I ate it too fast to get a photo. I will be making this again for my picky husband too!!  I'm in LOVE with the GG sauce. I will try making the mayo next time. Gonna be making these ahead of time and freezing for meal prep.

I must have messed this up because the fat leaked out of the meatballs such that each one had a sort of “melted” look with a little caramelized halo around it. What did I mess up??

We were very impressed by this recipe.  The meatballs were amazing as was the GG dressing.  I didn't have fresh basil and oregano so I doubled the parsley in the GG and tossed some dried oregano in the meatballs and it was still fantastic. I imagine that with the fresh basil/oregano the dish is truly out of this world.

My husband is very difficult to please, and he really liked this when I made it by the recipe. However, I think he would like it more if there were less acidic ingredients in the butter, as he's usually not fond of mustard and lemon. Next time I will be omitting the lemon and Dijon and adding garlic (perhaps roasted garlic if I have the time) to the butter.

I made this with a couple modifications...instead of the dijon, chives, and lemon, I just added minced garlic, fresh parsley, salt, and pepper to the butter. Also, I aimed for medium rare and ended up with the steaks in the oven for about 14 minutes. Not sure if it was because it was a thick cut. What an AMAZING Christmas Eve dinner...my wife said it was the best steak I've ever made...and I've made a few steaks in my life! Great recipe!

Flat Iron Steak Is An A+ Date Night Meal

These Dulce de Leche Lava Cakes are a sweet dessert for you and a special someone to share. 

Dulce de Leche Lava Cakes

Cooking spray

c. dulce de leche

salted butter

sugar,

egg egg yolk

vanilla extract

c. all-purpose flour

Vanilla ice cream,

Preheat the oven to 425˚. Spray two 6-ounce ramekins generously with cooking spray and place on a baking sheet.

Microwave the dulce de leche and butter in a medium microwave-safe bowl until the butter is melted, about 1 minute. Whisk until smooth. Stir in the powdered sugar until well blended. Whisk in the egg and yolk, then add the vanilla. Stir in the flour. Divide the batter between the prepared ramekins.

Bake until the edges of the cakes are firm but the centers are still soft, 11 to 13 minutes. Let stand 1 minute, then run a butter knife around the edges of the cakes and invert onto individual plates while still warm. Sprinkle with powdered sugar and serve with ice cream.

Turned out delicious! I could not find pre-made dulce de leche so I purchased sweetened condensed milk and baked in a shallow dish covered with foil, set in a larger dish filled with water 1 inch up the sides. 425° F for about an hour then check on it. It darkens the longer you bake it, if cooked too long the lumps never come out (found this out the hard way!). Super rich and pairs great with a cold creamy side dish. I went with frozen yogurt to help out the nutritional outcome just a smidge. Enjoy!
