Apple Oat Flour Muffins

oat flour (see Step 1 to make at home)

oats

nutmeg

cinnamon

allspice

baking powder

teaspoon kosher salt

milk (non dairy milk, for dairy-free), room temperature

egg, room temperature

maple syrup

vanilla extract

neutral oil (sunflower, vegetable

apple (1 medium apple)

Preheat the oven to 350 degrees. Place muffin liners in a 12 cup muffin tin.

To make the oat flour, place 1 1/2 cups rolled oats in a food processor and process until it is very fine. (Note: Do NOT try this with steel cut oats, as they are a very different texture from rolled oats!)

In a medium bowl, whisk together the oat flour, oats, nutmeg, cinnamon, allspice, baking powder, and kosher salt.

In another bowl, mix together the milk, egg, maple syrup, and vanilla, then gradually whisk in the oil.

Mix the wet ingredients into the dry ingredients until smooth. Allow to sit for 10 minutes while the oats re-hydrate.

Meanwhile, dice the apple. After 10 minutes, gently fold in the apples to the batter. Then use a 1/4 cup measure to spoon the batter into the prepared muffin tin.

Bake for 20 to 25 minutes until puffed and golden.

These gluten-free pancakes are made only with whole grain oats for a hearty and delicious breakfast.

Carrot Cake Oat Flour Pancakes

½ cups old fashioned oats

almond milk

egg, beaten

½ tsp baking powder

¼ tsp ground cinnamon

ginger

carrots,

walnuts (optional)

Combine the ground oats with the milk and egg. Let sit 10 minutes to let the mixture thicken.

Stir in the baking powder, spices, and vanilla extract.

Heat a griddle or large skillet over medium, until small drops of water sizzle and evaporate within a few seconds. Swirl butter until it melts but doesn&#x27;t brown.

Drop two tablespoons of pancake batter onto the griddle. Top each with ~1½ tbsp grated carrots. Cook pancakes - 3 at a time- in the hot pan until small bubbles form on the top. Flip once. The pancakes should be golden brown. Serve warm with butter, maple syrup, extra carrots, and chopped walnuts. Enjoy!

Mix wet:

In a standard, 10-ounce, microwave-safe mug (a larger mug is fine, too), combine the nut butter, milk, maple syrup, and vanilla. Stir well so that the nut butter is fully incorporated.

Mix dry:

In a separate mug, stir together the oat flour, baking powder, salt, and pumpkin spice or cinnamon. Pour the dry ingredients into the mug with the wet ingredients, and stir until there&#039;s no visible dry flour.

Microwave:

Note: this recipe was tested in an 1100 watt microwave. Microwave ovens vary, so stay nearby and keep an eye on the mug the first time you try the recipe. Begin by microwaving on high power for 50 seconds. Then microwave for another 10 to 20 seconds, depending on how much the cake has risen and whether the center appears firm. In my microwave, this recipe comes out just right with a cook time of 70 seconds. If using a smaller, older, or lower wattage microwave you may need to add more time (do this in 10 to 15 second intervals.)

Rest then serve:

Let sit 5 minutes, then enjoy! For breakfast it&#039;s delicious with plain vegan yogurt and a sprinkle of hemp seeds. Or if enjoying as a dessert, try it with your favorite vegan ice cream, dairy-free whipped cream, and/or maple syrup.

Oats

200 Grams (1 Cup) Granulated Sugar

Preheat oven to 350F/180C and grease a 9X5 loaf pan.

In a food processor add oats and blend until a fine flour texture is formed, this will take a minute or two.

Melt butter. In a large bowl mix together the butter and sugar. Then add eggs and vanilla. Mix in oat flour, baking soda, and salt.

In a bowl mash bananas. Fold in bananas and greek yogurt into the flour mixture.

Bake for 50-60 minutes. Of course, always check with a toothpick to make sure it is fully cooked. Or a knife if you want to reach the bottom.

Let cool on a wire rack for 3o minutes before inverting out of the pan too cool completely. Enjoy!

