How to make Panko bread crumbs

Sautéed asparagus gets all dressed with some golden brown, crunchy garlic breadcrumbs! A delicious and easy vegetable side dish.

Sauteed Asparagus with Garlic Breadcrumbs

asparagus

olive oil (divided)

panko breadcrumbs (I used whole wheat)

garlic (minced, divided)

salt

salt and pepper (to taste*)

Prepare a large bowl with ice water.

Bring a large saucepan of well-salted water to a boil over medium heat. Add the asparagus stalk pieces and cook for 2 minutes. Add the tips and cook for an additional minute (see Note below). Drain and immediately plunge the asparagus into the ice water to stop it from cooking further. Let the asparagus rest in the ice water while the breadcrumbs are prepared, then drain.

Heat 2 teaspoons olive oil in a large nonstick skillet set over medium-high heat. Add the breadcrumbs, half of the garlic and the salt. Saute, stirring occasionally, until the breadcrumbs are golden brown and crunchy, about 3 minutes. Transfer to a plate or bowl.

Heat the remaining 2 teaspoons olive oil in the skillet, then add the remaining garlic and asparagus. Cook just to warm the asparagus, about 1 minute.

Remove from the heat and return the breadcrumbs to the pan. Toss to combine, taste and season with salt and pepper. Serve.

Chinese takeout menus, prepare to step aside. Classic orange chicken is getting a healthier, fresher makeover in the form of extra-moist meatballs that are baked and then tossed in a sweet and tangy glaze with this 30-minute recipe for Baked Orange Chicken Meatballs.

Baked Orange Chicken Meatballs

milk

lbs ground chicken (See Kelly's Note)

ginger

Tablespoons scallions

soy sauce

red pepper flakes,

Make the meatballs: 

Preheat the oven to 500ºF. Spray a mini-muffin pan or baking dish with cooking spray.

In a small bowl, stir together the milk and Panko breadcrumbs and let sit for 5 minutes.

In a large bowl, combine the ground chicken, garlic, ginger, scallions, soy sauce, salt, pepper and soaked breadcrumbs. Use your hands to thoroughly combine the meat mixture and then shape it into balls using 2 to 3 tablespoons of meat per meatball.

Place the shaped meatballs into the prepared pan and bake for 12 to 15 minutes until the meatballs are fully cooked. While the meatballs are baking, prepare the sauce.

Make the sauce: 

Add the sesame oil and olive oil to a small saucepot over medium-low heat. Add the garlic and ginger and cook, stirring, for about 2 minutes until golden brown.

Add the red pepper flakes, orange marmalade and hoisin sauce, and cook, stirring occasionally, for 5 minutes until the sauce has thickened slightly.

Remove the meatballs from the oven and transfer them into a large bowl. Pour the sauce on top and toss to coat. Serve immediately.

If you can't find ground chicken at your local supermarket, feel free to use ground turkey, which is often easier to find.

When it comes to cooking, King George whiting is best prepared simply. Ingredients are minimal to emphasize its natural flavour.

Spicy Buffalo Tofu Wings

non-dairy milk

all-purpose flour

flaxseed

onion powder

garlic powder

tofu

Oil mister or cooking spray

Franks cayenne pepper

vegan butter

Vegan ranch blue cheese dressing

Preheat the oven to 425°F and line a baking sheet with parchment paper.

Whisk the batter ingredients together in a medium bowl. Let the mixture sit for 5 to 10 minutes.

Stir the breading ingredients together in a separate bowl.

Slice the tofu into 12 triangles. To do this, slice the block into 6 rectangles, then cut each rectangle in half on a diagonal.

Dip a tofu triangle into the batter and coat all sides. Shake off any excess batter, then transfer the tofu to the breading and carefully coat all sides.

Place the tofu piece on the baking sheet.

Repeat the process and arrange all of the tofu pieces on the baking sheet.

Lightly mist the tofu with oil.

Bake the tofu for 20 minutes, carefully flipping the pieces and then misting them again with oil halfway through baking.

While the tofu bakes, melt the butter and mix it together with the hot sauce.

After the tofu has baked for 20 minutes, take it out of the oven and coat each piece in the sauce. The easiest way to do this is by lightly dipping the pieces in the sauce with tongs, then touching up any missed spots with a basting brush.

Replace the tofu pieces on the baking sheet, then return the baking sheet to the oven.

Bake the tofu for 10 minutes more.

Serve the tofu wings with dressing of choice and optionally sprinkled with fresh chives.

