This dish is a deli egg-bacon-and-cheese-on-a-roll that has been pasta-fied, fancified, fetishized and turned into an Italian tradition that, like many inviolate Italian traditions, is actually far less old than the Mayflower. Because America may have contributed to its creation, carbonara is Exhibit A in the back-and-forth between Italy and the United States when it comes to food. Remember: the main goal is creaminess.

Spaghetti Carbonara

Salt

eggs and 2 large yolks, room temperature

(about 1/3 packed cup) grated Parmesan

black pepper

olive oil

slab guanciale (see recipe), pancetta

spaghetti (about 3/4 box)

Place a large pot of lightly salted water (no more than 1 tablespoon salt) over high heat, and bring to a boil. Fill a large bowl with hot water for serving, and set aside.

In a mixing bowl, whisk together the eggs, yolks and pecorino and Parmesan. Season with a pinch of salt and generous black pepper.

Set the water to boil. Meanwhile, heat oil in a large skillet over medium heat, add the pork, and sauté until the fat just renders, on the edge of crispness but not hard. Remove from heat and set aside.

Add pasta to the water and boil until a bit firmer than al dente. Just before pasta is ready, reheat guanciale in skillet, if needed. Reserve 1 cup of pasta water, then drain pasta and add to the skillet over low heat. Stir for a minute or so.

Empty serving bowl of hot water. Dry it and add hot pasta mixture. Stir in cheese mixture, adding some reserved pasta water if needed for creaminess. Serve immediately, dressing it with a bit of additional grated pecorino and pepper.

Spaghetti Pasta Carbonara

Heat pasta water: Put a large pot of salted water on to boil (1 Tbsp salt for every 2 quarts of water.)

Sauté pancetta/bacon and garlic: While the water is coming to a boil, heat the olive oil in a large sauté pan over medium heat. Add the bacon or pancetta and cook slowly until crispy.
Add the garlic (if using) and cook another minute, then turn off the heat and put the pancetta and garlic into a large bowl.

Beat eggs and half of the cheese: In a small bowl, beat the eggs and mix in about half of the cheese.

Cook pasta: Once the water has reached a rolling boil, add the dry pasta, and cook, uncovered, at a rolling boil.

Toss pasta with pancetta/bacon: When the pasta is al dente (still a little firm, not mushy), use tongs to move it to the bowl with the bacon and garlic. Let it be dripping wet. Reserve some of the pasta water.
Move the pasta from the pot to the bowl quickly, as you want the pasta to be hot. It's the heat of the pasta that will heat the eggs sufficiently to create a creamy sauce.
Toss everything to combine, allowing the pasta to cool just enough so that it doesn't make the eggs curdle when you mix them in. (That's the tricky part.)

Add the beaten egg mixture: Add the beaten eggs with cheese and toss quickly to combine once more. Add salt to taste. Add some pasta water back to the pasta to keep it from drying out.
 
Serve at once with the rest of the parmesan and freshly ground black pepper.
If you want, sprinkle with a little fresh chopped parsley.

Beef Bourguignon

beef chuck

salt,

onion, finely chopped

cremini mushrooms, halved if large (about 4 cups)

sugar

flat-leaf parsley,

Season beef with 2 teaspoons salt and 1/2 teaspoon pepper. Set aside for at least 30 minutes at room temperature, or chill in the refrigerator for up to 24 hours.

In a large Dutch oven or heavy-bottomed pot with a tightfitting lid, cook lardons over medium-low heat until fat is rendered and lardons are browned and crisp, about 10 to 15 minutes. Transfer with a slotted spoon to a paper towel-lined plate. Reserve fat in pot.

Heat oven to 350 degrees. Raise heat under pot to medium-high and cook until fat is starting to smoke. Lay half the beef cubes in a single layer in the pot, leaving space between pieces. Cook until well browned on all sides, 10 to 15 minutes; transfer pieces to a plate as they brown. Repeat with remaining beef.

