Stir together all ingredients in a medium bowl.

Taste and adjust seasoning, if needed.

Pickle de Gallo - Dill Pickle Salsa

cucumber

dill pickles (finely diced (about 4 whole pickles, depending on pickles size))

sweet onion (finely diced)

garlic (peeled and finely minced)

Toss together your cucumbers, pickles, onions, bell peppers, garlic, hot peppers (if using), and salt.

Drizzle the pickle brine over the mixture and toss again.

Cover tightly and refrigerate for an hour before using to give the flavours a chance to mingle and marry.

Stir together all ingredients and season with a healthy pinch of salt. Allow to rest in refrigerator for about 1 hour to allow the flavors to develop. Toss again before serving. Keeps for about 1 week.

Start by dicing up all your vegetables.  I like to dice mine into very small pieces but you can make yours a little chunkier if you like.

To a large bowl, add the diced pickles, cucumber, red pepper, tomato, onion, jalapeno and minced garlic.  Next, add in your fresh dill, pickle brine and lime juice.  Mix everything together well and season with salt, to taste.

Enjoy pickle de Gallo as a dip with corn chips, a side dish or a topping for nachos, tacos and more.

When I was a little girl in SE New Mexico, my best friend and I LIVED for dill pickles. 4, 5 years old and we ran to the snowcone truck (we didnt have an ice cream truck lol) EVERY DAY for a pickle juice snowcone. That is TRUE LOVE, I don't care who you are. 
However, I think I may have to turn in my Pickle Queen crown now. 
 I *just* find out about Grillo's version of this recipe TODAY (be gentle. I live in Alaska. We are always the last to know.).
And YOU already created a copycat. 
Can i even consider myself a fan anymore? 

I haven't made this yet, but I can tell just by the ingredients that yours is going to be entirely better than the store-bought stuff.
