Healthy Pumpkin Waffles

all-purpose flour

whole wheat flour

baking powder

salt

cinnamon

ginger

nutmeg

eggs

milk

pumpkin puree’ (canned -- make sure it's

canola oil

pecans (toasted and chopped)

Brush the waffle iron lightly with oil and preheat it.

Into a large mixing bowl, sift the flour, baking powder, salt, cinnamon, ginger and nutmeg.

In a separate bowl, whisk together the eggs, milk, pumpkin and oil.

Stir the pumpkin mixture into the dry ingredients and mix well.

Stir in the nuts, if using.

Spread two large scoops (or about 3/4 cup)of batter onto the waffle maker and bake until done, usually 3 to 5 minutes, depending your waffle maker.

If you prefer, you can also add chopped nuts on top of cooked waffles instead of including in the batter.

To serve, top with syrup or whip cream.

Pumpkin Waffles

pumpkin puree

eggs (room temperature, separated)

sugar

vanilla extract

butter (melted)

Separate your eggs into 2 different bowls. Add 1/2 teaspoon cream of tartar to the egg whites and beat them using a hand mixer until stiff peaks form. Set aside.

In a large bowl, combine all of the dry ingredients with a spoon. Add the egg yolks, vanilla, melted butter, pumpkin and buttermilk and combine. Gently fold in the whipped egg whites with a rubber spatula.

Cook the waffles in your waffle iron according to the manufacturer's instructions. Serve with warm maple syrup and a sprinkle of cinnamon.

Vegan Pumpkin Waffles

½ tablespoons water (warm)

flax seeds

vanilla Plant Folk creamer

pumpkin

all-purpose flour (whole wheat will work)

brown sugar

Turn on your waffle iron.

In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.

In a medium bowl, whisk together the Plant Folk creamer, pureed pumpkin, and vanilla extract. Set aside.

In a large bowl, whisk together the flour, both sugars, baking powder, salt, and pumpkin spice.

Create a well in the center of the dry ingredients and pour in the milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.

Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.

Crispy Pumpkin Waffles taste like fall. They are super crispy on the outside and soft on the inside. The warm seasonal spices accentuate the pumpkin flavor!

Crispy Pumpkin Waffles

cornstarch

In a large bowl, whisk together the dry ingredients: flour, cornstarch, pumpkin pie spice, salt, baking powder, baking soda and salt.

To Make the Dry Mix:

In a large measuring cup, measure out the buttermilk. Whisk in the pumpkin puree, oil, melted butter and vanilla. Pour the wet ingredients into the dry ingredients and mix until barely combined. Set aside.

In another bowl, using a hand-mixer, beat the egg whites until foamy. Add the sugar and continue beating until stiff, glossy peaks form. Fold the egg whites into the batter until just combined.

Cook the batter according to your waffle iron’s instructions. I cooked mine for about 3 minutes. Repeat until you’ve worked your way through the batter. Serve with maple syrup and butter.
