Garlicky Oven Roasted Mushrooms

lb Button Mushrooms (wiped clean, stems trimmed or removed)

Tbsp Extra Virgin Olive Oil

Garlic (minced)

Tbsp fresh Chives (thinly sliced)

Salt

Black Pepper

Garlic Powder

Preheat oven to 400°.

Place mushrooms in a mixing bowl; add olive oil, fresh garlic, fresh chives, salt, and pepper and toss to coat.

Scatter mushrooms on a baking sheet; dust with garlic powder.

Bake 10-12 minutes and serve warm.

Delicious! Made it as a last minute side dish to complement brisket and it was a hit! I used fig balsamic because that’s all I had and it worked just fine. Do not exceed the recommend amount of balsamic or it can get bitter. I raised them temp to 400 and gave it an extra 4-5 minutes in the oven. This was purely a personal preferences chewy. Otherwise It’s perfect as is. Easy. Impressive. Tasty!

Roasted Mushrooms with Balsamic and Soy

(1 kg) mushrooms

unsalted butter, (melted)

soy sauce

garlic, (minced

parsley, (chopped)

thyme, ((or rosemary))

brown sugar, ((omit

salt

black pepper, (to taste)

Preheat oven to 400°F (200°C).

Lightly grease a large baking sheet/pan with nonstick cooking oil spray.

Wipe mushrooms over with a damp sheet of paper towel to clean off dirt and debris.

In a large bowl, combine the mushrooms with the melted butter, oil, balsamic vinegar, soy sauce, garlic, parsley, thyme, brown sugar, salt and pepper. Toss to evenly coat.

Arrange mushrooms in a single layer on prepared baking sheet.

Roast in hot oven for 15-20 minutes, mixing them halfway through cooking, until tender.

Oven Risotto with Garlic Roasted Mushrooms and Arugula

dry white wine

Parmesan cheese

Mushroom Prep

Preheat oven to 350 degrees. Toss mushroom ingredients together on a rimmed baking sheet.

Risotto Prep

Heat olive oil in a Dutch oven over medium low heat. Add garlic and arborio rice. Saute until the garlic is smelling really yummy and the pan looks dry. Add wine; stir and let it sizzle out. Add 2 1/2 cups of the chicken stock. Bring to a simmer.

Risotto Part 1

Put a lid on the risotto pot. Transfer both pans to the oven (risotto on top, mushrooms on bottom). Bake for 14-15 minutes. Remove the risotto pot, but let the mushrooms keep roasting &#8211; increase to 400 degrees, and bake for another 5-8 minutes, until golden brown. Remove mushrooms from oven.

Risotto Part 2

Place risotto back over a medium low heat. Slowly add in remaining 1-or-so cups of broth, stirring between additions until nice and creamy. Stir in the Parmesan, butter, lemon zest, lemon juice, and salt. Taste. Taste again. SO SO GOOD.

Serve

Risotto, topped with mushrooms, topped with more Parm and lemon. Serve with a side salad and/or sprinkle with fresh parsley. You are totally at a restaurant right now.

Made this with riced cauliflower and reduced the broth to 1 cup. Very good! Thank you!

I would have rated this highly had it not been for inclusion of chicken broth. I have the ingredients to knock up a perfectly good vegan version.

Really? This isn’t a vegan food blog nor was this posted as a vegan recipe. A substitution for your dietary restrictions doesn’t merit a one-star rating. 🙄

Just made this for dinner, and it’s so delicious. Even my 5 year-old likes it. There was still a lot of liquid when I took it out of the oven. I just simmered it down before adding more liquid. If this is typical, it might be helpful to add that to the instructions for risotto neophytes. Thanks for another great recipe.

This was so good! I’ve never cooked risotto before (but have enjoyed it many times) and I was so happy with the outcome. I didn’t add the zest, only the juice of a whole lemon and it was a little lemon-strong for this lemon loving girl but next time I’ll just add the juice of half a lemon. The mushrooms were impeccable. Stirred them in and served it with grilled chicken and a balsamic dressed salad for an amazing date night at home. Thanks!

Here&#039;s a simple, incredibly delicious way to roast mushrooms: tossed in garlic butter then roasted on a high temp to make them golden brown on the outside whilst keeping them juicy on the inside. The addition of olive oil stops the butter from burning and also adds a touch of extra flavour - but the dominant flavour is still butter (and garlic!). The lemon and thyme finishing touch is optional - it&#039;s terrific plain - it&#039;s an extra flavour option.Serves 2 as a main, 4 - 5 as a side.

Garlic Butter Roasted Mushrooms

/ 1lb mushrooms (, button

/ 3 tbsp unsalted butter (, melted)

garlic (, finely minced)

salt and pepper

lemon juice

thyme leaves

Preheat oven to 220°C/450°F (200°F fan).

