Biff med rå thaisalat

stk. grønn squash

stk. gulrot

0,25 stk. hodekål

stk. rosa grapefrukt

stk. vårløk

revet skall av 1 stk. lime

0,25 potte grovhakket frisk koriander

pakke bønnespirer (á 200 g)

cm revet frisk ingefær

båt revet hvitløk

600 g ytrefilet av storfe

0,25 ts pepper

ss margarin eller olje til steking

saft av 1 stk. lime

Skjær squash og gulrot i tynne strimler med hjelp av et juliennejern. Ha strimlene i en bolle. Snitt kål i tynne strimler ved hjelp av en kniv eller ostehøvel.

Skjær topp og bunn av grapefrukten. Skjær av resten av skallet slik at du fjerner den hvite hinnen. Legg grapefrukten i den ene hånda og skjær ut skinnfrie fileter ved å skjære tett inntil hinnene mens du snur på grapefrukten i hånda. Ha filetene i bollen med grønnsaker.

Skjær vårløk i tynne strimler på skrå, og ha det i bollen med de andre grønnsakene. Ha også revet limeskall, grovhakket koriander og bønnespirer i bollen og bland alt godt sammen.

Bland sammen dressingen og sett den til side mens du steker biffene.

Krydre biffene med salt og pepper. Smelt margarin eller olje i en varm stekepanne. Når det slutter å bruse og margarinen er nøttebrun, legger du i biffene. Stek dem til det begynner å piple kjøttsaft på oversiden, 2-3 minutter. Snu biffene og stek dem videre til rosa kjøttsaft pipler frem, ca. 2 minutter. Da er biffene medium stekt. Ta dem ut av stekepannen og la dem hvile et par minutter på en skjærefjøl.

Hell dressingen over grønnsakene i bollen rett før servering og bland alt godt sammen.

SLIK GJØR DU:

1. Romtemperer biffen i 30 min. 
2. Krydre med salt og pepper. 
3. Ha margarin i varm stekepanne. Når margarinen slutter å bruse er det klart for å legge i biffen. 
4. Stek 2-3 min på en side, til kjøttsaften pipler ut. Snu biffen og stek 2-3 minutter. Biffen er nå medium stekt. 

Server biffen med en deilig frisk salat, eller med grønnsaker og poteter.

Hvordan steke en perfekt biff på 1-2-3 | MatPrat

Raw lamington slice

raw cashews

g desiccated coconut

g virgin coconut oil

g maple syrup

vanilla bean paste

g chocolate

Line a square baking tin (20 cm) with baking paper and set aside.

Place cashews, coconut, coconut oil, syrup and vanilla into mixing bowl and chop 15 sec/speed 8.

Scrape down sides of mixing bowl with spatula and blend 15 sec/speed 8. Transfer into prepared baking tin. Using damp hands, press mixture evenly into base of tin. Place into freezer for approx. 20 minutes to firm.

Place chocolate into mixing bowl and grate 10 sec/speed 9.

Scrape down sides of mixing bowl with spatula and melt 3 min/50°C/speed 2.

Pour chocolate over set base and spread out quickly and evenly. Sprinkle with extra coconut, then place into refrigerator for a minimum of 30 minutes, until firm. Cut into squares (makes approx. 20), then serve.

Fermented beetroot and apple salsa

g fresh chillies

garlic

parsley

apples

130 g raw beetroot

tomatoes

coriander seeds

cumin seeds

oregano

lime juice

½ tbsp salt

70 g filtered water

water

Place chillies, garlic and parsley into mixing bowl and chop 3 sec/speed 7.

Add apples and beetroot and chop 3 sec/speed 5.

Add all remaining ingredients and mix 5 sec//speed 3. Transfer into a sealable sterilised glass jar (approx. 1.5L). Press down lightly with a wooden pounder or meat hammer and add more water if necessary so that the salsa is just covered with water. The top of the salsa should be at least 2 cm below the top of the jar. Cover tightly with lid and store at room temperature for 3 days, then transfer into the refrigerator. Do not open jar during 3 days of fermentation (see Tips). Serve as an accompaniment to meat and vegetable dishes.

lime

pitted dates soaked

salt (Tanya uses Himalayan salt)

cashew nuts

lime juice (juice of about 8 limes)

½ ripe avocados

mango

coconut oil

agave nectar

Whizz all the crust ingredients in a food processor with an S-blade. Transfer the mixture to a 23cm loose-based tart tin. Using your fist, press the mixture evenly into the base and sides of the tin.

