5-Ingredient Pistachio Crusted Salmon

coconut milk

Thai green curry (see notes)

soy sauce (gluten-free or coco aminos, if needed)

pistachios

salmon fillets

olive oil

Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper.

Bring the coconut milk, Thai green curry paste, and soy sauce to a boil in a small pot. Lower the heat and let it simmer gently, uncovered, whisking occasionally until it reduces to 1 cup.

Finely chop the pistachios by hand or using a small food processor. Lay the salmon, skin side down, on the prepared baking sheet, and cover with the pistachios, pressing them firmly into the salmon so that they stick. Drizzle the top of the salmon with the oil. Bake the salmon for 8-10 minutes, or until it reaches an internal temperature of 140 degrees Fahrenheit and is soft and just barely starts to flake.

Make a pool of the green curry sauce on four plates and top with the pistachio crusted salmon.

8 Minute Baked Salmon 

With a few simple ingredients and less than 30 minutes, this Pistachio Crusted Salmon is both an easy and quick option for a weeknight dinner and also an elegant main for a dinner party.

Pistachio Crusted Salmon

salmon fillet, pin bones removed (approx. 1300 grams)

garlic

salt and pepper (to taste)

lemon, cut into wedges (to serve with cooked salmon)

Place a rack in the middle of your oven and preheat it to 375F. Line baking sheet with parchment paper.

Pat the salmon dry. And rub flesh with olive oil.

In a small bowl, combine minced garlic cloves and honey, spread over salmon.

Season with salt and pepper.

Press chopped pistachios onto salmon flesh.

Bake in oven until flesh flakes easily about 15 minutes.

Remove from oven and let rest for 5 min. before serving.

Pistachio-crusted salmon is a gourmet dinner without the gourmet skills! Prepare this with a handful of ingredients in less than 20 minutes!

Pistachio-Crusted Salmon

tablespoon honey

1/3 cup pistachios, coarsely chopped

Rinse salmon and pat dry. Place salmon on a lined baking sheet. Season with salt and pepper to taste. Place salmon on a parchment-lined quarter sheet baking pan.

In a small bowl, combine garlic, olive oil, mustard, lemon juice, and honey. Spread 3/4 of the mixture evenly over the salmon.

Add pistachios to the remaining mixture and stir to combine. Spoon the pistachio mixture on top of the salmon and press lightly into salmon using the back of a spoon.

Bake for 15-20 minutes until salmon is flaky. Remove from oven and let rest for 5 minutes before serving.

Loved this and added a quick broil after 15 minutes, got the top nice and golden. Mega yum.

This pistachio crusted salmon might seem like a fancy salmon recipe but you will be surprised how EASY it is to make! The salmon crust is perfectly complimented by the sweet and savory maple Dijon glaze.

oz Salmon Filets (Skin-On) (2 - 8 oz filets)

Roasted/SaltedPistachios (Skinless filet add 1/8 cup extra to coat)

Dijon Mustard

tsp Maple Syrup

Preheat oven to 350 degrees.

Pulse pistachios in food processor. You don’t want whole chunks but you don’t wantmeal (like powder) – about in the middle. You want it to stick to the salmonbut still have good crunch.

Mix course ground Dijon and maple syrup. Add salt and pepper to taste. If you like it alittle sweeter you can add more maple syrup.

Coat the salmon top, bottom and sides with your Dijon maple mixture.

Place pistachios on plate or wide bottom bowl.

Gently place salmon on top of pistachio mixture (top down). Push gently so that thepistachio mixture sticks to the salmon. Coat sides of salmon by hand or gentlyturn to press sides down.

Place salmon in a Pyrex baking dish or on an over pan.

Pre-heat oven on 350 degrees. Bake for 20-25 minutes.

Let rest five (5) minutes.

NOTES: my salmon fillets were about 6 oz each, but you can also use four 4 oz portions. If you're using a large piece of salmon, be sure to double the ingredients if it's over 1.5 lbs
