Salmon carbonara

240 g Pasta spaghetti

slice(s) Shortcut bacon fat trimmed, sliced

clove(s) Garlic crushed

Egg(s)

0.5 cup(s) 99% fat-free plain yoghurt (120 grams)

Skinless salmon fillet(s) (2x160 grams) cooked, flaked

tbs Fresh flat-leaf parsley chopped

tbs Grated parmesan cheese

x 3 second spray(s) Oil spray

Cook spaghetti following packet instructions. Drain, reserving ½ cup (125ml) pasta cooking liquid. Return pasta to pan.

Meanwhile, lightly spray a large non-stick frying pan with oil and heat over medium heat. Cook bacon, stirring, for 4-5 minutes or until crisp. Add garlic and cook, stirring, for 1 minute.

Add bacon mixture and reserved cooking liquid to pasta and stir to combine. Add egg mixture and stir until pasta is coated in sauce. Add salmon, parsley and parmesan cheese, and gently toss to combine. Serve.

Essentials: Baked Ziti Recipe

Salt and pepper

Italian sausage, preferably bulk

tomatoes, chopped,

ziti or other large cut pasta

mozzarella, grated or chopped

Olive oil or butter as needed

Bring large pot of water to boil; salt it. Heat oven to 400°F.

Distribute meat in large skillet over medium high heat and cook, undisturbed, until browned on one side, about 5 minutes. Stir and then cook another 2 minutes undisturbed. Add the onion and garlic. Lower heat to medium and continue to cook, stirring occasionally, until vegetables are soft; add tomatoes and bring to a boil. Simmer while cooking pasta, stirring and seasoning with salt and pepper to taste; do not let sauce become too thick.

Cook pasta until just tender; it should still be too hard to eat. Drain it (do not shake the colander; allow some water to cling to the noodles) and toss it with the sauce and half the mozzarella. Grease a 9-by-13-inch baking dish and spoon mixture into it. Top with remaining mozzarella and the Parmesan if using. Bake until top is browned and cheese bubbly, 20 to 30 minutes.

This recipe packs two known umami-bombs into one sauce: the pungent anchovy and the common white mushroom. Together they deepen and enrich the sauce without a lot of simmering time.

Dinner Tonight: Tomato Sauce with Mushrooms and Anchovy Recipe

Heat the oil in a large skillet over low heat. Add the onion and garlic and cook gently for 10 minutes, until soft. Turn the heat to high and add the mushrooms, cooking until all the moisture has evaporated.

Add the anchovies and cook for a minute until they begin to soften and melt into the sauce, then add the tomatoes and rosemary. Season to taste and simmer for 10-15 minutes. 

In the meantime, bring a pot of salty water to boil and cook the pasta until al dente. Drain, reserving some pasta water, then add to a serving bowl and top with the sauce. Toss well, adding a bit of pasta cooking water if necessary, then top with the cheese and serve.

Rather than using bitterness as a way to balance the dish (like in the classic recipe for sausage and broccoli rabe) this recipe adds sweetness in the form of sun-dried tomatoes and acidity with a shot of lemon juice. Three or four cloves of garlic are also sliced and gently cooked in the fat from the sausage, a simple step that adds another dimension of flavor.

Dinner Tonight: Orecchiette with Sausage, Broccoli, and Caramelized Garlic Recipe

Bring a large pot of salty water to boil and prepare a bowl of ice water.  Drop the broccoli into boiling water and cook until tender but still slightly firm, 2-3 minutes. Transfer the broccoli with a slotted spoon to the ice bath to cool quickly. Stir until cool, then drain the water. Return the water to a boil and cook the pasta until al dente, reserving 1 cup of the pasta cooking water before draining.

In the meantime, heat half the olive oil in a large skillet over medium heat and add the sausage. Break up into bite-sized pieces (but not until crumbly) and cook until golden brown and cooked through. Remove to a plate, leaving the fat in the pan. Add the garlic slices and remaining oil, if necessary depending on how much fat the sausages gave, and cook over low heat until golden. Add the broccoli and toss, then add the sausage, sun-dried tomatoes, and thyme. Increase the heat to medium and cook until heated through.

Try this quick and easy weeknight dinner. Whole-wheat pasta is served with beef Sirloin Tip Center Steaks and a tomato and olive sauce. This one will please the adults and the kids in your family.

