Cheesy and delicious these Oven Baked Cheesy Potatoes are the perfect side dish to any meal!

Oven Baked Cheesy Potatoes

Red Potatoes (chopped)

coconut oil

garlic

parsley

salt

pepper

mozzarella (shredded)

Preheat oven to 400 degrees. Spray a baking pan lightly with cooking spray.

Chop the potatoes in 1/2" to 3/4" chunks. Use a paper towel to dry them slightly, then place the potatoes in a bowl.

Mix the potatoes with the coconut oil and seasonings.

Arrange the potatoes in a single layer on the baking sheet so the potatoes can cook evenly.

Bake for 25 minutes, stirring one or two times during baking,until desired brownness is achieved. If you'd like potatoes crispy, place them under the broiler for 2-4 minutes. WATCH THEM CLOSELY!

Cover potatoes with shredded cheese and place back into the hot oven for 3-4 minutes or until the cheese is melted.

Serve and enjoy!

Cheesy and delicious these Oven Baked Cheesy Potatoes are quick, easy and are the absolute perfect side dish to any meal!

WHAT POTATOES ARE BEST FOR ROASTING?
For diced roasted potatoes, we like to use red potatoes. They have a waxy texture and hold their shape well during cooking. Yukon gold potatoes are our second choice.
WHAT IS THE BEST OIL TO USE FOR ROAST POTATOES?
We prefer to use coconut oil.  Don’t like the taste of coconut oil? Go for refined coconut oil instead of virgin coconut oil. Both great for cooking, but refined has little to no taste of coconut. 🙂 You can also use canola oil.
Ingredients
3 Red Potatoes chopped
1 tablespoon coconut oil
1 teaspoon granulated garlic
1 teaspoon parsley
1/2 teaspoon salt

How to Make OVEN BAKED CHEESY POTATOES {Recipe Video}

This is a mouth watering, spicy and flavorful Indian appetizer or snack recipe prepared using potatoes and aromatic spices.

TANDOORI POTATOES (TANDOORI ALOO / OVEN ROASTED POTATOES)

Potatoes

Yogurt

Green chilies

Garlic

inch Ginger grated

tsp Red chile powder

tsp Dried mint leaves

tsp Turmeric powder

tsp Chat Masala

tsp Tandoori Masala powder

Onion chopped lengthwise

Salt

Chickpea flour

Vegetable oil, to drizzle while cooking

Peel the skin of potatoes and cut them into cubes. Wash them and microwave for 5 minutes. You can even boil them till its partially cooked.

Step I

In a pan add 1/4 cup of chickpea flour and saute till the raw smell goes off.

Step II

In bowl, add all the ingredients mentioned in the list except the onion and vegetable oil and mix well. Add the boiled potatoes to it and mix again so that the potatoes are coated well in the masala. You can bake this immediately or keep this aside for 30 minutes or refrigerate overnight and bake the next day.

Step III

Preheat the oven to 375 degree F.

In a baking tray grease oil and spread some onion that is chopped. Place the marinated potatoes, remaining onions and drizzle oil and bake for about 20 to 25 minutes or until its done.

You can drizzle oil again if required in another 10 minutes and flip the potatoes. (This step is optional)

Tandoori Potatoes are now ready. Serve hot with your favorite chutney, tomato ketchup and enjoy. You can also squeeze in some lemon juice just before serving.

Step IV

Three key ingredients make up these rich and creamy mashed potatoes. You'll never make mashed potatoes another way again. Great for the slow cooker, too!

Rich and Creamy Mashed Potatoes

potatoes

cream cheese (softened)

butter

heavy whipping cream

Place the cut potatoes in a large pot and fill the pot with water, leaving about 2 inches at the top of the pan.

Place the pan on the stovetop on medium-high heat.

Allow the water to come to a boil, then turn the water down to medium heat.

Boil the potatoes for 10-15 minutes, or until the potatoes are soft.

Drain the water from the potatoes.

Put potatoes through a food mill or potato ricer for the fluffiest texture.

Add the cream cheese, butter, whipping cream and salt.

Gently fold the potatoes using a rubber spatula until they are smooth and creamy. Be careful not to mix too hard because want to keep the potato fluffiness that ricing the potatoes give.

Serve warm.

Rich & Creamy Mashed Potatoes

Tips on the basic recipe for how to make old fashioned scalloped potatoes from scratch. Add onions, ham, cheese, mushrooms, or whatever you'd like to this versatile potato side dish.

Scalloped Potatoes Recipe

all-purpose flour

half and half creamer ((or whole milk))

black pepper

onion

freshly snipped parsley

Melt the butter in a saucepan over medium heat.

Add the flour and whisk until combined.

Slowly stir in 1 cup of cream (or milk) and whisk until smooth.

Stir in the remaining cream, salt and pepper. Whisk constantly until the mixture starts to thicken. This will take 3-5 minutes.

Remove the white sauce from the stove.

Preheat the oven to 400 degrees Fahrenheit.

Spray a 9x13 pan with cooking spray.

Place half of the potatoes in the greased pan. Cover them with the onions and half of the sauce.

Place the remaining potatoes in the pan and then pour the remaining sauce overtop.

Cover the pan with foil and bake for 40 minutes.

Uncover the pan and bake for an additional 15-20 minutes or until the top of the potatoes are lightly browned and the potatoes are tender. The exact timing will depend on how thick you have cut the potatoes.

Top with fresh parsley, if desired. Serve warm.

Scalloped Potatoes

Fresh sprigs of sage, rosemary and thyme flavor the homemade cream sauce for theses potatoes au gratin. This comforting cheesy potatoes casserole is perfect with ham, turkey or roast beef.

Sage Rosemary Thyme Potatoes Au Gratin

potatoes (about 4 large and long russets)

salted butter

flour

nutmeg

garlic powder

onion powder

sage

½ cups half and half

fresh rosemary ((about 1 teaspoon dried rosemary))

fresh thyme ((about 3/4 teaspoon dried ground thyme))

cheddar cheese

mozzarella cheese

Preheat oven to 375 degrees Fahrenheit.

Grease a 9x13 casserole pan and set to the side.

In a large pan over medium high heat melt butter.

&nbsp;Once butter has melted add in flour and cook while stirring for a minute or two.

&nbsp;Gently add in half and half, slowly, mixing while adding to ensure there are no lumps.

&nbsp;Once half and half has been added and it's smooth, lower heat to medium and add in remaining seasonings and fresh herbs. Stir together and allow fresh herbs to infuse for 2-3 minutes.

After 2-3 minutes, remove pan from heat and remove fresh herbs. Taste and add more seasonings if desired.

Spray the bottom of a 9x13 pan with cooking spray.&nbsp;

Add in a layer of potatoes, one at a time to cover the bottom on the pan.&nbsp;

Pour half of the cream mixture over the potatoes

. Do another final layer of potatoes and cover with the remaining cream mixture.

Cover pan with aluminum foil and bake for 45 minutes.After 45 minutes, remove the foil and top potatoes with cheeses.

Return to the oven and bake an additional 15 minutes or until cheese has melted and starts to lightly brown on edges.
