Molten Chocolate Cakes

dark chocolate chips chocolate

tbsp cream (, heavy/thickened)

/ 7 tbsp

unsalted butter

eggs

egg yolks (, at room temperature (Note 2))

caster/superfine sugar

tbsp flour (, plain / all purpose)

Ice-cream or cream ((highly recommended!))

Cocoa or icing sugar / powdered sugar (, for dusting)

Strawberries (, raspberries

Place chocolate and cream in a microwave-proof bowl. Microwave on high for three 20-second bursts, stirring in between, until chocolate is melted and smooth.

Let cool on the counter for 10 minutes, then refrigerate for 3 hours or until firm enough to scoop into balls. (Note 3)

Molten chocolate ganache:

Preheat oven to 200°C / 390°F (180°C fan).

Grease &amp; dust moulds: Grease 4 x 170ml / 5.75oz dariole or pudding moulds with butter then dust insides with cocoa powder, tapping out excess. (Note 4)

Melt chocolate and butter: Place chocolate and butter in a bowl. Microwave in 30 second bursts, stirring in between. Stir well until smooth, then leave to cool for 5 minutes.

Whisk eggs and sugar: In a separate bowl, whisk together the eggs, egg yolks and sugar.

Combine with chocolate: Add the melted chocolate into the eggs, and mix until combined.

Fold through flour: Add flour and fold through until just combined. Do not over-mix.

Fill moulds: Pour or scoop the batter into prepared moulds until it reaches ⅓ of the way up.

Drop in ganache: Place one heaped teaspoon of ganache into middle of batter.

Cover with batter: Top with more batter until it reaches 1.5cm / ⅗' from the top rim. Repeat for remaining moulds.

Bake 20 minutes: Place the moulds on an oven tray and bake for 20 minutes, or until the pudding tops spring back when gently touched.

Turn out: Stand for 2 minutes, then turn onto plate. Tap base then gently remove each mould.

Serve with ice-cream or cream, dusted with cocoa powder. Decorate with strawberries!

Preheat oven to 450F. Butter and flour your ramekins.

Melt the butter with the chocolate on low heat in a double boiler or in the microwave.  Whisk until smooth.

In a medium bowl, beat the eggs with the egg yolks, sugar and salt until thickened and pale. An electric mixer will work best.

Fold the chocolate mixture and flour into the egg mixture. Pour the batter into the ramekins and bake at 450 for 6-8 minutes, it really depends on your oven.

Let the cakes cool in the ramekins for a minute, then cover each with an inverted dessert plate. Carefully turn each one over, let stand for 10 seconds and then unmold. Sift powdered sugar on top and garnish with berries if desired. Serve immediately.

Use a high quality chocolate. This is the main flavor and you will taste the difference when using a better ingredient.
The bake time will change based on the size of your ramekins and your oven’s idiosyncrasies so it’s a good idea to do a test batch before you serve these at a dinner party.

Slow Cooker Molten Chocolate Cake

box Devil's Food Cake Mix

chocolate pudding mix ((1 package))

Rolo mini candies (unwrapped)

Cut out a large piece of parchment paper and place it in your slow cooker on low heat, then lightly spray with cooking spray.

Mix together the cake mix, milk, oil, and eggs for the first layer and beat for two minutes.  Pour into the parchment paper in the slow cooker.

Mix together the instant pudding and milk and beat for two minutes, then carefully and evenly pour the pudding over the cake layer in the slow cooker- but DO NOT MIX IT IN!

Carefully arrange a layer or Rolo mini candies over the top of that, but DO NOT MIX IT IN!

Place lid on slow cooker and cook on low for about 3 hours, cooking time will vary depending on your slow cooker.  Cake is ready when a toothpick placed in the center half way down comes out clean.

When finished cooking, the top will become a layer of chocolate cake, and underneath will be a gooey, chocolate caramel sauce.

Spoon into individual bowls, and serve warm with vanilla ice cream.

Classic Chocolate Molten Lava Cake

unsalted butter (divided)

chocolate (baking bars)

kosher salt

all-purpose flour (plus extra for dusting ramekins)

sugar (for dusting)

Set the oven rack to the middle posiiton. Preheat the oven to 450°F (232°C).

