DIY Popeyes Buttermilk Fried Chicken Sandwich

boneless (skinless chicken breasts)

buttermilk

EACH paprika (garlic powder, black pepper, salt)

flour

corn starch

EACH paprika (garlic powder, onion powder, cayenne pepper (for spicy))

EACH salt & pepper

mayo

hot sauce

paprika (or cajun or taco seasoning)

garlic powder

brioche buns

Mayonnaise

Sliced pickles

canola oil (for frying)

Pound chicken breasts in between two pieces of parchment paper or plastic wrap. Cut each chicken breast in half crosswise to make 2 small pieces of chicken about the same size as the bun (see video below).&nbsp;

In a large bowl, buttermilk, paprika, garlic powder, salt &amp; black pepper. Add the chicken to the mix and place in the fridge to marinate up to 24 hours or use right away.&nbsp;

To Marinate Chicken

Heat oil in a large heavy-duty skillet or pot on medium temperature or until the temperature reaches 350F.

In a medium shallow bowl, whisk the flour, cornstarch, and spices. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it through with a fork.Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. Transfer chicken to hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden and the internal temperature reaches 165F.&nbsp;

To Cook Chicken

Melt 1 tablespoon butter in a large saucepan and toast buns face down until golden and crisp.  Whisk all the ingredients for the mayo in a small bowl and spread a generous layer of mayo on each bun. Top with pickles and chicken. Enjoy hot!&nbsp;

Popeyes Chicken Sandwich

For best results, use Popeye's chicken nuggets or popcorn shrimp. Other brands will work if necessary.

Popeye Tso's Chicken (General Tso's Chicken Made with Popeye's Chicken Nuggets) Recipe

chicken stock

Combine stock, soy sauce, vinegar, hoisin, chili paste, sesame oil, sugar, and cornstarch in a small bowl and mix with a fork until blended and smooth.

Heat oil in a large wok over high heat until smoking. Add garlic and ginger and stir fry until fragrant, about 15 seconds. Immediately add whole chilies and chicken nuggets and toss to combine. Add sauce and simmer, stirring constantly, until thickened into a thick glossy glaze. Transfer contents immediately to a hot plate and serve with steamed rice.

Preheat oven to 450ºF.

Cut sour cream into biscuit mix, add 7-Up. Makes a very soft dough.

Sprinkle additional biscuit mix on board or table and pat dough out into a 9-inch square.

Using a 3-inch biscuit cutter, cut dough into 9 biscuits.

Melt 1/4 cup butter in a 9-inch square pan.

Place cut biscuits in pan and bake for 12-15 minutes or until golden brown.

Brush baked biscuits with melted butter, if desired.

Popeyes chicken tenders are crispy, spicy, and flavorful.  Marinating the chicken with buttermilk and hot sauce brings out fabulous flavors. Coating with dry rubs will result in a colorful and spicy layer.

Popeyes Chicken Tenders Recipe

½ kg Chicken Breast

Buttermilk

Hot Sauce

Canola Oil

Eggs

Flour

Smoked Paprika

Garlic Powder

Salt

Marinade the chicken strips with wet elements like buttermilk, eggs, and hot sauce. Keep it aside for 30 minutes.

After 30 minutes, dredge the chicken strips with flour and spice mixture.

Put the coated chicken strips in the preheated oil.

Without crowding the pan, fry the batches separately until they are golden.

Remove the chicken tenders to a paper towel. This will help you get rid of excess oil.

Serve with the sauce and enjoy!

Start the rice. I’m using Uncle Bens Converted White Rice. Boil 1.5 cups water, 1/2 cup rice, 1 Tbsp butter. Once boiling, turn heat to low for 20 minutes. 

Pour 2 cans of beans (juice and all) into a large saucepan. Add water, onion powder, garlic powder, hot sauce, salt, liquid smoke and bacon fat.

Use a potato masher partially mash the beans and ingredients together. Don’t mash them all – you still want some chunks of bean.

Cook slowly over medium heat until thick and water is evaporated – about 15 minutes. Stir frequently so beans don’t stick.

When rice is done, remove from heat and let sit for five minutes to fluff up and absorb remaining water.

Once the beans and rice are done cooking, remove them both from the heat.

To stay authentic to Popeyes, serve the rice over the bean mixture

Peanut Oil (for frying)

Place cut-up chicken in a large bowl.

