Sheet Pan Sausage and Veggies with Spanish Rice is a healthy recipe you can bake up in one pan for easy cleaning. Using a box of Spanish rice makes this dish even easier, just add turkey sausage, peppers, onions, and spices. 

Sheet Pan Sausage and Veggies with Spanish Rice

box/package Spanish rice

kielbasa turkey sausage (thinly sliced diagonally)

bell peppers (chopped, any color)

Preheat oven to 425 degrees. Line half of a large, rimmed sheet pan with foil and fold the edges up to make a tray and divider between the other half of the pan.

Stir together rice, water, and tomatoes. Pour into foil tray. Bake for 10 minutes while you prepare the veggies and sausage.

Toss together sausage, peppers, onions, olive oil, salt, pepper, garlic powder, and dijon mustard.

Arrange sausage and veggies on the unused half of the baking sheet. Place an piece of foil over the rice, do not press down, rather push the center up a bit and press the edges around the rim of the baking sheet to make a tent over the rice.

Bake for 20 minutes. Broil 3-5 minutes at the end, optional. Fluff rice with a fork, garnish everything with fresh parsley or cilantro if desired and serve.

Recipe video above. The smoked sausage is the trick here to get great flavour into this quick one pot dinner. Tastes like Jambalaya, minus the cajun flavours, and much faster to make. Everybody loves this!I used kransky sausages but you can use any smoked sausages you want, including chorizo. You can even use raw sausages - see Note 1! Also feel free to use other vegetables - anything that can hold up to 20 minutes on the stove.

Smoked Sausage and Rice - easy one pot dinner!

tbsp extra virgin olive oil

chicken stock/broth (, low sodium (or veg stock))

Cook sausage: Heat 2 tbsp oil in a large heavy based pot over medium high heat. Add sausages and cook until golden. Remove with a slotted spoon.

Cook onion and garlic: Add remaining 1 tbsp oil. Add garlic and onion, cook for 2 minutes. Add capsicum and cook for 2 minutes until onion is translucent.

Add rice and liquid: Add rice, chicken stock, paprika, salt, pepper and the sausage. Stir, bring to boil, then reduce heat to low so it&#39;s simmering very gently.

Cover and cook: Cover with lid, cook 20 minutes.

Add peas and rest: Remove pot from stove. Working quickly, remove lid, add peas, then quickly put the lid back on. Rest 10 minutes - the residual heat with cook the peas.

Fluff and serve: Add parsley. Use a fork to fluff the rice. Serve immediately!

Set pressure cooker to SAUTE. Melt butter in the pot.

Add sausage and saute 2-3 minutes until edges begin to brown.

Stir in the rice for 1 minute.

Stir in tomatoes, lemon juice, red pepper flakes, broth, and water.

Cover with lid, turn vent valve to SEALED position. Set to MANUAL or PRESSURE COOK for 8 minutes.

Once cook time is up, natural release (do nothing) for 5 minutes, then turn vent valve to release remaining pressure. Once float valve drops, remove the lid.

Give everything a good stir to fluff the rice. Garnish with chopped parsley if desired and serve.

This Sausage and Rice skillet is an easy and filling meal that you can make with ingredients found at the dollar store.

Sausage and Rice

smoked sausage (1.25)

Tbsp cooking oil (1.25)

frozen seasoning mix (celery, onion, bell pepper, parsley) (1.25)

long grain white rice (1.25)

chicken broth (made with bouillon) (1.25)

tsp Creole seasoning (1.25)

hot sauce

Slice the smoked sausage into ½-inch thick rounds.

Add the cooking oil to a deep skillet and heat over medium. Once hot, add the smoked sausage and continue to cook until the sausage has browned (3-5 minutes).

Add the frozen seasoning mix to the skillet and continue to cook and stir over medium heat until the vegetables are heated through.

Add the rice, Creole seasoning, and chicken broth to the skillet, then stir until everything is combined.

Place a lid on the skillet, turn the heat up to medium-high, and let the broth come up to a boil. When it reaches a full boil, turn the heat down to medium-low, and let the skillet simmer for 15 minutes (do not lift the lid, do not stir).

After simmering for 15 minutes, turn off the heat and let the skillet rest with the lid in place for an additional five minutes.

Finally, lift the lid, fluff the rice, and add more Creole seasoing and hot sauce to taste. Serve and enjoy!

Smoked Sausage and Rice

olive oil

Cup Diced white onion

Cup thinly sliced bell pepper

Cloves of garlic (minced)

cayenne pepper powder

14-oz Package smoked sausage,

½ Cups long grain white rice (rinsed and drained)

tomato sauce

Heat the olive oil in a large skillet or pot over medium heat then add the onion and cook until soft.

Add the green pepper, garlic, cayenne pepper, salt and pepper and stir and cook for 2-3 minutes or until the green pepper is tender but still crispy.

Add the sausage and cook for another 3-4 minutes to allow the sausage to become fragrant.

Stir in the rice and toast it for 5-6 minutes then pour in the chicken broth and tomato sauce and stir to combine.

Bring the broth to a boil then reduce the heat to low medium and cover with a lid.

Let it steam for 18-20 minutes or until there is very little moisture left in the pan and the rice is cooked through.

Remove the pan from the heat and let it sit for 5-6 minutes then fluff the rice and serve with freshly minced parsley.

So yummy! I can't believe how far only a tablespoon of Dijon mustard goes flavor wise!

great dish, spanish rice is one of the few that I (sometimes) allow myself to eat and the only one that can stand up to sausage, white rice definitely doesn't, pilaf, and also love the sheet pan prep for this too, thank you!