Reduce heat, if necessary, to prevent burning. Stir in onion, carrot and remaining 1/4 teaspoon salt and cook until soft, about 10 minutes, stirring occasionally.

Stir in garlic and tomato paste, and cook for 1 minute. Stir in flour, cook for 1 minute, then add wine, bay leaf and thyme, scraping up brown bits at bottom of pot. Add browned beef and half the cooked lardons back to pot, cover, and transfer to oven. Let cook until beef is very tender, about 1 1/2 hours, turning meat halfway through.

Meanwhile, in a large skillet set over high heat, combine pearl onions, mushrooms, 1/4 cup water, the olive oil and a pinch each of salt, pepper and sugar. Bring to a simmer, then cover and reduce heat to medium, cooking for 15 minutes. Uncover, raise heat to high, and cook, tossing frequently, until vegetables are well browned, 5 to 7 minutes.

To serve, scatter onions and mushrooms and remaining cooked lardons over stew, then top with parsley.

There’s no need to order takeout from your neighborhood restaurant when this beloved, easy-to-assemble Italian-American classic gets dinner on the table in no time. Adding pancetta brings a salty smokiness, but if you leave it out, you’re still in for a quick and flavorful dish. If you’re feeling ambitious, the pasta is delightful with Caesar salad or garlic bread, but it’s also satisfying enough to take centerstage. Pasta Alla Vodka

Kosher salt

rigatoni or penne pasta

Bring a large pot of salted water to a boil (2 heaping tablespoons kosher salt to about 7 quarts water). Add the pasta and cook according to package instructions until al dente.

Meanwhile, prepare the sauce: Heat the oil in a deep 12-inch skillet or pot over medium. Add the pancetta, if using, and fry until crispy, stirring occasionally, 3 to 5 minutes. Add the onion, garlic and red-pepper flakes and cook, stirring occasionally, until onion is translucent, about 3 minutes. Turn the heat to medium-low, add the vodka and cook until reduced by half, 2 to 3 minutes.

Stir in the tomatoes and then fill the can halfway with water and swish it around to loosen up any leftover tomatoes; add a quarter to half of the water to the pan. Simmer until the sauce begins to thicken, about 10 minutes, and season with salt and pepper. If you prefer your sauce a little looser, go ahead and add the remaining water and simmer 2 to 3 minutes more. Reduce heat to low, add the cream and cook, stirring, until the sauce becomes an even pinkish-rust color, about 1 minute.

Stir in the cooked pasta and 1/4 cup cheese; toss to coat. Season to taste with salt and pepper. Divide among bowls, top with additional cheese, if desired, and sprinkle with the oregano and parsley.

Clam Toasts with Pancetta

Heat 1 Tbsp. oil in a large skillet over medium. Add pancetta and cook, stirring occasionally, until brown and crisp, 5–7 minutes. Add sliced garlic and cook, stirring often, until garlic is golden around the edges, about 1 minute. Reduce heat to medium-low and add sweet onion and chopped fennel. Cook, stirring occasionally, until softened and onion is translucent, 6–8 minutes. Add lemon zest, bay leaf, ground fennel, ½ cup wine and a pinch of salt. Increase heat to medium-high and cook, stirring occasionally, until wine is mostly reduced but mixture is still a little bit saucy, about 3 minutes. Transfer soffritto to a medium bowl; discard lemon zest and bay leaf. Wipe out skillet.

Heat 2 Tbsp. oil in same skillet over medium. Arrange bread slices in skillet and cook until golden brown, about 1 minute per side. Transfer to paper towels to drain. Cut 1 garlic clove in half and rub one side of each toast with cut side of garlic. Wipe out skillet.

Heat 1 Tbsp. oil in same skillet over medium. Crush remaining garlic clove with the side of a chef’s knife and cook, stirring often, until it begins to turn golden, about 1 minute. Add clams, soffritto, and remaining ½ cup wine. Increase heat to medium-high and bring to a boil. Cook, uncovered, until liquid is reduced by half and clams are open (discard any that do not open), 5–7 minutes. Add parsley and fennel fronds and cook 1 minute longer. Taste and season with salt if needed.

