These red velvet pancakes are made with a secret ingredient… beetroot! It's a great way to sneak some fiber and minerals into your stack of pancakes, not to mention the beautiful vibrant red color without using food coloring. Great for Valentine's Day breakfast or even just on those mornings when you are feeling a little extra!

Healthy Red Velvet Pancakes

oats

tsp baking powder

beetroots

tbsp cacao powder

tsp vanilla extract

maple syrup

stevia

Process rolled oats in a food processor or blender into a fine flour. Pour into a big mixing bowl.

Add baking powder to mixing bowl and mix well.

Add the rest of the ingredients into blender and blend until smooth. Add mixture to mixing bowl and mix well until no lumps of flour remains.

Heat up a non-stick frying pan over low heat. Add a ladle of batter and cook for 2-3 minutes, flip, and cook the other side for 2-3 minutes. Repeat until all batter is used up.

These Red Velvet Pancakes are a fun and tasty breakfast recipe that are paired with a delicious cream cheese fluff that sets them over the top and make them absolutely delicious!

Red Velvet Pancakes

original Bisquick mix

sugar

cocoa powder

milk

eggs

red gel food coloring

cream cheese (softened)

marshmallow fluff

First, make the frosting by placing the cream cheese in a medium-sized bowl. Using an electric hand mixer, cream until smooth. Add the marshmallow fluff and mix to combine, set aside.

In a medium bowl, whisk together the Bisquick mix, sugar, and cocoa powder.

In a separate small bowl, whisk together the milk and eggs.

Add the wet mixture to the dry and mix it in until there are no lumps.

Add in food coloring to your desired red shade.

Heat a nonstick skillet over medium heat. Spray with cooking spray.

Pour slightly less than ¼ cup of batter onto the hot greased skillet. When bubbles start forming on top of the pancake and the edges are dry, flip it over about 2-3 minutes. Continue cooking until the other side is a slight golden brown, about another 2 minutes.

Place on a plate until all pancakes are done. Serve with cream cheese fluff, enjoy!
