To the flank steak, add the Thai black soy sauce, vegetable oil, and cornstarch, and mix until the beef is completely coated. Set aside.

For the rest of the dish, combine the oyster sauce, sugar, Thai soy sauce, Thai black soy sauce, fish sauce, and white pepper in a small bowl. Stir to mix well.

Make sure your fresh rice noodles are at room temperature. If the noodles are really cold and stiff from refrigeration, rinse them quickly under hot tap water when you are ready to stir-fry the dish. This extra step will help you avoid a big homogenous lump of noodles during stir-frying. Be sure to shake off any excess water after rinsing and use them immediately.

The fresh wide rice noodles really set this dish apart from other noodle dishes, so try your best to find them. Or you can use our recipe for homemade rice noodles to make them at home. If either of these options don’t work, then use dried rice noodles. If using a dried rice noodle, follow the directions on the package and make sure you undercook the noodles slightly (al dente), since you will be cooking them again in the wok. After you drain the noodles thoroughly, toss the noodles with a tablespoon of oil. This will prevent them from sticking to the wok.

Heat your wok over high heat until it just starts to smoke, and spread 1 tablespoon of oil around the perimeter of the wok evenly to coat. Sear the beef until it is 80% cooked through, and transfer back to the marinade bowl.

Add another tablespoon of oil to the wok and stir in the garlic. Immediately add the Chinese broccoli and stir-fry for 20 seconds (stir constantly to prevent the garlic from burning).

Next, spread the noodles around the wok. Continue to work quickly--your wok should be at the highest heat setting. Spread the sauce mixture over the top of the noodles, and gently mix everything with your wok spatula using a scooping motion for about 20 seconds. Add the beef back to wok.

Push the mixture to one side to let the empty side of the wok heat for 10 seconds. Add another tablespoon of oil to the wok, and add the beaten eggs. Wait 5 seconds for them to begin to cook. Scramble the eggs for another few seconds, breaking them up into smaller pieces.

If your wok is not sizzling at this point, it probably means that your burner is not hot enough. Be patient, and the heat should “catch up.” Stir-fry the mixture just enough so the noodles heat up evenly, but don’t break into small pieces. Make sure you use your wok spatula to scrape the bottom of the wok so the noodles don’t stick.

As the wok heats up, you will notice that the food will stick to it less readily! But if you need to, you can add a little oil to make it easier to stir-fry.

Continue cooking, stirring less frequently (so the noodles get slightly caramelized, creating that restaurant-style flavor) for another 1 to 2 minutes, or until the noodles are heated through. Serve hot with Homemade Chili Oil or Chiu Chow Sauce on the side!

Pad see-ew is perhaps less known in America than pad thai, but it's certainly no less delicious.

Pad See-Ew Recipe

boneless chicken, thinly sliced

baking soda

In a medium-sized bowl, toss the chicken with 2 teaspoons of soy sauce and the baking soda. Set aside. 

In a second medium-sized bowl, whisk together the oyster sauce, 2 teaspoons soy sauce, sugar, rice vinegar, and garlic clove. 

Bring a large pot of water to a boil. Add the rice noodles and cook according to the directions on the packaging. When done, remove noodles with a pair of tongs and drain in a colander. Toss with a tablespoon of oil so the noodles don't stick together. 

Place the pot back over high heat and return to a boil. Place the marinated chicken in a large strainer and dip into the water. Cook until the chicken looks white. When done set the chicken aside in a large bowl. 

Pour enough oil into a large work to just coat the bottom and turn heat to high. When just starting to smoke, add the broccoli. Stir-fry until broccoli turns bright green and becomes tender. Transfer broccoli to the large bowl and set aside. 

Carefully rinse out the wok and then dry it. Pour in two tablespoons of oil, and turn heat to high. When just starting to smoke, crack in the eggs. Using a wooden spoon, scramble the eggs. When set, add the noodles. Toss well to separate the strands, and then let them cook for a minute. 

Drizzle on the sweet soy sauce, toss well, and then let cook undisturbed until the noodles start to brown, about one minute. Add the broccoli and chicken back to the pan. Toss well. When everything is warm, pour in sauce. Stir fry until everything is coated. Turn off the heat and serve immediately.

Pad See Ew - Thai Stir Fried Noodles

Chinese broccoli ((Note 5))

Chinese Broccoli - trim ends, cut into 7.5cm/3" pieces. Separate leaves from stems. Cut thick stems in half vertically so they're no wider than 0.8cm / 0.3" thick.

Noodles - Prepare according to packet directions and drain. Time it so they're cooked just before using - do not leave cooked rice noodles&nbsp;lying around, they break in the wok.

Sauce - Mix ingredients until sugar dissolves.

Heat 1 tbsp oil in a very large heavy based skillet or wok over high heat.

Add garlic, cook 15 seconds. Add chicken, cook until it mostly changes from pink to white.

Add Chinese broccoli stems, cook until chicken is almost cooked through.

Add Chinese broccoli leaves, cook until just wilted.

Push everything to one side, crack egg in and scramble. Remove everything onto a plate (scrape wok clean).

Return wok to stove, heat 2 tbsp oil over high heat.&nbsp;

Add noodles and Sauce. Toss as few times as possible to disperse Sauce and make edges of noodles caramelise.&nbsp;

Quickly add chicken and veg back in, and toss to disperse. Serve immediately!

Soak the dry rice noodles in hot water for about 10 - 20 minutes or until ready to cook.

Meanwhile, mix together the sauce ingredients in a bowl.

Over high heat, add 1 Tablespoon of oil and quickly stir fry the broccoli and carrots for about 1 - 2 minutes. Remove and set aside. Then crack two eggs into the pan and quickly scramble and set aside. Add more oil if necessary.

Lower to medium high heat. Drain the noodles and add them to the well-oiled pan along with the sauce. The noodles will begin to soften more as it cooks in the sauce. If needed, add 1/4 cup more water at a time as the noodles will cook and absorb more of the sauce. When the noodles are cooked through, add the vegetables and egg to the pan. Toss together for one more minute and then serve.

Add the beaten eggs (if using), and more oil if needed. Cook the egg and then stir to combine well with the noodles. Dish out and serve immediately.

Pad See Ew (Thai Stir-Fried Noodles)

tbsp (30 ml) dark soy sauce

tbsp (15 ml) fish sauce

tbsp (15 ml) oyster sauce

1⁄2 tbsp (38 g) granulated sugar

oz (225 g) chicken breast, halved lengthwise and then thinly sliced

tbsp (15 ml) soy sauce

oz (300 g) flat rice

tbsp (60 ml) cooking oil

This noodle dish cooks very quickly, so everything must be ready and at hand once you start to cook.

Mix together the dark soy sauce, fish sauce, oyster sauce and sugar in a small bowl. Set aside.

Marinate the sliced chicken in the soy sauce for at least 10 minutes.

Refresh the fresh noodles with cold water and separate the threads if needed to avoid clumping. Drain and set aside.

Heat 2 tablespoons (30 ml) of oil in a nonstick wok or large skillet on medium–high heat. Fry the chicken for about 3 minutes or until fully cooked. Transfer the cooked chicken to a bowl. Set aside.

Drizzle the remaining 2 tablespoons (30 ml) of oil in the wok and heat over medium–high. Add the garlic and cook until very aromatic. Add the egg, let set for several seconds, then scramble. Add the chopped gai lan and mix with the egg.

Add the noodles and the seasoning sauce to the pan. Stir everything quickly to ensure the noodles are fully coated with the sauce. Let the noodles sit undisturbed for about 30 seconds. You want the noodles to char a little underneath to get that caramelized flavor. Flip or toss the noodles to allow the top portion to char, too. Leave undisturbed for another 30 seconds. Return the chicken to the pan and give the mixture another quick stir. Transfer to a serving plate and sprinkle with some freshly ground pepper, to taste. Serve immediately.

15-Minute Pad See Ew Noodles

oz (1/2 lb) wide rice noodles (fresh

Combine all sauce ingredients in a bowl. Prepare rice noodles according to package instructions (cook about 1-2 minutes less than the suggested time). Rinse with cold water, drain, and set aside.

Heat oil in a wok over medium heat. Add garlic and saute until fragrant. Add chicken and cook until nearly cooked through, for, about 2-3 minutes.

Push everything to one side, crack in the eggs, and scramble. Add Chinese broccoli, rice noodles, and sauce.

Toss everything together (adding more water if needed) and cook for about 1-2 minutes until the noodles are evenly coated and caramelized. Serve immediately and enjoy!

