Culurgiones are the stuffed pasta of Sardinia. Filled with mashed potatoes, mint and pecorino, this pasta recipe captures the fragrance and flavors of the island in every bite.

7OZ. re-milled durum wheat semolina

To make culurgiones dough: Pile the flour and semolina on a flat work surface. Make a well in the center. Pour 3/4 cup salted water into the well.&nbsp;Use a fork to gradually draw in the flour from the inside of the well continuing until the flour and semolina are combined. Knead until the dough is smooth and elastic. Cover with a bowl or tea towel and let rest for 1 hour.&nbsp;

To prepare the sauce:&nbsp;Heat oil in a saucepan over medium heat and add 3 oz. onion. Cook until soft, then add the tomato puree and cook for another 20 minutes, adding a sprig of basil leaves at the end.

To prepare the filling: First, peel the potatoes and mash in a bowl. Cut a handful of mint leaves into thin slices. Heat 2 Tbsp. oil in a frying pan over medium heat and add 4 oz. onion and the garlic. Cook but do not brown. Next, add the mashed potatoes, 5 oz. grated Pecorino cheese and the sliced mint leaves. Mix well and season with salt.

Bring water to boil in a 6 qt. pot and salt.

To form the culurgiones:&nbsp;Divide the pasta dough into 5-6 sections. Roll out each section into a ⅛” layer, working a little at a time, then cut out 3” discs. Place a Tbsp. of filling on each disc and seal by bringing the opposing edges together to form the traditional half-moon shape.

Add the culurgiones to the boiling water and cook for 4-5 minutes, remove and toss in the tomato sauce, top with a generous amount of grated pecorino, and a few mint leaves to taste.

PASTA FRESCA 30 TUORLI

250 g farina di semola di grano duro rimacinata

Mettete la farina di semola rimacinata in una ciotola. Sbattete leggermente i tuorli in una ciotola e uniteli alla farina mescolando con una forchetta i n modo da amalgamare i due ingredienti. Impastate energicamente con le mani per almeno 10 minuti fino ad ottenere un impasto liscio ed omogeneo. Avvolgete l’impasto nella pellicola trasparente e lasciatelo riposare per 30 minuti. Quando l’impasto per la pasta fresca 30 tuorli sarà ben riposato stendetelo con il matterello molto molto sottile oppure con la macchinetta per tirare la pasta (la nonna papera) fino allo spessore 1. Quando avrete ottenuto tante sfoglie molto sottili potete decidere se lasciarle così e utilizzarle come lasagne oppure tagliarle con la macchinetta a tagliatelle o a taglierini o anche tagliarle a coltello piegando su se stesse le sfoglie di pasta fresca 30 tuorli e poi tagliandole con un coltello allo spessore desiderato. Muovete la pasta fresca 30 tuorli e aggiungete poca semola. Lasciate asciugare all’aria le tagliatelle di pasta fresca 30 tuorli ben allargate oppure appese e fatele seccare. Quando vorrete cuocerle tuffatele in acqua bollente leggermente salata e fatele cuocere per 3 minuti circa prima di scolarle. VARIANTI E CONSIGLI Io ho utilizzato uova medie, se utilizzerete uova piccole potreste dover aggiungere un po’ di acqua o di vino bianco ma fatelo gradualmente. Se userete uova grandi potreste dover aggiungere poca farina. Non serve aggiungere sale. Non è necessario utilizzare la macchina per tirare la pasta potete usare anche il matterello. Se volete congelare la pasta fresca 30 tuorli dovrete farlo in un vassoio ben allargata e poi potrete metterla (una volta congelata) nei sacchetti da congelo per 1 mese circa. Se vi è piaciuta la ricetta per la pasta fresca 30 tuorli forse potrebbero interessarvi anche la PASTA FRESCA CLASSICA o anche il SUGO DI FUNGHI oppure il RAGU DELLA NONNA.

Iniziamo la preparazione dal brodo, io lo faccio così: metto la carne in acqua, quindi parto da freddo e porto a bollore schiumando di tanto in tanto. Faccio bollire per circa 30 minuti e metto: le carote, le patate, il sedano, la cipolla e i pomodorini. Aggiungo olio e sale, metto il coperchio leggermente spostato e porto a cottura.

Mentre il brodo bolle prepariamo i tagliolini. Mettiamo la farina sul piano, al centro le uova e iniziamo ad impastare, potrebbe capitare, come è successo a me che l'impasto si presenti troppo asciutto, in questo caso basterà aggiungere qualche goccia di acqua. Impastiamo per un po e copriamo l'impasto con una ciotola per 15 minuti.

Mentre l'impasto riposa, montiamo la nonna papera. Tagliamo a pezzi e passiamo più volte la pasta nel rullo, diminuendo lo spessore fino ad arrivare a quello desiderato, io mi sono fermata al numero 5.

Tagliamo a strisce, 15 x 2 cm e passiamole nel rullo dei tagliolini .

