A simple tasty recipe for  Pickled Red Onions, that can be made in 15 minutes flat! Give your favorite foods like tacos, bowls, burritos, wraps, or grilled meats a huge burst of flavor in an instant. Store in the fridge for up to two months! This small-batch recipe is fast and easy and will elevate many dishes you already make.

Pickled Red Onions 

½ a red onion, very thinly sliced

white vinegar, or use apple cider or red wine vinegar

water

salt

½ -2 tablespoons sugar (or honey

whole spices (optional- one

additions:1-2 garlic cloves,

bay leaves

oregano

Thinly slice ½ a red onion. (Feel free to double the batch)

Place the onion along with the vinegar, water, salt, sugar and whole spices and any optional additions in a small pot on the stove and bring to a simmer. Simmer 1 minute, stirring.

Place onions and liquid in a clean jar and store in the fridge.

Just as easy as it says...and delicious, crisp, onions.

These are so simple, quick, and delicious.  They have quickly become a staple in my house.  My kids like to snack in them 😊

I've made this twice now and it's really good. the onions come so soft and not at all acidic like raw pickled onions do. I use them on everything...fried eggs, sandwiches, salads. cheese plates etc.. so good.
For whole spices I've used lightly toasted fennel seeds, nigella seeds and coriander seeds which makes a nice subtle flavour that goes with everything I think.

So quick to make, and elevated our quinoa salad to another level. This hits the spot!

Chicken souvlaki with tzatziki

red onion,

tsp caster sugar

tbs apple cider vinegar

(280 grams) thick Greek-style yoghurt

garlic cloves, 1 grated, 2 crushed

Lebanese cucumber, grated, squeezed to remove excess liquid

tbs extra virgin olive oil

barbecue chicken, meat and skin shredded

tsp dried chilli flakes

oregano,

pita breads, warmed

truss tomatoes, sliced

In a medium bowl, combine onions, vinegar, water and salt and set aside for 30 minutes.  In a small bowl, combine mayonnaise and mustard and stir to combine.

Turkey Sandwich with Pickled Red Onions

The Brussels sprouts are tossed in a creamy miso dressing and served with pickled onion and roasted cashews.

Shredded Brussels Sprouts Salad with Miso Dressing

grapeseed oil

white miso

sesame oil

soy sauce

rice vinegar

garlic, (minced)

creme fraiche

Brussels sprouts

pickled red onions

roasted, unsalted cashews

In a small mixing bowl whisk together the grapeseed oil, miso, sesame oil, soy sauce, rice vinegar, ginger and garlic. Add the creme fraîche whisk to combine.

For the miso dressing:

Use a mandolin or chef knife to shred the Brussels sprouts, discarding the ends. Use your hands to separate the shredded Brussels sprouts.

Add the Brussels sprouts to a large mixing bowl, add the dressing and toss to combine.

Add the pickled onions and cashews and toss once more then serve immediately.

Shredded Brussels Sprouts with Miso Dressing

These blackened fish tacos with. Creamy cucumber salad and pickled onions are dangerously delicious. The seasoned white fish tastes amazing with the cool and creamy cucumber salad.

Blackened Fish Tacos with Creamy Cucumber Salad and Pickled Onion

cod (thaw and pat dry)

olive oil

garlic powder

paprika

black pepper

cayenne powder

cucumber

jalapeno (diced small, remove seeds and veins)

sour cream

lime juice (fresh squeezed)

salt (to taste)

onion

white vinegar rice vinegar

cane sugar

tortillas (warmed)

avocado (peel, pit and cube)

cilantro

lime

Peel and thinly slice a medium-sized red onion. Place the slices in a colander over a sink. Boil a pot of water and pour the boiling water over the onion slices. This will help soften them. Next, combine warm water, white or rice vinegar, and sugar in a small, sealable container. Stir well. Add the sliced onions, cover, and refrigerate. They’ll need at least an hour before they are ready to enjoy.

Quick Pickle the Onions

Combine cored and diced English cucumber, diced jalapeno, fresh squeezed lime juice, salt, mayonnaise, and light sour cream in a mixing bowl. Refrigerate until ready to use.

Make the Cucumber Salad

Combine dried oregano, garlic powder, paprika, salt, black pepper, and cayenne powder to make the seasoning blend. Pat the fish dry with a paper towel. Drizzle with olive oil followed by the blackening spice. Rub the spice all over the fish, both sides. Heat a non-stick skillet over medium high heat and add about one tablespoon of olive oil. Once it’s hot, add the prepared fish to the pan. Cook for 2-3 minutes per side or until the fish is white and flaky. If it is opaque, it is not done. Thickness of the fish will greatly impact cooking times. Remove from the heat, set aside.

Make the Blackened Fish

Heat four tortillas of choice. Option to add cubed avocado. Next, break the fish apart and spread it out evenly among the tacos. Top with creamy cucumber salad, pickled onions, and garnishes of choice. Cilantro, lime wedges and scallions are all great additions. Enjoy!
