This is a simple casserole that everyone in my family LOVES!  Layers of tender potatoes, tender pork chops and zesty apple sauerkraut!

Pork and Sauerkraut Bake

potatoes

butter (melted)

garlic powder

pork chops (1″ thick (see notes below))

sauerkraut (drained)

brown sugar

onion (thinly sliced)

apple

caraway seeds (optional)

Preheat oven to 350°F.

Place potatoes and butter in a 9×13 pan. Toss with garlic powder and salt &amp; black pepper to taste.

Season pork chops with salt and pepper.  Brown over medium high heat, about 3 minutes each side.

Meanwhile, combine sauerkraut, brown sugar, onion, granny smith apple and caraway seeds in a bowl.

Place ½ of the sauerkraut mixture over the potatoes. Top with browned pork chops and finally remaining sauerkraut mixture. Cover tightly with foil.

Reduce oven to 325°F and bake for 2 hours.  Uncover and bake an additional 15-30 minutes or until fork-tender. Serve warm with applesauce.

Slow Cooked Pork Hocks

pork hocks (total weight of

large onion (about 150 g/ 5.3 oz)

apple (about 200 g/ 7 oz)

lard oil

sugar

sauerkraut (800 g/ 28 oz (Note 1))

bay leaves

caraway seeds

black peppercorns

cloves

beef or chicken stock (Note 2)

fine sea salt and ground black pepper

Chop

Chop the onions and the apple but keep them separated.

Cook

Cook on stove: Heat the lard or oil in a large heavy-bottomed pan. Cook the onions on medium-low heat for about 3 minutes. Add the apple and continue cooking for 2 minutes.

Caramelize

Caramelize: Sprinkle the sugar on top and let caramelize slightly for about 2 minutes.

Combine

Combine: Add sauerkraut, salt, bay leaves, caraways seeds, peppercorns, and cloves. Mix well. Transfer everything to the slow cooker. Add stock and mix.

Rub the pork hocks with salt and pepper. Nestle them on top of the sauerkraut.

Cook on high for 7-9 hours, turning the hocks halfway through. (Note 3 and 4).

Serve

Serve with boiled potatoes, German bread, or potato dumplings.

Preheat oven to 300℉

Place large frying pan or indoor grill over med/high- high heat. Add oil and bring pan up to a full heat. (see tips above for testing heat of pan). Sprinkle ribs with black pepper and place fattiest aside down onto pan. Sear all sides until golden brown.

Place seared meat into dutch oven and top with sauerkraut. Cover dutch oven with lid and bake for 3-3 1/2 hours.

Slow Cooker Pork Roast and Sauerkraut

Salt and Pepper

Sprinkle pork roast with salt and pepper and place in crock pot. (Cut to fit pot if roast is too big)  In a large bowl, mix the rest of the ingredients together with a spoon.

Pour the mixture over the roast.   Cook on high for 4 hours or low for 8 hours until meat is cooked and tender.  Remove roast and pull apart.  Enjoy!

I made this recipe for New Years Day and I have to say it is fantastic!! This is my recipe from now on. Love it! Such a great taste.

It is in the crockpot now. A little different from how I usually make it but wanted a little change. I will however add red potatoes for the last couple of hours. We have never tried mashed potatoes with it.
