This sweet melon gazpacho is a refreshing light summer meal or starter. Packed with plenty of flavour and topped with crispy parma ham, this dish has under 250 calories per serving

Melon gazpacho

cantaloupe melon 300 grams ripe, chopped

cherry tomatoes a handful, chopped

garlic 1/2 cove, crushed

sherry vinegar 2 tbsp

Tabasco a few splashes

radishes a handful, finely sliced

cucumber 1/4, seeded and finely diced

spring onions 2, thinly sliced

This quick and easy monkfish recipe is a surefire way to impress at any dinner party.

Monkfish in Parma ham

tbsp tomato paste

black olives, chopped

monkfish fillets

Parma ham

Salad leaves dressed

Mix the tomato paste with the black olives. Season.

Spread over the top of the monkfish fillets,

Bake in a preheated oven at 220°C/fan200°C/gas 7 for 25 minutes.

Slice the monkfish and serve with salad leaves dressed with olive oil and white wine vinegar.

This is my standby pasta supper as it is so delicious, so quick and everyone loves it. Great for everyday or for casual supper parties too. It's base is a crème fraîche pasta sauce and it's topped with crispy Parma ham, which gives tons of flavour and great texture.

penne pasta

packs Parma ham, snipped into small pieces

250 grams/9 ounces small brown chestnut mushrooms, halved or quartered

200 grams/7 ounces full-fat crème fraîche

grams/3½oz Parmesan, grated

parsley

salt and black pepper,

green salad

crunchy bread

This recipe for cod, cherry tomato and green olive tray roast is so quick and easy to prepare but looks impressive when you pull it out of the oven. Serve with a big bowl of buttered orzo

Cod, cherry tomato and green olive traybake

red onion,

cherry tomatoes

evenly sized pieces cod loin,

nocellara green olives

flat-leaf parsley

crusty bread

Heat the oven to 220C/fan 200C/gas 7. Put the onions and tomatoes in a shallow roasting tin or dish. Season, add 4 tbsp of olive oil and toss together. Roast for 15 minutes. Wrap each piece of cod in a slice of Parma ham. Add the olives to the trayand sit the cod on top of the tomatoes. Keep roasting for another 15 minutes until the cod is cooked through and the Parma ham has crisped up. Scatter with parsley and serve with some crusty bread.

Stuffed Chicken Breasts

g (3 ounces) Boursin Garlic & Fine Herbs Gournay Cheese

Finely grated zest of ½ lemon

chicken

mL (3½fl oz) each dry white wine and chicken stock

thyme sprigs, leaves

Preheat oven to 200°C (180°C fan) mark 6. In a bowl, mix together the Boursin, parsley and lemon zest. Make a horizontal cut in each chicken breast, then stuff each with a quarter of the cheese mix. Wrap a parma ham slice horizontally around each breast, covering the cheese, then put seam-side down in an ovenproof dish.&nbsp;

Creamy linguine with ham, lemon & basil

pack prosciutto

lemon

tbsp crème fraîche

basil leaves

Cook the linguine. Meanwhile, tear the ham into small pieces and fry in the olive oil until golden and crisp.

Drain the pasta, reserving a little of the cooking water, then return to the pan. Tip in the cooked ham. Mix together the lemon juice, egg yolks and crème fraîche, then add this to the pan along with the basil and Parmesan. Mix in with tongs, adding a little of the cooking water, if needed, to make a creamy sauce that coats the pasta. Serve with extra Parmesan grated over the top, if you like.
