Preheat oven to 400 F or 200 C. Peel potatoes and cut into small cubes. About 2 cm or a little under 1 inch cubes. Wash the starch off and give them a shake to get excess water off. Then place in a mixing bowl.

Spread on a baking tray and bake for about 25 - 30 minutes until golden brown. Halfway through baking, use a spatula and turn the potatoes over so they brown and crisp evenly. When done, serve hot.

Patatas Bravas is a popular Spanish tapas recipe of crispy oven-baked potatoes served with a tangy, spicy tomato sauce (salsa brava) and aioli or guacamole. Perfect as a simple appetizer, quick snack or side dish!

Patatas Bravas (Spanish Tapas)

apple cider vinegar (or other vinegar of choice)

tsp agave syrup (or other sweetener of choice)

Preheat the oven and a large baking tray to 428 °F (220 °C).

Cut the potatoes into bite-sized pieces and put them in a pot. Pour in enough water to cover the potatoes and bring to a boil. Add salt and baking powder, cover the pot and cook over low heat for 5-7 minutes.

Then drain the cooking water, but leave the potatoes in the pot and allow excess moisture to evaporate, uncovered. Once the potatoes are dry, add oil, salt and pepper and shake the pot, covered, until everything is well combined.

Spread the seasoned potatoes on the preheated baking tray and bake for 25-30 minutes, until golden and crispy.

Meanwhile, prepare the tomato sauce. First sauté the onions for 2-3 minutes. Then add garlic and chili and sauté for another minute. Now add paprika powder and sauté briefly, then add tomatoes, vinegar, agave syrup, salt and some pepper. Simmer, covered, for 5 minutes. Then optionally transfer to a blender and blend until smooth.

Also, roast the pimientos in a pan with a little oil. Season with salt and pepper to taste.

Garnish the patatas bravas with parsley and serve with the pimientos, tomato sauce and optional vegan aioli and/or guacamole.

Wash the potatoes and boil them in salted water for 15-30 minutes, depending on their size. Use a fork to test, once it slides in easily, the potatoes are cooked enough.

Cut potatoes into halves, lengthwise.

Put potatoes into a bowl or pot, add olive oil and the other seasonings and toss properly.

Bake on a sheet pan. Use parchment paper for easier cleaning.

Start on 200 Celsius (400F) and once the potatoes start to show color, up the temperature to 250 Celsius (475F).

Bake until golden brown and crispy on the outside. It should take 25-30 minutes, depending on your oven type.

Mix onion and potatoes by hand, then drizzle olive oil on top and mix again.

Sprinkle with garlic powder, parsley and steak seasoning.  Mix with hands.

Bake potatoes at 400 degrees for 45 minutes until golden brown.

Stir a few times during the cooking process.

Remove sheet pan from oven, stir potatoes and sprinkle with salt before serving.

Preheat oven to 425°F. In a large pot, cover potatoes with cold water and add about 1 tablespoon salt. Cover pan and bring water to a boil, reduce to a simmer, and cook until potatoes are fork tender, 15-20 minutes. Drain and let cool until cool enough to handle. 

Spray a baking sheet with nonstick cooking spray or olive oil spray. Place potatoes on a baking sheet.

Using bottom of a small glass, jar, or potato masher, press down on potatoes to smash them into flat patties. 

In a small bowl, combine melted butter, garlic, parsley, salt, and pepper. 

Brush butter mixture over potatoes and then sprinkle with Parmesan. 

Bake until bottoms of potatoes are beginning to crisp and tops are golden, 25 minutes. Serve immediately.

These Roasted Lemon Rosemary Potatoes are just the BEST! They’re extra crispy, perfectly bite size and have an amazing citrus herb flavor. The perfect simple side dish! 

Roasted Lemon Rosemary Potatoes

Dice the potatoes into quarters - as seen above in the photos. Place them in a large bowl and cover them with water. Let them soak for 30 minutes.

Preheat the oven to 400 degrees.

Once done soaking, remove from the bowl and dry them off very well (I&#039;m talking drying EACH potato) with either a clean tea towel OR paper towels.

Place the dried potatoes into a bowl and add 3 tbsp of olive oil, 1 tsp salt, 1 tsp garlic powder, 1 tsp lemon zest and 2 tsp of freshly diced rosemary. Stir gently to make sure each potato is coated evenly with the ingredients.

Place the potatoes onto a large sheet pan - making sure they don&#039;t touch one another. If need be, you can use 2 sheet pans.

Roast the potatoes for 20 minutes. Remove the pan and add 2 tbsp more of olive oil. Do NOT flip or move the potatoes even after you add the extra olive oil.

Roast for an additional 20-25 minutes, or until extra crispy/golden brown.

Remove from the sheet an into a large bowl and garnish with additional lemon zest, flaky sea salt and fresh rosemary if desired. For extra lemon flavor, add a squeeze of fresh lemon juice. So delicious! Enjoy! Store leftovers in tupperware in the fridge for up to 3 days.
