Recipe video above. If you want crispy and deep golden instead instead of burnt, don&#039;t skimp on the fat. If you want ultimate flavour, use clarified butter or ghee instead of butter or oil - buy it, or make your own (it&#039;s super easy).And if you want ultra ultra crispy, make small thin ones instead - they are literally potato crisp crispy!This recipe would probably serve 6 normal people, but in my family it serves 4. Makes 1 giant rosti about 2cm / 4/5' thick, or 10 - 12 small rostis.

Crispy Potato Rosti

Peel then grate the potatoes using a box grater, trying to get nice long strands if you can.

Grab handfuls of potato and squeeze out excess liquid, then place in bowl. This helps make the potato crispier (otherwise all that water has to steam out in the pan).

Add butter, salt and pepper then toss. Don't worry if your potatoes go brown/reddy - it's still safe to eat, and turns white again when cooked.

Grate &amp; squeeze:

Melt half the clarified butter in a 26cm / 10.5' (or thereabouts) non-stick pan or skillet over medium low heat. Shallow non-stick pan with sloped sides is best for easy rosti removal.

Place the potato in pan, but do not pack down. Use rubber spatula to tidy the edges, then lightly pat down to even surface.

Cook first side: Cook 12 minutes until underside is very golden and crispy, lifting edge with rubber spatula to check. If by 8 minutes it is not going golden, increase heat.

TIP: Insurance policy - If you didn&#039;t use a non stick pan, slide the rubber spatular underneath all the way to the middle and run it around, to be 100% sure nothing is stuck before attempting flip.

Flip: Cover pan with a round wooden board with a handle (or anything similar with a handle, Note 3). Holding the handle of the board, flip quickly - and with confidence!

Cook second side: Melt remaining clarified butter in the pan, then slide the rosti back in and cook for 12 minutes until golden crispy, and there is no resistance when a knife is inserted into the middle.

Slide onto cutting board, cut into 4 or 6 wedges and serve immediately!

Cook

Use 25g / 1 1/2 tbsp clarified butter for each batch, medium heat in a non stick pan. Place potato in rounds in a skillet, around 8cm / 3' wide, 1.5 - 2cm / 2/3' thick (without patting down). Cook 5 minutes until deep golden and crispy, flip, and cook another 5 minutes until done.

Small rosti

Transfer to rack set over tray in a 120°C/250°F oven until ready to serve.

Vegan Smashed Potato and Sage Rösti

600 g medium floury potatoes (such as Maris Piper)

5-8 Tbsp olive oil (you might use more or less!)

Prepare

Cut any large potatoes in half, then boil or steam the potatoes until tender, around 15 mins

Drain the potatoes &amp; return to the pan. Put back on the hob for a minute or two to steam off any excess water.

Heat

In your large &amp; deep frying pan, add half the olive oil &amp; put on the stove hob to heat up.

Once the oil is hot, carefully add the potatoes.

Crush

Use a potato masher to gently crush the potatoes. You want them to all sort of squish into each other.

Drizzle

Drizzle over the rest of the oil &amp; add the sage leaves.

Season

Saute

Let the potatoes sizzle on a low-medium heat, occasionally squishing them down a little more.

The potatoes should be ready in around 10 minutes. The longer you leave them, the better the crust, but beware not to burn!

Serve

Serve as part of a roast dinner or with some lentil loaf! Also amazing with some gravy!

Epluchez et râpez les pommes de terre. Essorez-les au maximum et déposez-les dans un saladier. Ajoutez l’œuf, la farine. Salez et poivrez puis mélangez le tout.

Dans une petite poêle, faites chauffer l’huile et versez une louche de préparation à la pomme de terre. Laissez-les cuire 5 min sur cette face.

Retournez ensuite les galettes avec une assiette ou une spatule et poursuivez la cuisson pour 5 min sur l’autre face. Renouvelez l’opération avec le reste de pâte.

Pendant la cuisson des pommes de terre, mélangez le Saint-Morêt avec le persil ciselé.

Servez les rostis garnis de fromage aux herbes et surmonté d'un peu de saumon fumé.

Grate potatoes into a hash brown-style patty and cook in the oven for a convenient and tasty side dish

Oven-baked rösti cake

Heat oven to 190C/170C fan/gas 5. Dry-fry the bacon in a pan for 5 mins until crisp, then chop into small pieces. Boil the whole potatoes for 5 mins, drain, then place in a bowl of chilled water.

When cool enough to handle, pat the potatoes dry and roughly grate into a large bowl. Toss with the oil as you go, to stop them from sticking. Roughly grate the onion and squeeze out any excess juice, then stir into the potatoes along with the bacon.

Place a baking sheet in the oven for 5 mins to warm through. Liberally grease a 23cm loose-bottomed cake tin with butter. Scatter the potato over the tin, trying not to pack it down, then dot all over the top with butter. Place on the hot baking sheet and bake in the oven for 1 hr 20 mins until the potatoes are cooked through and crisp on top.

