Healthy Peanut Butter Granola

old-fashioned (or quick cooking oats*)

cinnamon

sea salt

peanut butter

honey

½ tsp pure vanilla extract

Preheat oven to 325 degrees F. Grease a large cookie sheet and set aside.

In a small bowl, mix together oats, salt and cinnamon. Set aside

In a microwave safe dish or on the stovetop, melt the peanut butter and honey (or maple syrup) together until smooth.

Remove from heat and stir in vanilla.

Stir in dry ingredients and mix until well combined.

Spread mixture on prepared cookie sheet.

Bake in the preheated oven for 15-20 minutes, or until granola is lightly browned, stirring the granola once gently half way through. (A great way to test for doneness is to remove a small portion of the granola from the pan and set it on the counter. If it hardens as it cools the rest of the granola is done)!

Remove from oven and let sit until cooled.

Once cooled, break apart and eat!

{Easy} Crunchy Peanut Butter Granola

oats

+ 2 Tbsp peanut butter

maple syrup

tsp vanilla extract

almonds

Preheat oven to 350 degrees. Line a baking sheet with parchment paper or non-stick foil. Set aside.

In a large bowl, mix together peanut butter, honey, and maple syrup. Heat in the microwave for 30 seconds or until the peanut butter begins to melt.

Add in oats, peanuts, almonds, cinnamon, and vanilla extract. Stir thoroughly.

Spread granola mixture evenly over the baking sheet.

Bake for 10 minutes. Take the granola out of the oven, lower the oven's temperature to 325, and stir the granola around. If there are any large clusters, use your spatula to break them into smaller pieces. Bake for an additional 20 minutes, making sure to stir the granola around again at the 10 minute mark.

Allow to cool 30 minutes before storing in an airtight container or ziplock bag.

Place oats in a large bowl. Combine honey and peanut butter in a liquid measuring cup. Heat in the microwave for about 45 seconds, until the peanut butter starts to melt. Whisk peanut butter and honey to blend. Add in vanilla and whisk to incorporate.

Pour the peanut butter mixture over the oats and stir until well combined. Spread granola in an even layer on a rimmed baking sheet (line the baking sheet with parchment paper for easy clean up). Bake for 20 minutes, stir, and then press granola into an even layer on the baking sheet. Bake 10-15 minutes more until granola becomes light golden brown.

Let cool completely on baking sheet. The granola will become crisp as it cools. Store granola in an airtight container for up to two weeks.

Microwave for about 30 seconds, until the nut butter is slightly melted. Stir until smooth. Add the old-fashioned oats and cinnamon, then stir again until everything is combined.
