Place the meringue powder and water in a large mixing bowl, and whip (with the whisk attachment) until foamy (about 3 minutes).

Add the powdered sugar, and whip on medium speed until very stiff and thick (the royal icing should hold a stiff peak).

Tint as needed with gel paste icing colors.

Thin with additional water, a drop at a time, to get the desired consistency.

Easy Royal Icing Recipe for Decorating

This is the best royal icing for sugar cookies! It is easy to make, has amazing flavor and dries softer than other royal icings. I'm always getting compliments whenever I use this recipe to decorate my sugar cookies!



Famous Royal Icing

tbsp meringue powder

tbsp warm water

c sugar

lemon juice

tsp white food coloring (optional, but

food coloring

water sugar

In a large bowl (make sure there is no grease or oil residue in the bowl), mix the meringue powder and 4 tbsp of water using a hand mixer on high speed. Mix until completely dissolved and very frothy.

Add half of the powdered sugar. Mix on low until incorporated.

Add the other cup of powdered sugar along with the corn syrup and lemon powder (or extract). Mix on low until combined, and then switch the speed to high and mix for 2 minutes (no less!) Taste the icing and add more lemon flavor if desired.

The icing should be thick and have a little more volume as well. It should hold a soft peak.

Once mixed, grab a spatula and mix in the white food coloring or other colors as desired.

To thin out the icing, add ½ tsp of warm water at a time until desired icing consistency is reached (15-20 seconds for flood icing). Mix with the spatula to avoid more air bubbles.
I usually make the entire batch flood consistency and then stiffen it up with more powdered sugar in smaller batches as needed.

This step is optional but helps with air bubbles, cover bowl with plastic wrap and allow it to rest for 30 minutes. The majority of air bubbles will naturally release as the icing rests, giving you less trouble once your cookies are covered!

Decorate your cookies and allow to dry uncovered overnight.

My friends and family have all loved these perfect cookies.  Made some cookies for my boyfriend’s birthday and his family was literally shocked that well decorated cookies could taste so delicious. They expressed surprise because as they stated “normally” they do not like the taste of “those type of cookies” but couldn’t believe the cookies had great texture and flavor, and that the icing paired so well. How to make an easy royal icing using meringue powder. Great for outlining, filling, and all your sugar cookie decorating needs. This recipe is essentially foolproof, can be made in advance, and includes a how-to video!

Easy Royal Icing Recipe

sugar ((500 grams))

½ Tablespoons meringue powder

vanilla extract

IMPORTANT NOTE BEFORE YOU BEGIN: Your bowl and all utensils must be clean and grease free in order for the icing to whip properly.

In the bowl of a stand mixer fitted with a whisk attachment or in a large bowl (you will need an electric hand mixer) combine sugar, meringue powder, and water. Beat on low speed until combined, then add vanilla extract (or other flavoring).

Gradually increase mixer speed to high and beat until icing forms stiff peaks (5 minutes or longer).¹

Divide and color icing as desired (I like to use gel food coloring).

Icing at this consistency can be used as a stiff outlining icing. To thin the icing for flooding/filling, tint as desired first (so that your outlining and flooding icing is the same tint), divide (so you have one bowl of outlining and one bowl of flooding icing), and then stir your bowl of flooding icing, adding about a teaspoon of water at a time until frosting reaches desired consistency. For me this usually means that if I pull my spoon out of the royal icing, the icing that drizzles off holds its shape for several seconds before dissolving back into a puddle.

First pipe your outlines with your outlining frosting, then fill with your flooding icing. Use the point of a toothpick to swirl/smooth the icing until it is smooth and even.

Allow cookies to dry completely before stacking/transporting, this will take several hours. I like to let mine dry overnight to ensure they are dried all the way through.

Royal Icing Recipe

confectioners’ sugar ((450 grams))

In the bowl of a stand mixer or large mixing bowl, beat egg whites on medium-low speed until frothy, about 1 minute.

With the mixer on low speed, slowly add in confectioners’ sugar and vanilla.

Once fully incorporated, increase speed to medium-high and beat until stiff peaks shiny peaks form.

Divide icing among small bowls, and dye with gel food coloring if desired. (Keep any icing that isn’t being immediately used covered with plastic wrap as it dries out very quickly.) Transfer to piping bags and decorate cookies.

In a bowl of your mixer, whisk together water, meringue powder, and cream of tartar. Add powdered sugar and mix on low speed with a paddle attachment. Mix till thick. It can take up to 10 minutes. Beat in extracts.

Meringue Royal Icing

Whisk together liquid egg whites and cream of tartar. On low speed, gradually beat in powdered sugar. Mix for several minutes; the mixture will gradually thicken and become glossy. Beat till thick, then add extracts. It should take about 7 minutes or so.

Liquid Eggs Royal Icing

Separate egg yolks from egg whites. In a stand mixer bowl, beat egg whites and cream of tartar and gradually keep beating in powdered sugar. Mix on low speed till thick. Then beat in extract and continue mixing until thoroughly mixed in. Icing should be thick and glossy.TIP: Start with a wire beater, then change to a paddle attachment once thicker.

Fresh Eggs Royal Icing

Makes  1 and 1/2 cups of royal icing. This icing is suitable for cookie decorating, making royal icing transfers and more.

Small Batch Royal Icing

tbsp lukewarm water

tsp vanilla extract

almond extract

lemon extract (optional)

Make sure all your tools are grease free!&nbsp;I wipe my tools with a piece of paper towel and vinegar. Wipe dry with a clean towel.

Into a clean bowl add powdered sugar (2 cups and 1/4 cup). If you see lot of large clumps in the sugar, make sure to sift it first.

Into the powdered sugar add meringue powder (1 tablespoon). Whisk well or use your hand held mixer with clean beaters to combine dry powders well.

Measure water (3 tablespoons) into a small bowl. Add vanilla (1/2 teaspoon), almond (1/8 teaspoon) and lemon (1/8 teaspoon-optional) extracts into the water.

Pour liquid into the powdered sugar mixture and beat on low speed using a hand held mixer. Mixture will be thin at first. Keep mixing, increase the speed to medium and beat until royal icing thickens and holds its peak. About 3 minutes.TIP : This recipe makes thick icing. This icing can be then used to create piped decorations or icing can be thinned down with water to decorate cookies.

At this point you can use your icing for your project. Color it with gel food color.  And thin it with water as needed to desired consistency. Fill piping bags and decorate.

COLOR AND THIN ICING WITH WATER

Leftover icing can be stored in plastic container, covered well with a plastic wrap to prevent it from crusting. Use a lid to close the container.

ROYAL ICING STORAGE

This easy royal icing comes together quickly and you don&#039;t even need a mixer! Best of all, this is royal icing made without meringue powder.

Tablespoons (30 milliliters) warm water

½ Tablespoon (10 grams) light corn syrup

extract

Place powdered sugar in a medium bowl and set aside.

In a small bowl, combine warm water, light corn syrup, and extract. Stir until corn syrup is dissolved.

Add sugar water to powdered sugar and stir until completely combined. Mixture will be thick. The consistency you&#x27;re looking for is a slowly dripping icing that disappears into the bowl within about 12 seconds. Add water by drop if you think it&#x27;s too thick. If it becomes too thin, add more powdered sugar by the teaspoon. Use immediately.

If you need to wait to use your icing: cover tightly, and use within 1 day. You will need to stir it up again and possibly add more water before using. Re-test the consistency before using.

If you want to color your icing, I prefer gel colors: my favorite brand is AmeriColor. They have a huge and gorgeous collection of colors in a 12 pack or a 50 pack.