Mediterranean Steak &amp; Pasta with Tomato-Olive Sauce

beef Sirloin Tip Center Steaks, cut 3/4 inch thick (about 4 ounces each)

whole grain fettuccine

(26 ounces) pasta sauce with olives

oregano

Italian cheese blend or mozzarella cheese

parsley leaves

Cook fettuccine according to package directions; drain and keep warm.

Heat large nonstick skillet over medium heat until hot. Place beef steaks in skillet; cook 11 to 13 minutes for medium rare (145&#176;F) doneness, turning occasionally. (Do not overcook.) Remove from skillet; keep warm.

Combine pasta sauce and oregano in same skillet; heat until hot. Return steaks to skillet; turn to coat with sauce. Place steaks on fettuccine; spoon sauce over all. Sprinkle steaks with cheese, allowing cheese to melt. Sprinkle with parsley.

Instant Pot Pasta with Meat Sauce

Set to Sauté: Set the Instant Pot to &#039;Sauté&#039;, use the &#039;Adjust&#039; button to set the heat level to &#039;More&#039;, and allow the pot to heat up.

Cook the Ground Beef

Cook the Ground Beef: As soon as the digital display reads &#039;Hot&#039;, add the ground beef to the pot and cook it, breaking it apart into smaller and smaller pieces as it cooks. Continue until the meat is cooked through, about 6 to 8 minutes.

Season the Ground Beef: Mix the Italian seasoning, dry minced onion, dry minced garlic, kosher salt, ground black pepper, and red pepper flakes into the meat and cook for an additional 2 minutes, tossing occasionally.

Cancel Sauté: Cancel out of the Sauté function.

Add the Chicken Stock, Pasta, and Pasta Sauce

Add the chicken stock to the meat and deglaze the bottom of the pot. Layer the pasta on top of the ground beef and, using a wood spoon or spatula, gently push it down into the stock so that it is submerged and damp. Pour the pasta sauce evenly over the pasta, do not mix it in.

Set a 5-Minute Cook Time

5-Minute Cook Time: Close the Instant Pot and set the pressure release valve to &#039;Sealing&#039; and then set the pot to cook on &#039;Manual&#039; / &#039;Pressure Cook&#039;, &#039;High Pressure&#039; for 5 minutes.

Allow for a 2-Minute NPR

2-Minute NPR: Once the cook time has completed, allow for a 2 minute NPR (natural pressure release). Release any remaining pressure after the two minute NPR has completed.

Balsamic Beef Steak Pasta

beef Top Sirloin Steak, 3/4 inch thick (about 1 pound)

balsamic vinegar

brown sugar

salt, divided

black pepper

garlic powder

shallot

asparagus,

red bell pepper,

cooked penne pasta (about 8 ounces uncooked)

basil (optional)

Bring vinegar to a boil in a small saucepan. Reduce heat; simmer over medium heat 12 to 15 minutes or until reduced to 3/4 cup. Stir in sugar; set aside.

Season beef Top Sirloin Steak with 1/2 teaspoon salt, pepper and garlic powder. Place steak on rack in broiler pan so surface of beef is 2 to 3 inches from heat. Broil 9 to 12 minutes for medium rare (145&#176;F) doneness, turning once. Carve steak into thin slices; keep warm.

Meanwhile, heat 1 teaspoon oil in medium saucepan over medium heat until hot. Add shallot and garlic; cook and stir 2 minutes. Stir in asparagus and bell pepper; cook 8 minutes until vegetables are al dente.

Add cooked pasta, remaining 1 tablespoon oil, and remaining 1/2 teaspoon salt to vegetables; cook 3 to 4 minutes until vegetables and pasta are heated through; toss in parmesan cheese. Serve sliced steak over pasta mixture; drizzle with balsamic glaze. Garnish with basil, as desired.

Ground Beef (93% lean or leaner)

bow tie pasta

shallots (about 2 large)

Cook pasta in salted boiling&#160;water 10 minutes or until almost tender. Add asparagus; continue cooking 3 to 4 minutes or until pasta and asparagus are tender. Drain well.

Meanwhile, heat large nonstick skillet over medium heat until hot. Add Ground Beef; cook 8 to 10 minutes, breaking into 3/4-inch crumbles and stirring occasionally. Remove from skillet with slotted spoon; pour off drippings. 

Heat oil in same skillet over medium heat until hot. Add shallots and garlic; cook 3 to 4 minutes or until tender, stirring frequently. Remove from heat. Add beef; toss to mix. Season with salt and pepper, as desired.