Cover with buttermilk.

Cover and chill for 2 hours or overnight. This is an optional (but recommended) step.

In a large bowl, add eggs, water and red pepper sauce. Whisk until combined.

In a large gallon freezer bag, mix flour, pepper, paprika and cayenne.

Remove chicken from buttermilk (if marinated) and sprinkle lightly with salt, pepper and garlic powder.

Place all chicken pieces in freezer bag with flour mixture. Shake until all pieces are evenly coated.

Remove chicken pieces one at a time, shaking excess flour.

Dip each piece in the egg mixture and return to bag of flour.

After all pieces of been dipped in the egg mixture and put back in the bag, give it a second shake to coat chicken pieces again.

Heat oil in deep fryer or deep pan to 350°F.

Working in batches, drop each piece of chicken into the hot oil.

Fry for 15 - 18 minutes, or until golden brown, turning occasionally if oil does not completely cover chicken. Keep in mind that dark meat chicken takes longer to cook than white meat. Watch your wing segments, as well. These will finish cooking first.

Popeyes Cajun Gravy Recipe

Butter (divided use)

Onions (chopped fine)

Celery (chopped fine)

Garlic (minced)

Red Bell Peppers (cored, seeded and chopped fine)

Bacon Grease

Cumin

White Pepper

Oregano

Thyme

Veal Stock

Worcestershire Sauce

Tabasco Sauce,

Add 1 tablespoon butter to a large skillet. Place over medium heat.

When butter has melted and is hot (do not burn), add diced onions, celery, garlic and red bell peppers. Sauté 2 - 3 minutes, until fragrant. Remove the sautéed veggies from the skillet to a bowl and set aside.

Return pan to heat (do not clean).

To the same skillet, add 1 tablespoon butter, flour and bacon grease. Allow butter and grease to melt. Cook, stirring constantly, until mixture has a thickened, brown texture.

Add sautéed veggies back into the pan. Stir well and cook for an additional 2 - 3 minutes.

Add cumin, paprika, cayenne pepper, garlic powder, celery salt, white pepper, oregano and thyme. Bring the mixture to a boil. Cook, stirring, until the gravy starts to thicken.

Reduce heat to a simmer.

Add cooked ground beef, veal stock, Worcestershire sauce and Tabasco sauce. Cook until thickened to desired consistency.

Serve hot.

Popeyes Fried Chicken Po' Boy Recipe

Chicken-

eggs

pepper

paprika

cayenne pepper

2lbs boneless skinless chicken breasts

oil (for frying)

Other-

sub rolls

olive oil (for spreading)

iceberg lettuce

pickles (sliced)

mayonnaise

Place chicken strips into a large bowl and pour the buttermilk over the top of the chicken. Cover and refrigerate for 2 hours.

In a large bowl mix together eggs, water, and hot sauce. In a gallon freezer bag combine flour, pepper, salt, paprika, garlic powder, and cayenne pepper. Mix well.

Remove the chicken from the buttermilk and place into the freezer bag, seal and shake until evenly coated. Remove the chicken from the bag and dip each chicken strip into the egg mixture and then put back into the freezer bag. Seal and shake again.

Heat oil in a deep fryer to 350 degrees F. Fry chicken in batches for about 5-7 minutes or until golden brown and fully cooked (the internal temperature has reached 165 degrees F.), turning as needed. Drain on a plate lined with paper towels.

Cut the loaf of French bread in half lengthwise. Lightly brush olive oil onto the cut sides of the French bread. Place cut side up onto a baking sheet. Place into the oven and broil, 5-6 inches from the heat for 1-2 minutes or until golden brown on top. Remove from the oven.

Spread mayonnaise onto the top and bottom of the toasted side of the bun. Top the bottom half with sliced pickles, cooked strips, and shredded lettuce.

Thanks for the recipe! Popeyes’ spicy chicken po’ boy has always been my favorite fast food chicken sandwich, and I was very upset when they removed it from their menu when they introduced the new sandwiches. I’m not sure why they had to replace them rather than just add another option. I tried the new sandwich once, and never will get it again. It was just a generic fast food chicken sandwich, same as any chicken sandwich at any fast food place. The po’ boy tasted so much better and was more unique. I am going to be making these at home weekly from now on! Thanks!