To serve, place fried bread on plates and spoon clam mixture and cooking broth over. Drizzle with oil and sprinkle with red pepper flakes.

Do Ahead: Soffritto can be made 2 days ahead. Let cool; cover and chill.

Also, I find these to be just as delicious without the pancetta.
Balsamic: You can buy expensive aged balsamic vinegar that’s syrupy or you can simmer balsamic vinegar until it's reduced to half its volume. Simply simmer  1/2 cup vinegar in a small saucepan until it is thick and syrupy. This will give you 1/4 cup of syrupy balsamic vinegar.

Ina Garten’s Roasted Balsamic Brussels Sprouts

Brussels sprouts,

pancetta, sliced 1/4 inch thick, optional

kosher salt,

pepper,

syrupy balsamic vinegar

Preheat oven to 400°F. (If your oven runs cool, set it to 425ºF — I find I get better browning when I roast the Brussels sprouts at 425ºF.)

Place the Brussels sprouts on a baking sheet, including any of the loose leaves. Cut the pancetta into 1/2-inch dice and add to the pan. Add the olive oil, the 1 1/2 tsp. salt (or less — start with a teaspoon if you are sensitive to salt) and the 1/2 tsp. pepper and toss with your hands. Spread out the mixture in a single layer.

Roast the Brussels sprouts until they’re tender and nicely browned and the pancetta is cooked, 20 to 30 minutes, tossing once at the 20-minute mark.

Meanwhile, if using standard balsamic vinegar, place it in a small saucepan or frying pan and simmer gently until it is reduced by half and looking syrupy — be careful here! Err on the side of under reducing — once the balsamic starts thickening, it can burn quickly. At the first sign of the balsamic getting too thick or dark, transfer it to a small bowl.

Remove pan from the oven, drizzle immediately with the balsamic vinegar and toss again. (I like using the entire quarter cup of reduced balsamic, but add to taste.) Taste and adjust the seasoning with salt and pepper. Serve hot.

A few notes: The original recipe calls for pancetta. I find when I make these roasted Brussels sprouts without the pancetta, I don’t miss it. But when I make the Brussels sprouts with the pancetta, they are especially delicious. Your choice! 

The original recipe also calls for syrupy balsamic vinegar, which can be expensive. Here, I've reduced 1/2 cup balsamic vinegar by half instead.

Ina Garten's Roasted Brussels Sprouts with Balsamic

Studded with salty olives, pancetta and Parmesan that gets golden and crisp at the edges, this is roasted cauliflower at its brightest and most full-flavored. You can serve the caramelized florets either as a vegetable-based main dish or a hearty side to roasted meats or fish, or big bowls of pasta. The recipe calls for using a package of finely diced pancetta that practically melts into the sauce. But if you prefer a chunkier texture, you can dice it yourself into 1/2-inch cubes, and add them with the cauliflower. Or, to make this vegetarian, just leave the pancetta out.

Roasted Cauliflower With Pancetta, Olives and Crisp Parmesan

cauliflower

olives, crushed, pitted and chopped

lemon juice,

red-pepper flakes, plus more as needed

cumin or caraway seeds

(not ground) Parmesan

Heat oven to 425 degrees. Place cauliflower on a rimmed baking sheet and toss with 1/4 cup olive oil and 1/2 teaspoon salt until well coated. Roast for 15 minutes.

In a small bowl, whisk together olives, garlic, lemon juice, 1/8 teaspoon red-pepper flakes and a large pinch of salt. Drizzle in the remaining 1/4 cup olive oil, whisking well.

After the cauliflower has roasted for 15 minutes, add pancetta and cumin seeds to pan and gently mix to combine. Sprinkle Parmesan on top and roast for another 15 to 20 minutes, until cauliflower is tender, the pancetta rendered, and cheese is golden brown and crunchy.