Beef (240 grams) (or chicken, shrimp, tofu)

wide rice noodles (300 grams) (or fresh/dry rice noodles)

Chinese broccoli (240 grams) (or regular broccoli, bok choy)

Prepare the noodles according to the package instructions. Smash garlic cloves and finely mince them. Chop Chinese broccoli into nice, bite-sized pieces. (Cut the stems a little bit thinner than you would do the leaves.) Thinly slice the green onion for garnish.

Cut the beef into nice, bite-sized pieces and put it in a mixing bowl. To that, add 1 tablespoon of cooking oil, 1/2 tablespoon of soy sauce, and 1/4 teaspoon of white pepper. Give it a good massage.

In a small container, combine all the sauce ingredients and mix well. In a separate bowl, add 4 tablespoons of white vinegar and 1 chopped chili. Let it sit for at least 15 minutes.

Prep Ingredients

Put 1 tablespoon of oil in a wok. Place it over medium-high heat. Once it gets nice and hot, add the beef and cook for 1 to 2 minutes. When the beef is cooked, remove it from the pan and set it aside.

In the same pan, add 2 tablespoons of cooking oil. Add the garlic and cook for 30 seconds. Once it starts to get fragrant, increase the heat to high and add the Chinese broccoli. Cook for 1 minute or until the stems soften up a little bit.

Add the noodles and pour the sauce. Stir everything together. To sear the noodles, let it sit for about 20 to 30 seconds. Give it a toss and let it sear one more time. Once you've got good color, push all your noodles to one side. Into that empty space, add a splash of oil, crack 2 eggs, and scramble them a little bit. When the eggs are 80 percent cooked, stir-fry it all together.

Once everything is nice and evenly coated, add your cooked beef and toss it around for about 1 minute. Transfer it to a serving plate and finish it off with some white pepper and green onion. Enjoy~!

Make Pad See Ew

This Pad See Ew is a popular Thai street food that's so delicious and super quick to make. Forget take-out, make this at home for the whole family to enjoy!

Prepare the noodles first by following the instructions on the package. I usually place them in a bowl and add enough cold water to cover them and let them rest for 1 hour or until noodles are pliable but not soft. Drain well in a colander. They will change color from translucent to white.

In a small bowl toss the chicken with the tsp of peanut oil and soy sauce together, making sure the chicken is coated in the oil and soy sauce. This will ensure the chicken separates nicely when cooking and seasons it a bit.

Mix all the ingredients for the sauce together in a bowl and set aside.

Start by adding 2 tbsp of the peanut oil to the wok and heat it really well. Add the chicken and cook just until done, about 2 to 3 minutes. Remove the chicken from the wok and set side. Wipe away any excess liquid that's left in the wok with paper towels.

Add the remaining 1 to 2 tbsp of peanut oil to the wok, then immediately add the minced garlic before the oil gets too hot. This will prevent the garlic from burning as soon as it hits the wok. Saute the garlic for about 30 seconds just until the garlic starts to get aromatic and turns golden.

Add the eggs, break the egg yolks then let it sit for about 15 seconds before starting to scramble them briefly.

Add the broccoli and toss to coat with the oil and the egg. Cook briefly for about 15 seconds.

Add the prepared noodles to the wok, the prepared sauce and the brown sugar to the pan. Turn the heat up and start tossing the noodles to coat evenly in the sauce. Spread the noodles over the entire surface of the pan, and let them sit without stirring or tossing for about 30 seconds. This will ensure you get some nice charred marks on the noodles, which will give them a nice toasty flavor. Flip the noodles and again let them sit cook for another 30 seconds to char the other side. Toss the chicken back in.

Remove from wok and serve with immediately. Sprinkle with some red Thai chiles if preferred.

Add the sliced chicken and season with salt, pepper, and white pepper. Stir-fry the chicken until it&#39;s almost cooked through

In the same pan, add a little more oil if needed and add the chopped garlic and the stalks of the Chinese broccoli. Pan-fry them for 1-2 minutes until they become slightly tender.

Add the Chinese broccoli leaves and stir-fry until they begin to wilt slightly.

Create a well in the center or side of the pan/wok and add the egg and egg white. Scramble the eggs until they are partially cooked.

Incorporate the fresh rice noodles or prepared cooked thin rice noodles into the wok. Stir-fry everything together for 1-2 minutes, ensuring that the noodles are coated evenly with the flavors from the pan.

Pour the sauce over the noodle mixture and continue stirring, making sure that all the ingredients are well coated with the sauce. Toss everything together gently to combine.
