Pâte sablée 

310 ml (1 1/4 tasse) de farine tout usage non blanchie

pincée de sel

ml (1/2 tasse) de beurre non salé, ramolli

60 ml (1/4 tasse) de sucre

jaunes d’oeufs

Placer la grille au centre du four. Préchauffer le four à 200 °C (400 °F). 

Dans un bol, mélanger la farine et le sel. Réserver.

Dans un autre bol, crémer le beurre et le sucre au batteur électrique. Ajouter les jaunes d’oeufs, un à la fois, et battre jusqu’à ce que la pâte devienne lisse. À l’aide d’une cuillère de bois, incorporer les ingrédients secs. Le résultat sera granuleux. 

Du bout des doigts, presser la pâte dans un moule à tarte à fond amovible de 23 cm (9 po) de diamètre. Cuire au four de 10 à 12 minutes, jusqu’à ce que la pâte soit dorée. Laisser tiédir.

Facile à faire,excellent j'ai fait des tartelettes .La recette donne 8 tartelettes. Je vais très certainement le refaire.

Excellente. Mais je ne sais pas pourquoi elle a fait des bulles pendant la cuisson. Ce n'est pas mentionné que je dois piquer la pate avant de mettre au four??

Simple et bon. Par contre, j'ai fait réfrigéré la pâte 20 minutes avant de la mettre dans le moule à tarte car elle était trop collante pour être travaillée

Dans un bol, délayez l'oeuf avec le sucre en poudre et une pincée de sel.

Mettez la farine sur le plan de travail, faites un puits au centre, versez-y le contenu du bol et le zeste de citron, puis le beurre fondu (surtout pas du beurre liquide!).

Malaxez le tout jusqu'à obtenir une pâte homogène. Etalez la au rouleau.

Faites cuire à four chaud 12 à 15 mn. Possibilité de mettre du papier alu dessus, pour être sûr que ça ne brûle pas.

This Strawberry Cream tart with Vanilla Custard is the creamiest, most amazing tartlet to make when strawberries in season.

Strawberry Cream Tart with Vanilla custard

Icing sugar

Pastry flour (AP works too)

g Almond flour

salt

110 g Unsalted butter (very cold cut into cubes)

50 g Egg (approx. 1 egg)

500 g Whole milk

g Granulated sugar

g Corn starch (sifted)

g AP flour (sifted)

Vanilla bean paste

Unsalted butter (soft, room temp)

200 g Heavy Cream (very cold, high fat min 36%)

100 g Mascarpone (cold, high fat)

g Icing sugar (sifted)

Strawberry

Sift together dry ingredients; flour, icing sugar, almond, salt

Add very cold butter cubes and rub the mixture between your hands until it becomes a sand like consistency

Add egg into the mixture and mix with your hands just until the dough comes together

Knead with the palm of your hand for a minute or two (do not over knead and do not use mixer) just until the dough becomes smooth

If the dough is too warm and sticky, place it into the fridge for 10-15 minutes first.  Otherwise continue with rolling the dough out into 2mm thickness between two Silicone baking mat.

Place the dough into the freezer for 15 min in between the two Silicone baking mat.. Do not remove the mat at this point

Prepare your oven rack with the Perforated &quot;air&quot; baking mat and Perforated tart rings on top

Take the dough out from the freezer, remove the top of the silicone mat and using one of the Perforated tart rings, cut out 8 circles - this will be the bottom of your tart crust. Carefully move the dough circles with the help of an Offset spatula and place them into the rings one by one

If at any point the dough gets too warm to work with, pop it back into the freezer for 5 minutes. You might need take the dough in and out of the freezer many times depending on the temp of your kitchen. It is extremely important to work with a dough which is cold enough to be able to handle (so not sticky) but not too cold which would result in breaking it

Cut 8 long stripes out of the dough, this will be the side of the tart

Carefully place the stripes into the ring one by one. Press each stripe onto the ring so it sticks to it

Place the Perforated tart ring with the pastry dough in them into the freezer for 1 hour

Pre-heat oven to 160C / 320F

After 1 hour take the pastry dough with the rings on them out and trim them with a sharp knife

