These whole30 pumpkin muffins are SO easy and made in the blender. You&#039;ll never guess the secret ingredient that makes them sugar free!

Whole30 Pumpkin Muffins

Cup Deglet Noor Dates, (Halved (156 grams))

Tbsp Canned pumpkin puree

Tbsp Coconut oil, (melted)

Large egg

Cup Almond flour * ((100 grams))

Tbsp Coconut flour, (packed (33 grams))

Tbsp Pumpkin pie spice

Baking powder

tsp Baking soda

Salt

pecans, (optional for topping)

Heat your oven to 375 degrees F and rub a muffin pan with coconut oil.

Place the dates in a microwave-safe bowl and microwave for 30 seconds, until soft. Add them into a large food processor with the pumpkin, oil and egg, stopping to scrape the sides as needed. The dates won&#039;t totally break down and that&#039;s okay!

Add the rest of the ingredients and process until blended.

Spoon into 6 muffin cavities (I use an ice cream scoop for rounded tops) and cover with pecans, if desired. Bake for 5 mins. Then, reduce the heat to 350 degrees F and bake another 12-6 minutes until a toothpick inserted in the center comes out clean.

Let cool in the pan and then DEVOUR!

This is an easy paleo banana muffin recipe with chopped nuts. They're light, fluffy and delicious. And if you want to make them extra special, add in some chocolate chips.

Paleo Banana Nut Muffins

bananas (approx 1 1/4 cups mashed)

almond flour

tapioca flour

tsp baking soda

cinnamon

tsp salt

eggs

honey

butter

tsp vanilla extract

pecans

Preheat your oven to 350 degrees fahrenheit.

Mash the bananas with a fork in a mixing bowl. Add all of the other ingredients to the mixing bowl, except the nuts.

Use a hand mixer on medium speed to blend all the ingredients together for 30 seconds. Add the chopped nuts and stir together.

Line a muffin tin with muffin cups and evenly divide the batter between 12 muffin cups. Sprinkle a little extra chopped nuts on top.

Bake the muffins for 22-25 minutes or until a toothpick comes out clean and they're lightly golden on top.

Preheat your oven to 350°F. Line a muffin tin with paper liners and set aside.

In a medium mixing bowl, combine the coconut flour, baking soda, cinnamon, sea salt, and chocolate chips. Stir and set the bowl aside.

Grab a small mixing bowl and combine the eggs, applesauce, coconut oil, maple syrup, vanilla extract, and apple cider vinegar. Use a whisk to stir together the ingredients. 

Then, pour the wet ingredients into the dry ingredients and stir until combined.

Use a spoon to fill the muffin tins with the batter, filling each well about ½ full.

Bake for 18-20 minutes, or until the tops of the muffins have turned golden brown and a toothpick inserted in the center comes out clean.

Transfer the muffins to a drying rack to cool.

Keto Muffins are a great breakfast that can be made ahead, or just a quickly reheated snack. Our Low Carb Cheddar Cheese &amp; Zucchini Muffins are tasty, moist and very cheesy.

Keto Muffins - Savoury Zucchini Cheese

zucchini (grated (2 packed cups))

Butter (melted)

Pepper

oregano (finely chopped)

Baking Powder

Cheddar Cheese (grated)

Preheat oven to 180C/355F.

In a mixing bowl, add the zucchini, butter, salt and pepper and mix well.

Add the eggs, oregano and baking powder and mix well.

Add the coconut flour and mix until the batter becomes thick.

Fold through the cheddar cheese.

Line the holes of a standard muffin tin with silicon cupcake molds and evenly divide the mixture between the holes. Overfill each hole creating little piles of soon to be muffins, the muffins don’t rise very much.

Bake for 25 minutes, until the muffins are golden.

Allow to cool for 5 minutes before enjoying.

Keto Muffins Recipe - Cheese & Zucchini (Delicious Low-Carb Savory Snack)

These apple muffins are much healthier than anything you’d find in stores. They’re made with Paleo, gluten-free flour, natural coconut sugar, eggs and coconut oil. They’re yummy enough for dessert, but good as a mid-afternoon snack or quick breakfast on the go, too.

Apple Cinnamon Muffins Recipe

flour

apples, peeled, cored and finely chopped

coconut oil

coconut sugar

eggs, beaten

Preheat oven to 300 degrees F and fill cupcake pan with liners.

Mix flour, baking soda, salt and apples in a bowl.

In a separate bowl, mix coconut oil, coconut sugar, eggs and cinnamon with a beater. (Or use a stand-up mixer.)

Combine both bowls and mix until just combined.

Fill cupcake liners 3/4 full and bake for 25 minutes.

A quick and easy paleo muffin with minimal added sugars and delicious results!

5 Minute Muffins - Grain Free | No Added Sugars

banana

Preheat oven to 400 degrees.

Place all ingredients into a blender or food processor.

Blend until well mixed: batter will be sticky.

Pour batter into a greased mini muffin tins.

Bake in a 400 degree oven for 8 minutes or so, slightly longer with chia eggs. I am sure you could use regular muffins too, but you will have to increase the cooking time to 12-15 minutes.
