How to Turn Pancake Mix Into Waffle Mix

Your favorite pancake mix (Our oatmeal pancake mix)

Tablespoons cooking oil (I used coconut oil)

For one batch of our oatmeal pancake mix, add about two tablespoons of oil.

In a large bowl, sift the pancake mix, baking soda, and salt. Then, set aside.

In a medium bowl mix all the wet ingredients, starting with the buttermilk, melted butter, vanilla and eggs. Whisk until well combined.

Pour the wet mixture over the dry mixture and stir until all the ingredients are combined. Do not over mix.

Heat a griddle on medium heat and spray it with non-stick cooking spray. I usually only do this once at the beginning! When the griddle is hot enough, pour 1/4 cup of the pancake batter for each pancake on the griddle. When bubbles appear and the edges lose some of their shine it&#039;s time to flip and cook the other side. Cook until golden.

Once the pancakes are ready, serve them with some butter and warm syrup or your favorite pancake toppings.

In a large mixing bowl,  stir together flour, powdered milk, sugar, baking powder, baking soda, and salt.

Store in a large airtight container at room temperature.

Mix Instructions

When ready to make pancakes, preheat nonstick griddle to medium high heat. For every 1 cup of pancake mix, whisk with 3/4 cup water. 1 cup of mix makes 4 to 5 pancakes.

Scoop 1/4 cup of pancake batter onto griddle. Let pancakes cook until bubbles form before flipping. Flip and cook other side until golden brown. Serve hot with syrup.

Heat Oil

Heat oil in a pan or skillet on medium heat so that it becomes nice and hot.

Make batter

In a bowl, whisk together milk, eggs, and vanilla together. To this add dry ingredients – flour, sugar, salt, and baking powder. Whisk together until it is smooth and creamy.

Adjusting batter

If you feel the batter is too thick, add more milk, if it is too thin then add extra flour. Basically, the batter should be slightly thicker than your regular pancake batter but of pourable consistency. (Check tips)

Prepare Funnel Cake Batter

Pour batter

To pour batter into the oil you can use a funnel cake dispenser or Ziploc bags or refillable round nozzle squeeze bottle with 1/4 inch nozzle.

Zigzag Patterns

Pour some of the batter into any one of the above pouring devices and drizzle in a swirling and overlapping motion (or zig-zag pattern) in hot oil to get a funnel cake. Make sure some of the swirls are connected. This need not have to be a perfect circle

Cook

Let this cook for about 2 minutes on each side or until golden brown and crispy.

Transfer it to a paper towel to absorb any excess oil.

Sprinkle Sugar

Sprinkle with confectioners sugar as needed.

Funnel Cakes are ready. Serve them warm and enjoy.

Combine dry ingredients

Preheat your oven to 350 degrees. In the meantime, combine all dry ingredients (kodiak cake mix, baking powder and pumpkin pie spice) in a large mixing bowl.

Combine wet ingredients

In a separate mixing bowl, combine all wet ingredients (milk, maple syrup, olive oil, pumpkin puree, egg and vanilla). Stir the wet ingredients to mix everything together.

Add wet to dry

Line a 12 cup muffin pan with muffin liners, or spray with cooking spray. Using a large cookie scoop or ice cream scoop, spoon the batter into the muffin pan, filling until the mix reaches just below the top of the cup.

Bake

Bake muffins for 26-30 minutes, until the top of the muffin springs back when touched and a toothpick inserted into the middle comes out clean.