Melt 1 tablespoon of butter in a microwave-safe dish for 30 seconds. Brush melted butter on the inside of four 8-ounce ramekins. Lightly coat with flour. Tap out the excess flour. Set the ramekins on a baking sheet.

In a double boiler, over simmering water, melt 8 tablespoons butter (4 ounces) with the chocolate. Remove from heat and whisk together to combine.

In a medium-sized bowl, beat the eggs and egg yolks, sugar, and salt at high speed until thickened and pale, about 3 minutes.

Quickly fold chocolate into the egg mixture. Fold in the flour until just combined.

Divide batter evenly into the prepared ramekins and bake on a sheet tray for 9 minutes, or until the sides of the cakes are firm, the tops are just slightly cracked, but the centers are soft and slightly jiggly. Let the cakes cool in the ramekins for 1 minute.

Run a knife or small spatula along the sides of the ramekins a few times to release the cake.

Cover each ramekin with an inverted dessert plate. Carefully turn each one over, let stand for 10 seconds and then unmold. Use the spatula or knife to lift the corner of the ramekin and a gloved hand to lift and unmold the cake.

Sprinkle with powdered sugar. Serve immediately.

Easy Lava Cake | Molten Chocolate Dessert Recipe

butter

90 g bittersweet chocolate

90 g flour (all purpose)

ice cream

fruits

Using the water bath method, melt 90 of bittersweet chocolate and 100g unsalted butter. Mix properly and let cool down for a bit.

Mix 2 whole eggs and 2 egg yolks with 90g granulated sugar. Make sure the sugar dissolves completely.

Add 90g all purpose flour and mix well.

Now add the lukewarm chocolate mixture and stir properly. The finished lava cake batter should be dark brown, creamy and runny. Check the video to see the desired consistency.

Grease a muffin pan with some butter and dust it with flour. This will create a nice non-stick layer.

Fill the muffin cups with our lava cake batter, leave some space for the cakes to fill. They will rise a bit during baking.

Preheat your oven to 200C or 400F and we are ready to bake. The baking time is crucial, if you bake for too long the center will cook fully and the lava effect will be gone.

7-10 minutes is what you should aim for. We find 8-9 to be the perfect time for our likings, but feel free to experiment.

Serve with a scoop of vanilla ice cream and fruits Add some mint leaves and powdered sugar for decoration.

Molten Chocolate Cake Recipe

oz bittersweet chocolate (at least 60 percent cacao)

4 chunks for the cake centers

Tbsp butter

Tbsp flour

tsp vanilla extract

Preheat the oven to 425°F. Lightly butter four 6-ounce ramekins or custard cups. Bring a few cups of water to a boil in a medium saucepan over low heat. Place a glass mixing bowl over the pan (but not touching the water) and add the chocolate and butter. Cook, stirring occasionally until both the chocolate and butter have fully melted. Keep warm. Use an electric mixer to beat the eggs, egg yolks, sugar, and salt until pale yellow and thick, about 5 minutes. Stir in the melted chocolate mixture, the flour, vanilla, and instant coffee if using. Pour the mixture into the prepared ramekins. Stick one good chunk of chocolate in the center of each ramekin. Bake the cakes on the center rack for 8 to 10 minutes, until the exterior is just set (the center should still be mostly liquid). The cakes can be eaten straight from the ramekins, but it's more dramatic to slide them on to plates (after letting them rest for a minute or two), where the molten chocolate can flow freely.

Vegan Lava Cake

oat flour (gluten-free if needed (see notes))

tbsp coconut sugar (or sugar of choice)

cocoa powder

tsp baking powder

tsp baking soda

plant-based milk

tbsp apple cider vinegar (or lemon juice)

1.5 oz dairy-free chocolate (of choice (see notes))

I recommend using the metric measurements (grams) for exact results. You can also watch the video in the post for visual instructions.

Preheat the oven to 360 °F (180 °C) and grease/oil one big ramekin (5 1/2 inches diameter) or 4 small ones (you can also use silicone muffin molds or aluminum muffin molds or mugs).

Process all dry ingredients in a food processor or blender.

Add the wet ingredients and blend again until combined.

Pour the mixture into the ramekin and place the chocolate into the center.

Bake in the oven for about 20-22 minutes. If you use small molds, the baking time will be approximately 15-18 minutes.

Let cool for about 10 minutes before removing it from the mold. Dust with cocoa powder and enjoy!
