and onions are cooked and soft. Add the cream to the baking tray and stir. Place back in the oven for a minute to heat.

Serve the creamy miso mushrooms with rice and steamed spinach.

Cook on medium heat, stirring often until cooked through. This may take up to 10-15 minutes.

Add the water throughout the cooking time to help with the cooking process.

When the mushrooms are cooked through add the miso butter to the pan.

Cook for another 3-4 minutes, coating the mushrooms in the melted butter.

Sprinkle remaining chopped chives and stir through.

Serve miso mushrooms with your favorite vegetables, protein and rice.