Bake for 20 min then carefully remove the rings and bake for another 5 -10 min until golden brown. Let them cool on the Perforated &quot;air&quot; baking mat before filling

Sweet shortcrust pastry

In a large enough bowl with the help of a Hand whisk, mix together half of the sugar with sugar egg yolk until slightly fluffy

Mix in corn starch, flour, and vanilla until thoroughly incorporated and have a smooth paste. If too thick, mix in a very small amount of milk

Heat milk with the rest of the sugar until simmering, pour the warm milk over the egg yolk mixture slowly while whisking vigorously with a Hand whisk

Pour the mixture back into the saucepan and cook on medium heat for a few minutes until it thickens. Concretely it is approximately 1 min after the first boil. It might get lumpy first, don&#039;t worry just keep whisking and the cream will get smooth and glossy.

If in doubt, strain the pastry cream for a lump free, creamy end result then add in soft butter in 3 steps mixing after each addition

Place the cream into a shallow bowl and cover the entire surface with plastic wrap to avoid skin forming on top. Store in fridge, let it properly set few hours

Pastry cream

Place all ingredients into a bowl and slowly start to ship then gradually increase speed. Stop as soon as mixture reaches pipeable consistency, do not over beat . Do not use a stand mixer as cream can easily be over whipped

Whipped cream

Once tart shells are cooled and custard filling has set, fill each tart shell with pastry cream up until the edge of the tart shells then smooth the top with an offset spatula

Pipe cream on top and make the pattern using a spatula or spoon

Cut strawberries according to your liking then use a few paper kitchen towels and let them soak some juice out of the strawberries - this is necessary so the filling underneath won´t get wet or soggy

Arrange the strawberries on top of the tart then chop some pistachios finely and sprinkle all around the strawberries

Assemble

Cette recette est parfaite pour recevoir en soirée ou pour le brunch du dimanche. Entre deux croûtes de pâte sablée, la garniture est composée d’un mélange d’œufs, de lait et de raisins secs, le tout parfumé de vanille et de zestes d’agrumes. Une pointe de ce dessert crémeux s’accorde aussi bien avec un verre de lait ou un espresso matinal qu’avec la dernière coupe de blanc.

Crostata à la crème pâtissière

105 g (1/2 tasse) de sucre

ml (2 c. à soupe) de fécule de maïs

ml (1 c. à soupe) de farine tout usage non blanchie

œufs

500 ml (2 tasses) de lait (voir note)

ml (1 c. à thé) d’extrait de vanille

citron, le zeste râpé

orange, le zeste râpé

ml (2 c. à soupe) de raisins secs

265 g (1 3/4 tasse) de farine tout usage non blanchie

œuf

Dans une casserole hors du feu, mélanger au fouet le sucre, la fécule et la farine. Ajouter les œufs et mélanger jusqu’à ce que la texture soit lisse et homogène. Incorporer le lait, la vanille et les zestes d’agrumes. Porter à ébullition à feu moyen, en fouettant continuellement et en raclant le fond ainsi que les parois de la casserole. Ajouter les raisins secs. Couvrir directement la surface de la crème de pellicule plastique. Laisser tiédir à la température ambiante 
le temps de préparer la croûte.

Crème pâtissière

Au robot culinaire, mélanger la farine, le sucre à glacer et le sel. Ajouter le beurre et mélanger quelques secondes à la fois jusqu’à ce qu’il ait la grosseur de petits pois. Ajouter l’œuf et mélanger de nouveau jusqu’à ce que la pâte soit grumeleuse. Retirer la pâte du robot. Sur un plan de travail, fraiser (briser) la pâte en l’écrasant avec la paume de la main pendant 30 secondes. Envelopper de pellicule plastique et réfrigérer 30 minutes. 

Placer la grille au centre du four. Préchauffer le four à 190 °C (375 °F).

Sur un plan de travail fariné, abaisser les 2/3 de la pâte en un disque d’une épaisseur de 3 mm (1/8 po). Foncer un moule à tarte à fond amovible de 23 cm (9 po) de diamètre et 2,5 cm (1 po) de hauteur. Y répartir la crème pâtissière.