Combine beef mixture with pasta and asparagus in large bowl; toss well. Sprinkle with cheese, if desired.

Slow-cooked lamb with tomato and pappardelle

Strong flour

kg Lamb shoulder, bone

Chopped tomatoes, 400 grams

250 ml Jus, warmed, see note below

Place flour, eggs and salt into a food processor and blend until a firm dough starts to come together.

Turn dough out on to a clean bench top and knead together until smooth. Cover dough in plastic wrap and rest in the fridge for 30 minutes.

Remove dough from fridge, unwrap and cut dough into 6 pieces. Flatten dough pieces with fingers and fold in half. Flatten and fold again.

Flatten dough a final time to 4-5mm thick and pass each piece through a pasta sheet roller on the widest setting.

Fold dough in half and pass through roller again on the same setting. Adjust roller setting to 1 and pass each piece though in the same way.

Continue to pass dough sheets through roller, adjusting setting after each run. Once dough has passed through setting 7, place each sheet on to a lightly semolina-floured bench.

Lightly dust pasta with a little more semolina flour then fold each sheet in half, then half again, lengthways.

Cut folded pasta into 2cm strips, horizontally and then toss gently on the bench to separate pasta ribbons.

Toss ribbons in remaining semolina flour to prevent from sticking and place on to a baking paper-lined tray. Wrap in plastic wrap and store until ready to use.

Fresh pasta is best cooked and eaten on the same day.

Heat oven to 150C. Place lamb into a roasting dish with tomatoes and 1 cup of water. Cover and seal tightly with aluminium foil.

Place into the oven and cook for 2-3 hours or until lamb is extremely tender and falling off the bone.

Remove lamb from the oven and allow to cool before picking meat from the shoulder and discarding any bones and fat, reserving tomatoes along with the lamb.

Place lamb and tomato into a large heavy-based frying pan with 200ml of the jus and return to oven, basting occasionally until lamb is well-glazed and jus is thick and glossy.

Remove lamb from the oven and keep warm. Fill a large pot with boiling water and place over a high heat. Add a good pinch of salt then add pappardelle.

Cook pasta for 2 minutes before draining well. Place into a large bowl, add lamb and tomato, and toss together.

Divide between 4 large bowls and finish with a drizzle of remaining jus.

En una sartÃ©n a fuego medio, cocinar las lÃ¡minas de tocino por ambos lados hasta que estÃ©n doradas. Retirar y picar una vez frÃ­as.

Cocinar las arvejitas en abundante agua hirviendo a fuego medio con sal por 2 minutos. Retirar y dejar enfriar.

Cocinar el choclo desde agua frÃ­a con sal por 2 minutos desde que hierve el agua a fuego medio. Retirar y dejar enfriar.

Cocinar la pasta en abundante agua con sal por 10 minutos o hasta que estÃ© al dente. Drenar y mezclar con el aceite de oliva para que no se pegue mientras se enfrÃ­a.

500 g de filete limpio y desgrasado

Sal de Mar Gourmet y Mix de Pimientas Gourmet

tomates

cebolla morada pequeÃ±a

ajÃ­ amarillo

Aceite vegetal

Â½ cdta de almidÃ³n de maÃ­z

cebollÃ­n picado (solo la parte verde)

g de pasta para tallarÃ­n saltado o spaghetti

En un bowl mezclar la Salsa de Soya Gourmet, vinagre de manzana y salsa de ostiÃ³n. Reservar.

Picar el filete en cubos generosos y salpimentar. Reservar.

Picar el tomate en gajos y retirar el centro con semillas. Reservar.

Picar la cebolla en pluma gruesa, reservar con el tomate.

Cortar el ajÃ­ amarillo a la mitad y retirar las venas y pepas.

Picar en tiras gruesas. Reservar con el resto de vegetales.

Salpimentar y dejar la carne quieta por un minuto, luego girarla con tenazas. Salpimentar nuevamente.

Agregar aproximadamente Â¼ de taza de la mezcla de Salsa de Soya Gourmet y dejar que hierva hasta se ponga pegajosa. Retirar y reservar. Repetir con toda la carne.

Agregar aceite nuevamente y todos los vegetales.

Saltear ligeramente y agregar Â¼ de taza de la salsa y dejar que se evapore ligeramente. Reservar.
