Best grilled salmon kabobs, prepared Mediterranean-style with a garlicy, zesty marinade, zucchini and onions! Serve these with your favorite Mediterranean salads and sides and a little Tahini sauce or Tzatziki (lots of ideas up in the post).

Mediterranean Salmon Kabobs 

1.5 lb Salmon fillet,

zucchini, sliced into rounds

red onion,

Kosher salt and pepper

lemon,

garlic cloves,

tsp chopped fresh thyme leaves

dry oregano

tsp cumin

tsp mild chili pepper (I used this Aleppo pepper

tsp coriander

In a small bowl, whisk together the marinade ingredients of extra virgin olive oil, lemon juice and zest, garlic, oregano, thyme, cumin, Aleppo pepper and coriander.

Place salmon pieces, zucchini and onions in a large mixing bowl. Season with kosher salt and pepper, and toss briefly. Now pour the marinade over the salmon and toss again to make sure the salmon is well coated with the marinade. Let the fish marinate for about 15 to 20 minutes (see Cook's Tip)

Beginning with salmon, thread salmon, zucchini and onions through skewers (if using wooden skewers, be sure to have soaked them for 30 minutes before using.)

Heat an outdoor grill (indoor grilling instructions in notes). Arrange salmon skewers on top and cover the grill. Grill salmon kabobs for 6 to 8 minute, covered, or until the fish is opaque throughout, turning once midway through cooking (using tongs is the best way to turn the salmon skewers)

The Best Salmon Marinade requires just a handful of ingredients to bring out the best flavor in your salmon. It's the best marinade for salmon whether you are making grilled salmon or oven baked.

The Best Salmon Marinade

salmon filet

soy sauce

honey

orange juice

garlic

ginger

red pepper flakes

Debone salmon and place in a container

Remove any bones from the filet and place into a shallow dish or gallon sized resealable plastic bag.

Make marinade and pour over salmon

In a small bowl, whisk together soy sauce, honey, orange juice, garlic, ginger, and pepper flakes. Pour over salmon. Refrigerate and let marinate 30 minutes.

Cook salmon

Cook your salmon over a grill, in a large skillet, or to bake, preheat your oven to 375 degrees F. Line a baking sheet with aluminum foil. Place salmon filet in the center and loosely wrap aluminum foil around to trap steam. Bake in the preheated oven for 15 to 20 minutes, or until the salmon flakes easily with a fork.

Asian Grilled Salmon Marinade

tamari or soy sauce

tbsp honey

sambal oelek

tbsp rice vinegar

tsp grated ginger (optional)

Add the soy sauce, honey, sambal oelek, rice vinegar, and ginger (if using) to a plastic bag or shallow baking dish. Whisk to combine. Add salmon filets and coat in the marinade. Marinate for 30 minutes to 1 hour, flipping the salmon to coat again halfway through marinating.

When you&#039;re ready to grill, turn half of the grill on a high heat and the other half on medium-high. Be sure the grill is clean. Brush grates of the grill with canola oil to prevent the salmon from sticking. You can also wet a paper towel with canola oil and quickly oil the grates.

Let all excess marinade drip off the salmon. Season with the salmon with salt and pepper. Add the salmon to the hot part of the grill, skin side down. Grill for 6-7 minutes until the salmon easily removes from the grates. Flip and move the salmon to the cooler side (skin side up) to finish cooking. Continue to grill until cooked through, about 2-3 minutes. If you&#039;re unsure when the salmon is done, use an instant-read thermomtor. Pull the salmon off when a thermomter reaches 125 degrees - this will be just under medium.

While the salmon grills, add the remaining marinade to a saucepan. Bring to a boil and reduce to a simmer for 4-5 minutes. When the salmon is about a minute from finishing, brush with marinade. Remove the salmon from the grill, cover and let it rest for 3-4 minutes before serving.

Serve with orzo or your favorite side.

Healthy Salmon Marinades

In separate bowls, whisk together marinades. Pour into individual ziploc bags. Place 1 large piece of salmon (about 4-6oz salmon) with each marinade. Carefully try to squeeze out air from the bag.

Allow the salmon a minimum of 30 minutes to marinate (overnight is best for maximum flavor).

Preheat oven to 400 + prepare a lined baking sheet. Lay salmon pieces on the sheet side by side. Bake for 15-20 minutes until salmon flakes easily.

Eat immediately, or allow salmon to cool for 5 minutes + store in containers with veggies/side for meal prepping

In the Oven:

Preheat grill to 375. Lay salmon in baking dish and pour marinade over it. Allow salmon to marinate for at least 30 minutes. (overnight is best)

Lay salmon on grilling mat or wrap in a piece of aluminum foil. Cook for 15 minutes. Do not flip! You can test to see if the salmon is done by seeing if it flakes with a fork.