Mettiamoli ad asciugare ben distribuiti su un canovaccio. Li possiamo fare senza problemi un giorno prima.

Io non cucino i tagliolini direttamente nel brodo, li lesso a parte, scolo, li metto in una zuppiera e aggiungo il brodo passato al colino. Ecco, questa è la mia tradizione, il pranzo natalizio varia di anno in anno, ma questo piatto non deve assolutamente mancare.

PICI TOSCANI FATTI IN CASA

Cominciamo a preparare l'impasto per pici:mettete su una spianatoia di legno la farina a fontana, aggiungete un pizzico di sale, l'acqua calda e l'olio ed impastate con le mani fino ad ottenere un panetto liscio. Copritelo con pellicola trasparente per alimenti e lasciatelo riposare per una mezz'ora in luogo fresco.

Una volta trascorso il tempo di riposo riprendete il vostro impasto e tagliatelo in tre pezzi, dopodiché spianatelo non troppo sottile con un mattarello liscio o con la macchina per pasta, date uno spessore di circa 3-4 mm.

Ci sono vari modi per dare forma ai pici, ma la prima cosa che vi consiglio di fare è ungere la spianatoia di legno con l'olio di semi (con le mani o con un pennello da cucina). Questo metodo vi aiuterà a lavorare meglio il picio quando andrete a rotolarlo.1° metodo - tagliate la pasta già spianata altezza circa 1 cm. con un coltello a lama liscia dando la larghezza delle classiche tagliatelle, poi una striscia alla volta fatela rotolare sulla spianatoia unta lavorandola con i palmi delle mani fino ad ottenere dei vermicelli lunghi e sottili.

2° metodo - il secondo metodo è quello di utilizzare il mattarello rigato che una volta passato sulla pasta spianata incide lunghi solchi che vi permetteranno di staccare picio per pico dalla striscia di pasta. Basterà poi tirare con le mani e rotolare ogni picio in modo che la pasta si assottigli e si allunghi.

3° metodo - c'è anche chi preferisce preparare i pici allungando un'estremità dal pezzo d'impasto senza spianare la pasta e formare il picio man mano fino a quando avrà raggiunto la lunghezza desiderata.In qualsiasi metodo vogliate procedere per prepararli, man mano che i pici saranno pronti lasciateli asciugare sulla spianatoia o su un canovaccio infarinato spolverandoli di farina per non farli appiccicare, come si fa con ogni pasta fresca.

Ecco abbiamo visto insieme come preparare questa tipica pasta regionale che si presta ad essere condita con ragù bianco toscano o altri sughi a piacere. Nella zona del senese sono famosi i pici all'aglione o i pici con le briciole, ottimi anche con cacio e pepe.Correte a mettere l'acqua a bollire perché i vostri pici toscani sono pronti per essere cotti!

500 g Tagliatelle all'uovo (ottime anche quelle di segale rustiche)

kg Cozze

500 g Vongole veraci

Gamberetti

350 g Funghi porcini

spicchio Aglio

q.b. Pepe

Pomodori (facoltativo)

q.b. Olio extravergine d'oliva

bicchiere Vino bianco secco

Dopo aver lavato e pulito per bene tutti i molluschi, metteteli in un tegame con un bicchiere di vino bianco.

Fate cuocere per 5 minuti finchè non si saranno aperti. Buttate quelli ancora chiusi e sgusciate tutti gli altri. Mettete e filtrate l'acqua di cottura.

Tagliate i funghi a fettine e poi metteteli in un tegame con l’olio e l’aglio.

Fate rosolare per qualche minuto, togliete l’aglio e aggiungete le cozze, le vongole e i gamberetti sgusciati. Aggiustate di sale e pepe.

Dopo un paio di minuti, aggiungete anche il pomodoro tagliato a pezzetti (facoltativo) e un bicchiere dell’acqua di cottura dei molluschi. Fate cuocere senza coperchio per qualche minuto.

Nel frattempo dedicatevi alla cottura delle tagliatelle in acqua salata.

Una volta pronte tuffatele nel tegame con funghi e molluschi.

Fate mantecare per bene e poi servite la gustose tagliatelle mare e monti.

TAGLIATELLE FUNGHI

Mettete sulla spianatoia la farina e fate un buco al centro. Unite le uova intere e iniziate a mescolare prima con una forchetta portando la farina sulle uova e poi via via impastate con le mani fino ad ottenere un impasto liscio e omogeneo. Stendete l’impasto prima con il matterello poi utilizzate la macchinetta per tirare la pasta e passate l’impasto tante volte cambiando ogni volta la misura della macchina fino ad arrivare alla più sottile ovvero alla 1.

Quando avrete una sfoglia davvero molto sottile potete cambiare il rullo della macchina per la pasta e mettere quello per le tagliatelle, se non lo avete potete arrotolare tutta la sfoglia in modo da creare un rotolo e poi tagliare con un coltello affilato.