To prepare the filling, blend all the ingredients in a high-speed blender on a high-speed setting, or pulse in a basic blender until smooth and creamy.

Pour the filling onto the crust and shake the tin a little to even it out. Chill for a minimum of 3 hrs to set. Decorate with the lime zest and slices, if you like. Will keep in the freezer for up to 2 months. Defrosted in the fridge, it will keep for 1 week.

Gravlax de saumon

600 g de saumon (coeur de filet)

d'aneth

graines de Dill et de coriandre ou poivre de Sichuan

200 g de gros sel

200 g de sucre

mélange de poivre noir, coriandre et baies roses

Commencer par préparer les ingrédients et le matériel. Écaillez la peau du saumon et rincer à l'eau claire.

Théoriquement le coeur de filet de saumon est épais et ne présente pas ou peu d'arêtes. Vérifier, on ne sait jamais et ôter les arêtes du filet de saumon si besoin.

Mélangez à parts égales gros sel et sucre.

Ajoutez les épices et l'aneth grossièrement coupée.

Posez quelques tiges d'aneth sur le coté chair du saumon.

Placez le filet côté chair directement sur le mélange en veillant à ce que les côtés soient aussi au contact.

Posez une 2ème plaque sur le poisson avec un poids quelconque (ici des boites de conserve) pour maintenir le filet bien plaqué dans le mélange.

Oubliez le filet de saumon au froid positif pendant 24h00. L'idéal est le dessus du bac à légumes de votre réfrigérateur.

Le lendemain, extraire le filet du mélange, ôtez les tiges d'aneth et rincez sous l'eau claire sans tremper puis éponger avec du papier absorbant.

Poivrez, épicez, selon vos goûts. Ici poivre 5 baies et aneth ciselé. A ce stade vous pouvez le consommer tout de suite ou le laisser sécher à l'air, protégé d'un torchon, au froid pendant une semaine.

Tranchez fin juste avant le service et servez tel quel avec citron ou marinade citron / huile. Pour ma part, je l'ai servi nature sur pain de seigle beurré avec une goutte de citron.

Place ingredients in a high-speed blender and blend on high until smooth dressing forms.

Clarifier les œufs (séparez les jaunes des blancs).

Line a baking tray (20 x 30 cm) with baking paper and set aside.

Place rosemary into mixing bowl and mill 1 min/speed 8.

Add salt and chop 2 sec/speed 7. Transfer rosemary salt onto prepared baking tray and spread evenly, then leave salt to dry out overnight. Transfer salt into a sealable jar or container to store or wrap with festive ribbon ready to gift to friends and family.

Vanilla protein balls

150 g roasted unsalted cashew nuts

peanut butter

60 g LSA

g blueberries

70 g natural vanilla protein powder

Place cashews into mixing bowl and blend 10 sec/speed 6 or until finely chopped.

Add peanut butter, LSA, dried blueberries, protein powder and coconut and blend 10 sec/speed 6, until finely chopped.

Add water and blend 1 min 30 sec/speed 8 or until mixture is well combined and sticks together (if needed, blend with aid of spatula).

Place extra LSA and extra coconut onto separate small plates. Roll 1 tablespoon of mixture into a ball, then roll in extra LSA or coconut (or a mixture of both) to coat. Repeat with remaining mixture (makes approx. 24 balls). Serve immediately or transfer into a sealable container and place into refrigerator until ready to serve.

Macadamia protein balls with coconut butter

250 g desiccated coconut

macadamia nuts

g chia seeds

160 g pitted Medjool dates

½ tsp natural vanilla extract

Place coconut into mixing bowl and blend 30 sec/speed 8.

Scrape down sides of mixing bowl with spatula then blend for a further 15 sec/speed 8.

Add coconut oil and blend 30 sec/speed 7, until a thick liquid forms. Transfer coconut butter into a sealable container and store in a cool, dark place until ready to use. Clean and dry mixing bowl.

Place macadamias and chia seeds into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula.

Add dates, vanilla extract and 50 g of the reserved coconut butter and combine 15 sec/speed 9.

Form mixture into small balls (approx. 24), then roll in desiccated coconut or chia seeds to coat. Place into refrigerator for 30 minutes to set. Serve immediately or transfer to a sealable container and store in refrigerator until ready to serve.