Use the correct ingredients people!!  In that vein of people subbing things...I want to point out that quick bread recipes MUST have an acidic component which is the yogurt. Also, the yolk has fats that emulsify-bring things together that don't play well together like oil &amp; water. I think flax for eggs works because flax becomes thick with a slippery texture. These types of physical or chemical reactions are absolutely required. She should try making pancakes with her version ! Wait, thats not a bad idea! Thin it down...hmm!

The only exception I made was cutting the sugar in half as some reviews suggested.  I baked the bread in 4 mini loaf pans for 60 minutes and the bread was still a bit doughy.  Using 1/2 cup sugar was fine.  It normally takes about 33 minutes to bake an AP banana bread in mini loaf pans.

Fantastic. Without all the details we ended up with a 25lb bag of Bobs Redmill oat flour.  Needless to say I now have an Oat Flour pin board. This recipe is fantastic! Used Coconut sugar for less of a glycemic load, dairy free with vegan sour cream (out of yogurt) will use vegan yogurt next time. But may just keep the sour cream it was so good!  Thank you ❤️ 

Hi! Great recipe! One question, for the oats you have 2 measurements. I use metric, and it says 182 grams of oat flour but then 225g of oats, which measurements should we follow?

Oat Flour Banana Bread Recipe

Banana zucchini bread combines everything you love about both banana bread and zucchini bread in one recipe! It&#39;s wonderfully fragrant, moist, and just sweet enough. This recipe is vegan, made with gluten-free oat flour, and contains no oil or butter. Omit the nuts to make it lower in fat, and use date or coconut sugar for a refined sugar-free bread!

Banana Zucchini Bread (Oat Flour, Vegan)

zucchini

non-dairy milk (such as oat or soy)

tahini

sugar

apple cider vinegar

oat flour (see Notes)

baking soda

fine sea salt

nutmeg,

Preheat

Preheat the oven to 350°F (176°C), and line an 8x4 loaf pan with parchment. The paper doesn&#39;t need to cover the ends; just make sure there&#39;s enough overhang on the long sides to easily lift the loaf from the pan after baking.

Grate

Grate the zucchini and wrap it up in a tea towel or paper towels. Squeeze over the sink to remove as much moisture as possible. Set aside.

Mash the bananas with a fork and measure the puree; make sure you have 1 cup (8 fl oz). Add to a bowl with the remaining wet ingredients (milk, tahini, maple syrup, sugar, vanilla, vinegar), and whisk to combine.

Combine

In a mixing bowl whisk together the oat flour, baking powder and soda, cinnamon, salt, and nutmeg. Pour wet ingredients into dry. Stir to combine, then fold in the grated zucchini. The batter should be very fluffy and moist.

Bake

Transfer batter to the prepared pan. If desired, sprinkle nuts on top. Bake for about 55 minutes or until a tooth pick inserted in the center of the loaf comes out clean. Let the bread rest in the pan for about 15 minutes, then lift out by the parchment paper and place on a cooling rack. Cool completely before slicing.

In a large mixing bowl combine the oat flour, almond flour, coconut sugar, and salt. Sift in the cocoa powder, baking powder, baking soda, and spices, if using. Whisk very well.

Whisk

In a smaller bowl mash the bananas (a few larger bits are okay). Measure to make sure you have 1 ⅓ cups pureed banana. Add the maple syrup, milk, almond butter, balsamic or coffee, and vanilla. Stir very well so the almond butter is fully incorporated.

Pour wet ingredients into dry, and stir to combine. Fold in ⅓ to ½ cup chocolate chips (I used ½ cup in the batter and about ¼ cup on top.) Transfer batter to the pan, and arrange remaining chocolate chips on top. If adding banana on top, arrange slices between chocolate chips, and very lightly press into the batter.

Bake for 53 to 58 minutes or until the center feels firm and a tooth pick comes out clean. Allow the bread to cool in the pan for 10 to 15 minutes, then use the parchment to lift onto a cooling rack. Let cool for 20 minutes before slicing.

I made this today and love it. I will definitely make this again. I added pecans to mine because I love nuts.

The loaf rose nicely and is light, very chocolatey, and has a lovely crumb.  Definitely a keeper!