Prendete i funghi e iniziate a pulirli bene togliendo tutta la terra che trovate. NON lavateli mai sotto l’acqua, raschiate con un coltellino in modo da togliere il grosso poi con un panno pulito fregate delicatamente in modo da toglierla tutta. Tagliate a pezzi i funghi grandi mentre lasciate interi quelli più piccoli.

Fate scaldare 4 o 5 cucchiai di olio aromatizzato all’aglio e fatelo insaporire per qualche secondo poi mettete a cuocere i funghi inizialmente a fiamma alta poi aggiungete due cucchiai di acqua e abbassate il fuoco, salate leggermente e fateli cuocere per altri 5/10 minuti fino a che saranno cotti. Mettete una pentola di acqua leggermente salata sul fuoco e aspettate che bolla poi buttate a cuocere le tagliatelle. Scolate le tagliatelle dopo 5 minuti circa direttamente nella padella con i funghi, alzate la fiamma e saltate le tagliatelle ai funghi per qualche minuto con un cucchiaio di acqua di cottura della pasta. Terminata la cottura delle tagliatelle ai funghi, aggiustate di sale se necessario e, cospargete con abbondante prezzemolo tritato. Mescolate le tagliatelle ai funghi e servitele ben calde.

VARIANTI E CONSIGLI Potete fare le tagliatelle solo con funghi porcini invece che come me che li ho comprati misti. Ovviamente se volete potete anche usare funghi surgelati. Fate lo stesso procedimento di cottura ma non aggiungete acqua perché la rilasceranno già naturalmente. Potete utilizzare olio extravergine di oliva e uno spicchio di aglio. Tortelloni pasta is a delicacy from the Emilia Romagna region. This homemade pasta tastes incredible dressed in a simple and quick butter and sage sauce for dinner served with a side of asparagus or broccoli.

Tortelloni Recipe with Spinach and Ricotta Filling

all-purpose flour

eggs (large and at room temperature)

Kosher salt

ricotta fresh

spinach

Parmigiano-Reggiano (freshly grated)

black pepper (freshly ground)

nutmeg (freshly grated)

Put the frozen spinach in a large skillet over medium-high heat, add a little water and cover and cook for 5 minutes or until defrosted and warm through. Transfer into a large sieve and drain and then leave to cool, squeezing to drain any additional liquid.

In a food processor, add the spinach, ricotta, Parmigiano Reggiano cheese, nutmeg, salt and pepper.

Pulse until the mixture has a creamy consistency. Transfer to a bowl and set aside.

FOR THE FILLING

To make the dough by hand: on a cutting board or other flat surface, create a mound with the flour and then create a large crater in the center of the mound. Add the salt and the eggs into the crater. With a fork, slowly incorporate the flour into the eggs until it is fully mixed. Now knead the dough by hand for 5-7 minutes, folding and flattening and turning. Create a ball with the dough, wrap it in plastic wrap and leave it to rest for 30 minutes.

To make dough with a stand mixer: Add flour, eggs, and salt in the mixing bowl of a stand mixer with the dough hook attachment. Turn to speed 2 to knead for 5 minutes. Remove the dough and knead by hand for 2 minutes. Shape into an round disc, cover with plastic wrap and let it rest for 30 minutes.

Cut off a 1-inch piece of dough, flatten into a rectangular shape and add a small amount of flour to both sides.

To make pasta by hand with a rolling pin: Place the piece of dough on a flat surface and roll out with a rolling pin. Fold in half and roll out again. Now fold in half and roll out until you have a thin long sheet. You can dust with flour at any point if the dough starts sticking to the rolling pin. Set aside to rest on your working table.

To make pasta with a pasta machine: Use a pasta machine or attach the pasta attachment to your stand mixer and set it to #1. Turn on the stand mixer to speed 2 and run the first piece of pasta dough through the roller. While on #1, fold the dough in half and run it through again. Do this twice. Adding a little bit of flour on each side of the dough again, change setting to #2 and pass the pasta dough through the sheet roller twice. Now pass the pasta through twice on #3 and then once on #4 #5 #6. Add flour to each side of your long pasta sheet and set it on your working table.

Let the rolled out pasta rest for 3 minutes.

Cut into 3-inch square cookie cutter or with a thin knife.

Put one heaping teaspoon of filling on each circle, brush water all around the edges.

Fold the square in half to form a rectangle and press down to remove any air and seal the edges where they come together.

Bend the rectangle so that the outer corners come together, forming a classic tortelloni shape, a pinch them to seal.

In a large pot of boiling, salted water, add the pasta and cook for 3-4 minutes.

FOR THE TORTELLONI DOUGH

In a medium saucepan, saute the butter and sage over medium heat for 4 minutes.

Add cooked and drained tortelloni directly into the saucepan and gently stir to coat.

Serve immediately and garnish with some Parmigiano Reggiano cheese, black pepper and some torn sage leaves.
