These delightful cookies, which are adapted from "Casablanca: My Moroccan Food” by Nargisse Benkabbou (Firefly, 2018), are like a cracked and cakey rose lukum, a gel-like candy often referred to as Turkish delight. Ghriba is a specific type of cookie that Moroccans bake all year long. Recipes vary depending on the region or the family, but they all have one thing in common: They are cracked on the outside and chewy on the inside. When it comes to ghriba, the flavoring possibilities are endless. The most popular varieties are almond, coconut and walnut.

Rose and Almond Ghriba

confectioners’ sugar,

unsalted butter, softened

Heat the oven to 350 degrees. Line a cookie sheet with parchment paper. Place confectioners’ sugar in a small bowl.

Place all of the remaining ingredients in a large bowl and use your hands or a large spatula to mix them together until you have a smooth and slightly sticky dough. Scoop the dough in heaping single tablespoonfuls (about 30 grams each) and roll each into a ball, then roll each ball in confectioners’ sugar until completely coated.

Transfer the coated dough balls to the lined cookie sheet and lightly press each with the palm of your hand, but don’t flatten them completely.

Immediately bake for 15 to 18 minutes until the cookies are cracked and firm on the outside. Remove from the oven and let the cookies cool on the cookie sheet for 10 minutes before transferring them to a wire rack to cool completely. Store the cookies in an airtight container to prevent them from drying out. They will keep for up to seven days.

How To Make Rose Water + DIY Rosewater Face Toner

Organic Roses (as many as you like-I used 7 stems)

Distilled water (enough

tbsp pure rosewater (recipe above)

water (or enough to fill your spray bottle)

Remove petals from stems and run them under luke-warm water to remove any leftover residue.

Add petals to a large pot and top with enough distilled water to just cover (no more or you&#8217;ll dilute your rosewater).

over medium-low heat bring the water to a simmer and cover.

Let simmer for 20-30 minutes or until petals have lost their color and are a pale pink.

Strain the mixture to separate the petals from the water.

Discard petals and place water in a glass jar to store.

For the Homemade Rosewater:

Combine all ingredients in spray bottle and shake.

To apply: spray directly on face or spray a cotton pad and wipe face to remove any residue.

Be transported to the streets of India thanks to Valli Little's spiced doughnuts. Dense, sugary and best of all delicious, this is the ultimate Sunday baking recipe.

Try a different take on blondies using pistachios, rose and white chocolate. Scatter with dried rose petals for a pretty finish, if you like

Pistachio, rose & white chocolate blondies

unsalted butter

light brown soft sugar

½-1 tbsp rosewater

plain flour

white chocolate chips

rose petals, to decorate (optional)

Heat oven to 180C/160C fan/gas 4 and butter and line a 20 x 20cm baking tin. Tip the pistachios into a pan and toast over a medium heat for 3-4 mins until aromatic, tossing occasionally so they don’t burn. Set aside.

Melt the chopped white chocolate and butter together, either in a bowl set over a pan of simmering water or in the microwave in short bursts. Leave to cool slightly, then beat in the brown sugar with a wooden spoon. Add the eggs, mixing well after each addition, then stir in the rosewater and ¼ tsp salt. Sieve in the flour and gently fold together.

Roughly chop the cooled pistachios, then add them to the blondie mix and fold in the white chocolate chips. Pour the mixture into the lined baking tin.

Bake for 35-40 mins until set and golden brown, then leave to cool completely before slicing. To serve, scatter with dried rose petals, if you like.

This decadent custard tart is topped with a rose-flavoured jelly and finished with rose petals and pistachio nuts for a crowd-pleasing dessert.

Pistachio Rose Muffins

all purpose flour

sugar

baking soda

buttermilk

butter (melted)

egg (beaten)

vanilla extract

rose petals ((optional))

pistachios (chopped (optional))

Preheat the oven to 350ºF. Line a 12 cup muffin tin with paper liners. Set aside.

Place 1/4 cup shelled pistachios in a food processor and grind until small and almost powdery. Watch carefully to prevent them from getting too sticky.

In a large bowl, whisk together flour, ground pistachios, sugar, baking powder, baking soda, cardamom, and salt.

Add buttermilk, rosewater, butter, egg, and vanilla extract and stir gently with a wooden spoon or rubber scraper until completely incorporated. The batter may still be a little lumpy, but you don’t want big dry lumps and you don’t want to overmix the batter.

Divide the batter evenly amongst the prepared muffin cups. Sprinkle the tops with dried rose petals, chopped pistachios, or any other topping you might want.

Bake 18-22 minutes or until the tops are firm and lightly browned, and a toothpick inserted in the center of one comes out clean. Allow to cool 10 minutes in the pan before removing to a wire rack to cool completely.