This roasted butternut squash pasta is made with garlic olive oil and chickpeas. It&#039;s sprinkled with salty toasted breadcrumbs instead of cheese, to keep things vegan. An easy weeknight dinner.

Butternut Squash Pasta with Toasted Breadcrumbs

lb (454 g) butternut squash, cubed (about ½-inch)

extra virgin olive oil, divided

fine sea salt, divided

red pepper flakes

red onion, diced ((about 2 cups))

oz dried spaghetti ((gluten free if needed))

baby spinach

(15 oz/14 fl oz/398 ml) can chickpeas, rinsed ((see note 1))

Black pepper ((to taste))

Flat leaf parsley ((for garnish))

extra virgin olive oil

breadcrumbs ((gluten free if needed))

fine sea salt

Preheat

Preheat: Preheat oven to 400°F (200°C).

Butternut Squash

Roast Squash: Scatter squash on a parchment lined baking sheet. Drizzle with 1 tablespoon of the olive oil and toss to coat. Sprinkle with ¼ teaspoon of the salt.  Bake until golden brown, 30 to 35 minutes, flipping halfway.

Breadcrumbs

Toast Breadcrumbs: Heat olive oil in a large skillet over medium-low heat. Add breadcrumbs and onion powder. Cook, stirring frequently, until golden brown, about 3 minutes. Transfer to a small bowl and stir in salt.

Pasta

Cook pasta: Bring a large pot of salted water to boil. Cook pasta al dente, according to package directions. Reserve ¾ cups of pasta water before draining.

Sauce

Make sauce: Meanwhile, give the skillet a quick wipe, add the remaining 5 tablespoons olive oil and red pepper flakes. Warm over medium-low heat. Add red onion and cook until translucent, about 5 minutes. Add garlic and cook until slightly golden at the edges, about 2 minutes. Reduce heat to low to keep warm.

Combine

Combine: Add pasta to sauce and toss to coat. Stir in spinach, chickpeas, ½ cup of the reserved pasta water, and the remaining ½ teaspoon salt. Cook until the spinach is wilted and chickpeas are warm, about 2 minutes. If needed, add up to an additional ¼ cup of reserved pasta water to bring everything together. Scatter in the butternut squash, taste and season with salt and pepper. Garnish with parsley and toasted breadcrumbs.

Roasted Garlic Mac and Cheese

Tablespoons (1/2 stick) unsalted butter

bread crumbs

Tablespoons chopped fresh chives

garlic

Olive oil

pasta

Tablespoons all-purpose flour

cheddar cheese (white, yellow or a mix of both)

Parmesan cheese

mustard powder

Melt the butter in a medium saucepan over medium heat. Add the breadcrumbs and chives, stirring to combine. Cook for 1 to 2 minutes until toasted slightly. Transfer to a small bowl and set aside.

Make the crumb topping:

Preheat the oven to 400ºF.

Slice the top one-third off the head of garlic. Place the bottom portion on a piece of foil, drizzle it with olive oil, and season it with salt and pepper. Place the top portion back on the head of garlic and crumple the foil to create a sealed packet. Roast the garlic until golden and soft, about 45 minutes.

Remove the roasted garlic from the oven and squeeze the cloves into a bowl. Using a fork, mashing the cloves into a paste. Set aside.

Cook the pasta in a large pot of well-salted water until al dente. Drain the pasta, reserving 1/2 cup of the cooking water. Butter a 13x9-inch shallow baking dish.

In a large, heavy saucepot (such as a Dutch oven), melt 1 stick butter over medium-low heat. Stir in the flour and reserved garlic paste. Cook the roux, stirring constantly, for 3 minutes until golden. Whisk in the milk. Bring the sauce to a boil, whisking constantly, then reduce it to a simmer and let it cook for 3 minutes. Stir in the shredded cheddar cheese, Parmesan cheese, mustard powder, salt and pepper until well combined.

Add the pasta and the reserved 1/2 cup of pasta water to the pot, stirring to combine. (It will be soupy.) Transfer the macaroni and cheese to the buttered baking dish. Sprinkle it with the reserved crumb topping and place it on a sheet tray (in the event it bubbles over while baking). Bake the macaroni and cheese for 20 to 25 minutes until it's golden brown and bubbling.

Make the pasta and sauce:

The garlic head can be roasted, and the garlic gloves mashed, 1 day in advance. Store the garlic paste, covered, in the fridge.

The macaroni and cheese can be baked in a large baking dish or several smaller ramekins for individual servings.