On the grill:

Transfer the individual bags to the freezer.

Lay flat in freezer. To defrost, remove from freezer 24 hours in advance + place in refrigerator.

Grilled Salmon Recipe with Mint Mango Salsa

Kosher salt

extra virgin olive oil

lemon

mint leaves, (chopped)

garlic cloves, (minced)

tsp ground coriander,

tsp ground cumin,

tsp ground turmeric,

mangoes (diced)

English cucumber (hot house cucumber, chopped)

mint leaves (chopped)

red onion

Season salmon with kosher salt on both sides and place, flesh side up, in a casserole dish deep enough to hold the marinade (I used this dish).

Make the marinade. In a bowl, add extra virgin olive oil, lemon juice, mint, garlic, spices, and salt. Whisk to combine.

Pour marinade over the salmon and let sit in room temperature for 20 minutes (or, if you have the time, cover and refrigerate for 2 hours.)

Meanwhile, make the mango salsa. In a bowl, add mangoes, cucumber, fresh mint, red onions, and lemon juice. Toss to combine. Set aside for now. (If you don't plan to eat for a few hours, cover salsa and refrigerate until ready to use.)

Heat an outdoor gas grill on high (grill is ready when you can hold your hand one inch above the grates for only 1 to 2 seconds). Make sure grates are generously oiled (this is important so that the salmon does not stick.)

Arrange salmon fillets on hot grill, flesh side down first (this way, they'll get some nice grill marks while the fish is still firm.) Close the grill lid. Cook 1-3 minutes on the first side, depending on how thick the fillets are. DO NOT move the salmon fillets until you are ready to turn them over.

Look for grill marks on the fish, and where the fish is closest to the grill, you should see a small layer of opaque (cooked) flesh. Using tongs and a metal spatula, carefully turn the fish over so it is now skin-side down. Now, turn heat down to medium. Close the grill lid. Cook for another 2-5 minutes, again depending on the thickness of the fillets. Salmon is ready when it is barely opaque throughout.

Remove from the grill and serve with the mango salsa!

Grilled Salmon with Mango Salsa

Recipe VIDEO above.&nbsp;Make your next grilled salmon AMAZING with a simple yet incredible Salmon Marinade that will infuse the salmon with extra flavour! It's savoury with a touch of sweet and hint of garlic, and does double duty as a sauce for serving!

Marinated Grilled Salmon

salmon fillets (, skin

Olive oil (, for cooking)

(85 ml) soy sauce (, low sodium)

garlic (, minced)

chives onion

Lemon slices

Place marinade in a ziplock bag and mix to combine.

Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).

Take out of fridge 30 minutes prior to cooking.

Remove salmon onto plate, allowing excess marinade to drain off.

Marinating:

Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.

Pour into bowl/jug (some used for basting, some for serving).

Sauce (basting + serving):

Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).

Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).

Cook for 3 minutes or until golden, then use tongs to carefully turn.

Brush the flesh with Sauce, then close BBQ lid.&nbsp;

Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F&nbsp;(medium).

Transfer salmon to plate and serve with remaining Sauce.

BBQ:

The best easy salmon marinade for the grill or oven made with soy sauce, honey, Dijon mustard, and garlic. Simple and super flavorful!

Salmon Marinade

Pat the salmon dry and place in a ziptop bag.

Whisk

In a measuring cup with a spout or mixing bowl, whisk together the oil, soy sauce, honey, Dijon, garlic powder, and black pepper.

Pour

Marinade

Seal the bag, removing as much excess air as you can, then set in a dish or on a plate to catch any possible drips. Let marinate at room temperature for 30 minutes or refrigerate for up to 1 hour (after 1 hour, fish tends to get mushy when marinated but if you MUST, you can refrigerate for up to 4 hours).

Cook

Cook the salmon, using your preferred method. OVEN: Line a 9x13-inch baking dish with parchment paper and place the salmon in the center (if using fillets, make sure they do not touch). Bake at 400°F for 11 to 14 minutes for 6-ounce fillets or 15 to 18 minutes for a single side, until the salmon registers 135°F on an instant read thermometer inserted at the thickest part of the salmon (the FDA recommends 145°F; I prefer to remove the salmon and let it rest so that it doesn’t taste dry). Remove from the oven and let rest 5 minutes.

Grill

GRILL: Place the salmon skin-side down on a HOT grill. Let cook without disturbing until the salmon releases easily with a spatula, about 6 to 7 minutes. Flip and cook on the flesh side, about 2 to 4 minutes more depending upon your grill temperature. Remove to a plate and let rest 5 minutes.
