<p>These White Chocolate &amp; Blueberry Oatmeal Cookie Bars are a delicious and healthy treat!  They have an incredible chewy texture, juicy blueberries, sweet white chocolate, and are made with good-for-you ingredients.  </p>

White Chocolate &amp; Blueberry Oatmeal Cookie Bars

cashew butter

applesauce

oats

coconut sugar

tsp vanilla extract

salt

tsp baking powder

white chocolate chips

blueberries -- honestly however many you want!

Combine the cashew butter, egg, applesauce, coconut sugar, and vanilla extract until smooth.

In a separate bowl combine oats, baking powder, and salt.

Add the dry ingredients to the wet and combine.

Spread the batter into a greased or parchment paper lined 8x8 baking pan.

Top with more white chocolate chips (optional but highly recommended!) and blueberries. I chopped my blueberries in half and then placed them with the cut side down, but you could totally just leave them whole as well.

This recipe is simple to make and has all the essentials - chopped nuts, chocolate chips, high quality Gold Medal™ flour, and whole-grain oats. We love the ease of making oatmeal cookie bars because they have the chewy texture and flavor of an oatmeal cookie, but they take only 10 minutes to prep and use only one pan in the oven. Add extra indulgence by drizzling a little melted chocolate over these once they are cool and before you cut out the bars.

Oatmeal Cookie Bars

brown sugar

butter or margarine, softened

molasses

vanilla

eggs

Gold Medal™ all-purpose flour

baking soda

(12 oz) semisweet chocolate chips (2 cups)

Heat oven to 350°F. Grease 15x10x1-inch pan. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in molasses, vanilla and eggs. Stir in oats, flour, baking soda and salt.  Stir in nuts and chocolate chips. Spread in pan.

Bake 20 to 30 minutes or until light golden brown and center is set. Cool completely, about 1 hour. For bars, cut into 8 rows by 6 rows.

Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.

In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.

Add the eggs one at a time, mixing after each addition. Add the vanilla.

In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour and rolled oats.

Add dry ingredients to the creamed mixture and stir until combined. Stir in chocolate chips.

Press into prepared ban and bake for 25 to 30 minutes or until golden brown. Allow to cool completely before cutting.

Oatmeal Raisin Bars

all-purpose/plain flour

baking soda/bicarbonate of soda

butter (softened)

light-brown sugar

dark brown sugar

eggs (at room temperature)

cinnamon

nutmeg

raisins

Preheat the oven to 375 degrees F/190C.

Grease and flour an 9x13 inch baking pan

Sift the flour, salt, baking soda, and baking powder together into a large mixing bowl.

In a large mixing bowl. Beat the butter, brown sugar, dark brown sugar, and granulated sugar in until fluffy.

Mix in the eggs one at a time, then add the vanilla, cinnamon, and nutmeg.

Mix in the flour mixture and mix until combined.

Stir in the oats by hand, followed by the raisins.

Spread dough evenly into the pan.

Spread the dough into the prepared pan and smooth the top. Bake for 30 minutes. After 30 minutes, give the pan a little shake. If it jiggles in the middle, put the pan back in and try again every 5 minutes until there is no longer any jiggle.

Remove from the oven and let cool 10 minutes before cutting.

Best served warm, but great cooled as well.