Toss mushrooms with butter, oil, garlic, salt and pepper in a large bowl using a rubber spatula.

Spread on a baking tray and roast for 25 minutes - do not toss or turn.

Remove from oven. If using lemon and thyme, push mushrooms together onto one side of the tray, drizzle with lemon, sprinkle with thyme and toss. Serve immediately!

(Video here for large mushrooms) Place mushrooms cap side down (ie stems facing up) in a medium baking dish (so they are kind of snug - they shrink).

Spoon 1 tsp of butter over each mushroom, then use the rest to brush the edges (or carefully drizzle over edges).

Drizzle over olive oil, sprinkle with salt and pepper.

Roast for 20 minutes (tender but still a slight firmness) or 25 minutes (tender) - no turning. There will be  juices in the pan and plenty pooled in the mushrooms caps.

Squeeze over a bit of lemon juice, sprinkle with thyme. Serve mushrooms, drizzled with pan juices (see notes for serving suggestions).

How to roast LARGE MUSHROOMS (eg portabello)

You won't be able to stop eating these roasted mushrooms! Meaty, tender and juicy, they'll make a mushroom lover out of anyone. 

Perfect Roasted Mushrooms

pound baby bella (aka cremini) mushrooms*

garlic powder

chopped fresh herbs (like chives

Preheat the oven to 450 degrees Fahrenheit. 

Clean the mushrooms and pat them dry. Slice the mushrooms in half. In a large bowl, toss them with the olive oil, garlic powder, and kosher salt. Line a baking sheet with parchment paper and spread the mushrooms in a single layer on top. 

Bake 10 to 12 minutes until the mushrooms are tender. Serve topped with fresh herbs.

Garlic butter: Place butter, garlic, salt and pepper in a heatproof jug. Microwave to melt butter, then stir.

Brush with butter: Brush the mushroom cap with butter (smooth side), then place on a tray gills side up (ie stalk facing up). Brush remaining butter onto the rims and gills, being sure to scrape up all the garlic in the jug.

Olive oil: Drizzle with olive oil.

Roast 25 minutes, then flip mushrooms. Brush with tay juices, roast a further 10 minutes or until the centre of the mushrooms are tender. {Meanwhile, cook onion, mix Sauce)

Top with cheese: Place a slice of cheese on each mushroom, return to oven for 3 minutes just to melt the cheese.

Toast buns: Place split buns in the oven at the same time - to lightly toast.

Spread base of bun with a dollop of Pink Sauce. Top with lettuce, then tomato, then mushroom, then onion. Spread lid with a lesser smear of Pink Sauce, then place on burger. Devour!

Assemble burgers

Mix together, use per recipe.

Pink Sauce

Heat oil in a large skillet over high heat. Cook onion for 5 to 7 minutes until tinged with gold and floppy. Season with a pinch of salt and pepper.

Balsamic roasted mushrooms are an easy side dish or appetizer, soaked in garlic, herbs, and tangy balsamic vinegar for maximum flavor.

Preheat the oven to 400ºF. Clean any dirt or debris from the mushrooms, then slice any large mushrooms in half (you can leave them whole if they are small).

Mince the garlic. In a small bowl combine the olive oil, balsamic vinegar, brown sugar, soy sauce, garlic, thyme, and pepper.

Place the mushrooms in a ceramic or glass baking dish (choose a size that keeps the mushrooms close together, mostly in a single layer). Pour the marinade over top and stir to coat the mushrooms.

Roast the mushrooms for about 45 minutes, stirring every 15 minutes. The mushrooms should release liquid as they roast, leaving liquid in the bottom of the dish until the last 15 minutes or so. If the dish dries up before the final 15 minutes, cover the dish with foil to prevent furhter evaporation or burning.

After 45 minutes of roasting, give them a final stir and then serve. (I garnished with chopped parsley for color, but this is not necessary for flavor.)

oz Mushrooms ((white or baby bellas), washed, and halved/quartered depending on size)

Preheat oven to 400 degrees F.

Once broccoli and mushrooms are chopped to the size you like, toss them with the minced garlic, oil, and salt.

Place on a lined baking sheet, and roast for 15-25 minutes, to desired level of doneness. Toss once or twice during the cooking process. Larger pieces will take longer to cook.

Serve immediately.

This creamy mushroom sauce is the perfect sauce to use with pretty much anything. It goes well with meats, potatoes or any vegetables.

Creamy Mushroom Sauce - Easy And Universal

400-500 ml cups stock/broth (beef

Finely chop the shallot and sautee in olive oil until translucent.

Add sliced mushrooms and sautee for 5 minutes.

Add broth or stock (or water + bouillon) and cook for 5 minutes. Once the mushroom start to lose volume, add heavy cream.

Cook for at least 30 minutes.

Season with salt and pepper. Add starch slurry to thicken the sauce up.

Give the sauce a taste test and add more salt or pepper if needed.

Done :)