Spoon olive dressing all over roasted cauliflower while still hot and toss to combine. Taste, and add more salt, red-pepper flakes or lemon juice, if needed. Scatter parsley over the top before serving.

This hearty Pasta e Fagioli soup with pancetta, vegetables and white wine is perfect for chilly nights.

Pasta Fagioli

extra virgin olive oil,

pancetta, diced

yellow onion, finely diced

carrots,

garlic,

white wine

chicken broth

salt

(14.5 ounce) cans cannelloni beans

bay leaves

rosemary

pasta,

Parmigiano-Reggiano,

Heat the 2 tablespoons of olive oil in a large pot over medium-low heat. Add the pancetta and cook until the fat begins to render, about 5 minutes. Add the onion, carrot and celery and increase the heat to medium; cook, stirring frequently, until the onions become translucent, about 5 minutes. Add the garlic and cook 1 minute more, stirring constantly so the garlic doesn't stick to the bottom of the pan and burn.

Add the wine and cook until it has nearly evaporated, about 5 minutes. Add the broth, salt, pepper, beans, lentils, diced tomatoes, bay leaves and rosemary. Increase the heat to high and bring to a boil, then reduce the heat to medium-low and simmer, uncovered, until the lentils are just tender, 15-30 minutes, depending on the type of lentils you used.

Use a slotted spoon to transfer 1 cup of the bean mixture and a little liquid to a blender. Remove the center knob so steam can escape. Hold a paper towel or kitchen towel over the opening to prevent splatters. Purée until smooth and set aside.

Add the dried pasta to the pot and stir to incorporate. Turn the heat up to a gentle boil and cook until the pasta is tender but still firm to the bite, anywhere from 8-12 minutes depending on the type of pasta you used. The soup will thicken a bit by the time the pasta is cooked. Fish out and discard the bay leaves.

Stir the reserved puréed bean mixture into the soup. (If you're having a hard time getting the mixture out of the blender, remove as much as you can with a rubber spatula, then add some of the hot soup broth to it and swirl around to loosen it up; it should come right out.) Cook briefly, until the soup is heated through.

Remove the soup from heat and stir in the Parmigiano-Reggiano. If the soup seems too thick, gradually add 1-2 cups of water or more chicken broth and thin to desired consistency (note: the longer it sits on the stove, the thicker it will get). Season to taste with salt and pepper. Ladle the soup into bowls. Drizzle each portion with a touch of extra-virgin olive oil and sprinkle with more cheese, if desired.

Note: This soup is best served immediately; as it sits, the pasta and beans soak up the broth. If the soup gets too thick, you can thin it with a bit of broth or water.

Freezer-Friendly Instructions: The soup can be frozen, without the pasta, for up to 3 months. Defrost the soup in the refrigerator for 12 hours and then reheat it on the stovetop over medium heat until simmering, add the pasta, and cook until the pasta is tender. (The beans may have soaked up some of the broth while frozen, so add more broth to thin out the soup, if desired.)

Pasta Carbonara (The Best)

lb (115 g) pancetta, diced (see note)

tsp black peppercorns,

lb (225 g) spaghettoni

(75 g) Parmesan cheese, finely grated

(75 g) Pecorino cheese, finely grated

In a large skillet over medium-high heat, brown the pancetta in the oil. Add the pepper and cook 1 minute longer. Set the pancetta aside, leaving the cooking fat in the skillet.

In a pot of lightly salted water, cook the pasta for 5 minutes or until slightly tender but still firm at the centre. Reserve 1½ cups (375 ml) of the pasta cooking water. Drain the pasta.

In a bowl, combine the egg yolks with both cheeses and ¼ cup (60 ml) of the pasta cooking water. Set aside.

Meanwhile, in the same large skillet you used to cook the pancetta, continue to cook the pasta with 1/2 cup (125 ml) of the pasta cooking water, stirring constantly, until al dente and the liquid has evaporated. Add more pasta cooking water if it evaporates before the pasta is properly cooked.