Tossing together potatoes, shallots, and bacon for the base, and topping the crunchy cakes with smoked salmon, crème fraiche, and chives, Vanessa’s crispy potato pancakes are sure to win over everyone at your brunch table.

½ teaspoon (2.5 ml) salt

(30 ml) butter, divided

Cook bacon and shallots in a large skillet. Remove to a paper towel-lined plate. Pour off bacon grease.

Parboil potatoes until tender on the outside, but still raw on the inside. Let cool completely.

When cool, grate and add to a bowl, season with salt. Mix in cooked bacon and shallot.

In a skillet, melt half of the butter with half of the olive oil. Add the potato mixture. Spread evenly in the pan and lightly press with your fingers. Cook 10 minutes, or until golden and crispy.

Place a plate on top of the skillet and flip the skillet over so rosti falls onto plate. Melt the remaining butter with the olive oil in the skillet. Slide rosti back into skillet, uncooked side down, and cook a further 10 minutes, until evenly crisp and cooked through.

Remove the finished rosti to a plate. Cut into wedges. Serve with smoked salmon, crme fraiche, and sprinkle with chopped chives

A lovely side dish or with additions can be into a complete meal

Peel the potatoes and grate them, using the large holes of a hand grater.

Put the potatoes in a large bowl, add the salt and pepper, and toss to coat thoroughly. Let the potatoes rest for at least 5 minutes, and then, taking one handful at a time, squeeze as much liquid as possible out of them and transfer to a second bowl.

Do not worry if the potatoes begin to oxidize, this is normal.

Heat a heavy-based skillet that measures about 8 inches across the base over medium-high heat. Add the oil (it should come to a depth of at least 1/8 inch) and half the clarified butter or ghee.   When the oil begins to shimmer just before it reaches its smoking point, add in the potatoes and press down with a fork or spatula to fill the pan. Please note that they will sizzle so don't let it startle you.  If you want to make individual servings, you can use 4 small  4" cast iron skillets like I did.

Keep a watch on the rosti and when the bottom is browned you need to flip it over. It is easiest to do this with a flat cutting board or dinner plate.  Once you flip it, add more oil and butter to the  pan, when hot slide back in the rosti and cook for another 10 minutes until golden brown.

Slide the rösti onto a cutting board, Blot the top with a paper towel to remove any excess oil. Cut into wedges and serve as soon as possible.

Süßkartoffeln

g Fourme d'Ambert, o.a. Schimmelkäse

Als erstes die Süßkartoffeln schälen. Dann mit einer Reibe grob raspeln. Die Arbeit kann auch gut eine Küchenmaschine mit entsprechendem Einsatz für euch übernehmen.
Die geraspelten Süßkartoffeln nun mit Salz und Olivenöl abschmecken.

Die Kräuter waschen, trockenschütteln und fein hacken oder ebenfalls von der Küchenmaschine zerkleinern lassen.
Jetzt die fein gehackten Kräuter ebenso zu den Süßkartoffeln geben und alles noch mal gut durchmischen.

Mit der Süßkartoffelmasse kleiner Nester oder Rösti formen - circa 4 Stück. Wer mehr möchte, kann einfach die Menge der Süßkartoffeln verdoppeln.
Den Käse zerbröseln oder klein schneiden und auf die Süßkartoffelrösti geben.

Die Nester anschließend in den Airfryer geben und knusprig backen. Am besten nicht mehr als vier Nester, je nach Größe, backen.

Crispy vegan hash browns with only a few ingredients! The recipe is plant-based, gluten-free, easy to make, and very delicious!

Vegan Hash Browns

potatoes (e.g. Russet or Yukon Gold, peeled)

white onion (finely chopped)

Tbsp fresh parsley (finely chopped (optional))

tsp sea salt

¼ tsp smoked paprika

Tbsp rice flour ((see notes))

Tbsp ground flaxseed

water

Oil (for frying)

You can watch the video for visual instructions.First, combine the ground flax and water in a small bowl, mix well, and set aside.

Next, shred the potatoes (optionally peeled) using medium holes on a box grater or food processor grating disk. Then, shred or finely dice the onion.

Transfer the shredded potato to a nut milk bag (or several layers of cheesecloth/ a clean kitchen towel) and squeeze to remove as much excess liquid as possible.Don’t discard this liquid yet – set it aside.

Next, transfer the potato to a large bowl and combine it with the remaining ingredients, mixing well (I do this by hand).

Carefully pour away the top of the drained potato liquid, adding the remaining starch at the bottom of the bowl to the hash brown mixture and mixing well.

Meanwhile, preheat a large skillet over medium-low heat with 1-2 tbsp of oil.

Once hot, divide the potato mixture into about ⅛-¼ cup portions, flattening them to about ¼-inch thick, and fry until golden brown and crispy on both sides (about 6-8 minutes per side). Use a spatula to press down to help form the crispiest crust.Don’t overcrowd the pan – work in batches if necessary. Also, it’s important not to increase the heat too much; otherwise, the middle will remain raw.

Finally, repeat the last step with any remaining hash brown mixture, and enjoy!

This was so goooooood! Only had one white potato but plenty of sweet potatoes but it still turned out great.
