Fettuccine Alfredo

lb (340 g) fettuccine

(55 g) butter

(180 ml) 35% cream

(70 g) Parmesan cheese,

parsley,

In a pot of salted boiling water, cook the pasta until <i>al dente</i>. Drain and oil lightly, setting 125 ml (1/2 cup) of cooking water aside.

In the same pot, melt the butter. Add the cream and 55 g (3/4 cup) Parmesan cheese and heat thoroughly. Add the pasta and toss to coat. Season with salt and pepper. Add a little cooking water, if needed, for a creamy sauce.

Divide the pasta among four plates. Garnish with the remaining Parmesan cheese and parsley. Serve immediately.

Très simple à faire est c'est super bon. Les quantités fonctionnent pour une boite de pâtes de 450 g aussi. J'ai utilisé des linguini fins c'était plus délicat et excellent.

How to preserve cheese

Alfredo Sauce Recipe

margarine

(8-ounce) package cream cheese (ok

garlic powder garlic

milk (whole, 2%, 1% or Skim)

black pepper

nutmeg (optional)

oregano (optional)

Parmesan cheese

Melt butter in a saucepan over medium heat.

Add cream cheese and garlic powder, stirring with until smooth

Add milk, a little at a time, whisking to smooth out lumps.

Season with a dash of oregano and nutmeg if desired. Add ground black pepper to taste.

Stir in Parmesan. Continue to cook the sauce for 10-12 minutes over medium heat until it is hot and begins to thicken slightly. (It DOES take 10-12 minutes!) Stir frequently and whisk as needed to ensure it is smooth and the parmesan is incorporated throughout. When the sauce begins to thicken, remove it from the heat. It will thicken more after it is removed from the heat.  If the sauce becomes too thick, thin with a little milk.

Toss with hot pasta to serve. Serve with additional grated Parmesan cheese and/or bread crumbs and/or finely chopped parsley.

Easy Pasta Alfredo

pasta (I used linguini)

butter (unsalted)

garlic (minced)

milk

heavy cream

Parmesan cheese (shredded)

salt (or

pepper (or

parsley (chopped)

Cook the pasta according to the package instructions.

Melt the butter in a large skillet over medium high heat. Add the garlic and cook for 30 seconds, or until fragrant.

Pour in the milk and cream. Stir consistently to avoid burning on the bottom of the pan until the mixture comes to a boil. Turn the heat down to medium, and mix in the parmesan cheese, salt, and pepper. Adjust the seasoning to your own taste.

Remove the pan from the heat and mix in the cooked pasta until the sauce begins to thicken. Garnish with parsley, and serve.

A decadent sauce made from Parmigiano Reggiano, butter, and starchy pasta water is tossed with fettuccine and topped with more cheese!

Fill a large pot with water and 1 tablespoon kosher salt to only 3 inches high and bring to a boil.  Once boiling, cook pasta to al dente and make sure to reserve at least 1 cup of the very starchy pasta water.

While pasta is boiling set up a large bowl with the butter, grated cheese, and cream.

Place the al dente pasta into the bowl along with a ladle of pasta water.  Toss quickly to melt the butter and cheese.  If too dry, add more of the reserved pasta water a bit at a time to get the perfect creamy consistency.

Season with salt to taste and serve immediately.

Broccoli Shrimp Alfredo

fusilli pasta (or pasta of choice)

broccoli

butter (divided)

jumbo shrimp (peeled/deveined/tails off)

salt

garlic

all-purpose flour

cream cheese

parmesan cheese (plus more for serving)

Cook pasta according to package directions; reserve ½ cup pasta cooking water before draining; set aside.

Steam the broccoli for 2 minutes until fork tender, and toss with the cooked pasta.

In a large pan, heat 1 tablespoon butter, season the shrimp with salt and pepper and add to the heated pan. Cook shrimp for 2-3 minutes per side until shrimp turns opaque and is fully cooked; toss with the cooked pasta and broccoli.

In the same pan, heat the remaining butter, add garlic and cook, stirring constantly, until fragrant, about 1 minute.

Add flour, then whisk to combine and cook for 1 additional minute. Slowly whisk in the milk, then cream cheese, then let the sauce simmer uncovered until thickened, about 2-3 minutes.

Pour the sauce over the pasta mixture and stir well. Add as much reserved pasta water for the desired sauce thickness.

Serve with freshly ground pepper and parmesan cheese, if desired.

Yumna, this was so good that I had a plate and nibbled some more as I was putting it away. My family likes a lot of spices so I added some extra onion and garlic powder. Also, I increased the recipe for six people and added one additional cup of milk to get it to the consistency we wanted. I am new to your site and have tried 3 recipes and we loved every one. Absolutely delicious and so easy and quick to make! This is one of the best pasta recipes I’ve tried and aside from adding some red pepper flakes, I followed the recipe. I used angel hair pasta but any would work fine.

This was our Friday night, Lent observant, dinner last night and it was amazing.  We used a small egg noodle, and it was perfect.  We loved the Alfredo sauce and the cream cheese made it very creamy.  My husband suggested that the next time he may try using another favorite green veggie of ours, asparagus.  This recipe is definitely a keeper and would be delightful to serve for company.  Thanks for the detailed instructions.

Pasta Liebe! Spaghetti mir Garnelen in Alfredo Sauce ist ein leckeres Nudelgericht, das perfekt für die Alltagsküche geeignet ist. Es ist in 25 Minuten zubereitet, gelingt immer und schmeckt fantastisch.

Spaghetti mit Garnelen in cremiger Alfredo Sauce

200 g Spaghetti (von DINKEL MAX)

300 g Garnelen (ohne Schale, roh)

400 ml Sahne

Parmesan (gerieben)

g Butter

Knoblauchzehen

Bund Petersilie

Muskatnuss

Schwarzer Pfeffer

Salz

Die Sahne in einen Topf geben, einmal aufkochen und bei kleiner Hitze auf die Hälfte reduzieren lassen. Die Butter und den Parmesan unterrühren und die Sauce mit Salz, Pfeffer und Muskatnuss würzen und warm halten.

Die Spaghetti in einem Topf mit reichlich Salz nach Packungsangabe kochen und währenddessen die Garnelen braten. Siehe nächster Arbeistschritt.

Eine große Pfanne bei mittlerer Hitze heiß werden lassen und so viel Olivenöl angießen, bis der Boden bedeckt ist. Die Knoblauchscheiben hineingeben und unter Rühren braten, bis sie gerade anfangen, Farbe anzunehmen.

Die Garnelen zufügen und unter Rühren 3-4 Minuten braten. Salzen und mit der gehackten Petersilie bestreuen.

Garnelen und Knoblauch aus der Pfanne nehmen und das Öl abgießen. Beides zurück in die Pfanne geben und die Sauce zufügen. Mit den tropfnassen Nudeln vermengen, abschmecken und servieren.

Lieber Malte, durch was kann man die 400ml Sahne in diesem Gericht "Spaghetti Alfredo mit Garnelen" ersetzen?
Gibt es eine Möglichkeit wie Nudelwasser und laktosefreie Sahne? Oder anderes?
Wenn ich soviel Sahne esse, klatscht mein Magen-Darm-Trakt in die Hände und murrt und gurgelt den ganzen Tag.