Abaisser le reste de la pâte à la même épaisseur que la précédente. À l’aide d’une roulette dentelée ou d’un couteau, découper la pâte en bandelettes de 1,5 cm (1/2 po) de largeur. Déposer les bandelettes sur la crème pâtissière à intervalles réguliers en les croisant, mais sans les entrelacer. Couper l’excédent de pâte. Déposer la tarte sur une plaque de cuisson.

Cuire au four 40 minutes ou jusqu’à ce que la pâte soit dorée. Laisser tiédir sur une grille, puis réfrigérer 3 heures ou jusqu’à refroidissement complet. Au moment de servir, saupoudrer de sucre à glacer.

Croûte

Les raisins secs me laissent perplexes. Avant de lire la description, je me disais que cela avait l'air délicieux. Suis-je  trop rigide ?

WoW, vraiment un délice, je croyais que ce serait trop sucré ...mais pas du tout !

Nous avons fait cette recette à deux occasions. Un succès! 

Nous avons cuit les restes de la croûte en format biscuit. Légèrement saupoudrés de sucre Demerara pour un petit croquant supplémentaire. À refaire.

Les différentes tasses à mesurer

-Faire chauffer votre four à chaleur tournante à 180 °C pendant la préparation.

- Préparer la crème d'amande en mélangeant le beurre, le sucre, la poudre d'amande, les œufs et un peu de sirop de poire (à prélever de la boîte) et la cc d'extrait de vanille réserver

- Étaler la pâte sur un moule, faites des petits trous avec une fourchette, 

- Couper en lamelles les poires mais laisser les entières sur la pâte disposez les en étoile, ensuite verser la crème d'amande mettre des amandes effilées.

- Mettre votre plat au four laisser cuire 35 min jusqu'à que ce soit bien dorée au dessus.

Tartelettes aux fraises

500 g de fraises

citrons jaunes

g de sucre glace

c.à.s de gelée de fruits rouges

Préchauffez le four à 180°C (thermostat 6).

Découpez 4 ronds de papier cuisson, et disposez-les dans les moules à tartelettes; ou beurrez-les.

Découpez 4 ronds dans la pâte à l'aide d'un bol.

Couvrez de papier cuisson, puis d'haricots secs, et enfournez à blanc 15  min.

Râpez le zeste d'un citron, et pressez les 2 fruits.

Dans un saucier, faites chauffer le beurre en morceaux avec le sucre.

Quand la crème est épaissie, laissez refroidir, puis disposez-la sur les tartelettes.

Lavez les fraises, coupez-les en 2, puis disposez-les sur les tartelettes.

Badigeonner la gelée fondue sur les fraises.

Shortcrust Pastry

Pâte Sablée

Cup Powdered Sugar ((50 grams))

Salt

Baking powder

Cup Unsalted butter, cold cut into 1-inch pieces ((113 grams))

Egg,

Vanilla extract

Place the flour, sugar, salt, and baking powder in a food processor.

Add the cold butter and pulse until the butter is the size of peas.

Add the egg and vanilla extract and process until you have a moist crumbly dough.

Dump the dough over a large piece of plastic wrap and use the edges to press the dough and shape it into a disk.

Tightly wrap the disk and refrigerate for a minimum of 90 minutes.

Roll the chilled dough between two pieces of parchment paper into a 9.5-inch circle. Remove the top piece and lift the dough using the bottom piece of parchment paper.

Gently place the dough over an 8 or 9-inch tart pan and use your fingers to press the dough into the mold.

Place the pan with the dough back in the refrigerator to chill for 20 minutes or up to overnight.

Preheat oven to 375F (190C), and line a baking sheet over the low oven rack.

Remove the parchment paper from the chilled dough, use a fork to prick the dough then a sharp knife to cut any access dough.

Line a piece of parchment paper over the dough and fill it with pie weights or dry beans.

Bake for 30 minutes. Remove from the oven and allow to cool for about 30 minutes before removing the weights.