Off the heat, add the egg yolk mixture and the pancetta to the pasta. Stir continuously to prevent the eggs from coagulating. Add more pasta cooking water to thin out the sauce as needed. Serve immediately. Generously season with pepper.

Simple Steps for Perfect Pasta

Il existe une multitude d'interprétations de ce classique de la cuisine italienne. Mais saviez-vous que ni la crème ni le bacon n'y ont leur place? Selon la tradition, voici les clés qui rendent la sauce aussi onctueuse que savoureuse. Buon appetito!

Pâtes carbonara (les meilleures)

115 g lb) de pancetta, coupée en dés (voir note)

ml (1 c. à soupe) d’huile d’olive

ml (1 c. à thé) de grains de poivre noir concassés au mortier

225 g (1/2 lb) de spaghettonis

jaunes d’œufs

g (3/4 tasse) de fromage parmesan frais râpé finement

g (3/4 tasse) de fromage pecorino romano râpé finement

Dans une grande poêle à feu moyen-élevé, dorer la pancetta dans l’huile. Ajouter le poivre et poursuivre la cuisson 1 minute. Réserver la pancetta dans une assiette en conservant le gras de cuisson dans la poêle.


Dans une casserole d’eau bouillante modérément salée, cuire les spaghettonis 5 minutes ou jusqu’à ce qu’ils soient souples mais encore fermes au centre. Prélever 375 ml (1 1/2 tasse) d’eau de cuisson. Égoutter.


Dans un bol, mélanger les jaunes d’œufs, les fromages et 60 ml (1/4 tasse) de l’eau de cuisson. Réserver.


Entre-temps, dans la même grande poêle qui a servi à la cuisson de la pancetta, poursuivre la cuisson des spaghettonis encore croquants avec 125 ml (1/2 tasse) de l’eau de cuisson en remuant sans arrêt ou jusqu’à ce qu’ils soient al dente et jusqu’à évaporation du liquide. Ajouter plus d’eau de cuisson si les pâtes ne sont pas assez cuites. 


Hors du feu, ajouter le mélange de jaunes d’œufs et la pancetta aux spaghettonis. Remuer sans arrêt afin d’éviter que les œufs coagulent. Ajouter un peu d’eau de cuisson au besoin pour détendre la sauce. Servir aussitôt. Poivrer généreusement.


Guanciale, pas pancetta: c'est pour ça que c'est trop salé pour certains. Toaster le poivre moulu gros pour en exprimer les arômes. Aucune raison d'ajouter de l'huile d'olive. Des spaghettis conviennent aussi, mais la qualité est importante. Deux eux entiers plus un jaune, hors du feu, en effet, voire dans le plat de service.

Recette parfaite! Cette fois, j'ai cuit le pancetta a feu doux, que pour faire fondre le gras et ne pas le brûler. Merci de faire des recettes pour deux ;-) !!

Ne faites pas cette recette. Moi qui m'attendais à des pâtes carbonara style pacini! Eh lala! 
Dû au fromage romano, ça goûte un mélange entre le fromage kraft et le sel intense. Honnêtement, je suis de plus en plus déçue des recettes de ricardo... Prenez une recette à base de crème à la place, ce sera meilleur!

Excellente recette. Attention de ne pas ajouter de fromage, car la préparation deviendra très salée. Ne pas trop saler l’eau non plus. J’utilise des dés de pancetta poivrée Fantino &amp; Mondello pour accélérer la préparation. Malgré la pancetta poivrée, on peut rajouter la quantité de poivre mentionnée à la recette.

La recette est effectivement très salée, et étrangement le résultat pour nous a été très amer? Je l'ai cuisinée avec des pâtes fraîches, c'était quand même très cochon.

J ai aimé la texture, par contre le mélange pecorino et pancetta était beaucoup trop salé. Je ne referai pas cette recette.

Bonne recette.  Manque de punch pour nous (mettre plus de poivre et ajouter des flocons de piment fort la prochaine fois).  Très riche et bourratif.  En accompagnement d’escalope de veau mais en plus petite portion de pâtes  la prochaine fois.
