Set a large skillet over medium high heat on the stove top. Brown and crumble the ground beef, drain the fat.

Add the cooked ground beef to the slow cooker, cube the velveeta and add on top of the beef.

Pour over the can of rotel and sprinkle over the chili and garlic powder. Stir.

Place the lid on the slow cooker. Cook on HIGH for 2 hours or until cheese is melted and the dip is hot.

Keep on warm while serving.

Here is how I make this classic recipe. Be sure to buy 2 can of rotel or the dip will be too thick. Enjoy!

RECIPE:

INGREDIENTS:
1 lb. ground beef
16 oz. Velveeta cheese this is the smaller box
20 oz. Rotel® diced Tomatoes with & Green Chiles (TWO 10-oz. cans) DO NOT DRAIN
2 tsp. chili powder
¼ tsp. garlic powder

SLOW COOKER SIZE:
4-quart or larger

INSTRUCTIONS:
Set a large skillet over medium high heat on the stove top. Brown and crumble the ground beef, drain the fat.
Add the cooked ground beef to the slow cooker, cube the velveeta and add on top of the beef.
Pour over the can of rotel and sprinkle over the chili and garlic powder. Stir.
Place the lid on the slow cooker. Cook on HIGH for 2 hours or until cheese is melted and the dip is hot.

butter

flour

c whole milk

Rotel tomatoes (or 1 bag of frozen homemade Rotel)

c cheddar cheese

c shredded monterrey jack

oz cream cheese

spinach

In a medium saucepan, brown the blue and gold sausage

Add the butter and flour and cook and stir until it begins to brown

Add the milk and rotel with the juice

Cook and stir over medium heat until mixture begins to thicken

Add cream cheese and cook and stir until it melts in

Add shredded cheeses a handful at a time and stir in until well blended before you add another handful

Once all cheese is melted and smooth, it&#39;s ready to serve or put in a crockpot to keep warm

Serve with chips or whatever you want to dip in it

Cheesy Sausage Dip

(16-ounce) package bulk ground Italian sausage

cream cheese

(16-ounce) package processed cheese product (like Velveeta)

(15-ounce) can whole kernel corn, drained

In a large skillet, brown the ground sausage. Drain any grease away. Return the pan with the meat to medium low heat. Cut the cheeses into cubes and add them to the pan. Cook until the cheese has melted, stirring occasionally. Add the drained whole kernel corn, two cans of drained tomatoes and chilis, and garlic powder. Cook until heated through. Transfer to a serving dish or to a slow cooker on warm to keep it warm. Serve alongside corn or tortilla chips.

Stovetop Instructions:

In a large skillet, brown the ground sausage. Drain any grease away. Cut the cheeses into cubes. Add the sausage, cheeses, drained whole kernel corn, drained tomatoes with chilis, and garlic powder to the bowl of a slow cooker. Cover and set to low. Cube the Velveta and put it in a microwave safe bowl

Open the can of Rotel and pour it in - no need to drain.

Microwave on high for 2 minutes.

Stir.

Return to the microwave and cook 2 to 3 minutes more.

Stir. If it&#39;s not all the way melted microwave it for a few seconds more.

Add to a slow cooker and keep on the warm setting.

Cube the Velveeta.

Spray the inside of the slow cooker with non-stick cooking spray.

Add the Velveeta to the slow cooker.

Dump in the ROTEL.

Cook on low for 2 to 3 hours, or until the cheese is melted.

Keep on warm setting.

pithed (seeded, and small diced jalapeño)

juice of 1 lime

Add the sliced bacon to a large 12” stainless steel, non-stick, or cast-iron skillet and cook over low to medium heat until crisp, which takes about 8 to 10 minutes.

Set the crispy bacon lardons aside and pour the remaining rendered bacon fat through a strainer into a medium-sized bowl.

Return the pan to the burner, add in 2 tablespoons of the rendered bacon fat, and heat up over medium-high heat until it begins to smoke lightly.

Add in the ground beef, flatten out to make a large burger and cook untouched for 3 minutes.

Break up the ground beef until it is in small bite-size pieces, browned, and cooked throughout. Set the beef to the side in the bowl with bacon.

Place the pan back on the burner with 2 more tablespoons of rendered bacon fat over medium-high heat and add in the onions, season lightly with salt, and sauté for 3 to 4 minutes or until they begin to brown slightly.

Turn the heat down to low-medium and cook while occasionally stirring for 30 to 35 minutes or until well caramelized.

In the meantime, add the cream cheese and Velveeta to a slow-cooked and cook over high heat. Using this procedure will allow the cheese to melt without it sticking or burning. This takes about 25-30 minutes to melt fully.

Once the onions are caramelized add them to the slow cooker with the melted cheeses along with the cooked beef and crispy bacon.

Next, place in the tomatoes and jalapeños and stir to combine. Cover the slow cooker and heat for 10 to 15 minutes or until the cheese is completely melted and mixed with the other ingredients.

Finish by pouring the beer, lime juice, green onions, and cilantro and stir to combine.

Garnish with additional sliced green onions and chopped cilantro, and serve with tortilla chips.

• 2 cups yellow onions
• 3 finely minced garlic cloves
• 1 pound full-fat cream cheese
• 2 pounds of pasteurized cheese product, like Velveeta or American cheese
• 2 cups diced Roma tomatoes, seeds removed
• 1 pithed, seeded, and small diced jalapeño
• ½ cup amber ale beer
• juice of 1 lime
• 1 bunch thinly sliced green onions
• ¼ cup finely minced fresh cilantro
Serves 8

Prep time: 15 minutes

Cook time: 55 minutes

Procedures:
