This One Pot Italian Sausage Pasta is a weeknight dinner dream! Made with sun-dried tomatoes, baby spinach, garlic, and Italian sausage, this family friendly dinner comes together in less than 30 minutes!

One Pot Italian Sausage Pasta

dry spaghetti noodles

Italian sausage, sliced

sun-dried tomatoes, chopped (dry, not packed in oil)

garlic,

olive oil

sea salt

water

baby spinach leaves

parmesan cheese

black pepper

red chili pepper flakes (more to taste)

Cook sausage &amp; pasta: In a large pot over high heat, add spaghetti, sausage, sun dried tomatoes, garlic, olive oil, salt and water. Stir and bring to a boil uncovered, then reduce heat to medium high and cook for 10-11 minutes, stirring occasionally so the pasta doesn&#8217;t stick.

Add veggies &amp; cheese: Add spinach to the pot and continue to cook for about 3-4 minutes while stirring, until the spinach is completely wilted and almost all of the water has reduced from the pot. Remove from heat and add the parmesan cheese, ground black pepper and red pepper flakes, then mix. A thin sauce will form from the remaining pasta water and cheese. Serve with additional parm and red pepper flakes. Enjoy!

Orecchiette Sausage Pasta in Creamy Tomato Sauce

/ 14 ounces orecchiette pasta ((or other pasta))

garlic (, minced)

pork

white wine (, anything not too sweet (sub water))

tomato passata ((called "tomato puree" in US, Note 2))

cream (, heavy/thickened)

milk ((any fat %))

parmesan (, finely grated)

tsp Italian herbs ((Note 3))

tsp red pepper flakes ((chilli flakes))

salt and pepper

(packed) kale leaves

Parmesan (, for serving)

Bring a large pot of water to the boil and cook pasta according to packet directions MINUS 1 minute. Just before draining, scoop out 1 cup of pasta cooking water and set aside. (Note 4)

Heat oil in a very large skillet over high heat. Add garlic and cook for 15 seconds.

Add sausage meat and cook, breaking it up as you go, until there are some little golden bits - about 4 minutes.

Add wine and cook, scraping the bottom of the skillet to remove the golden bits, and allow wine to evaporate - the winey smell will disappear.

Add remaining ingredients except kale. Stir well, bring to simmer then turn stove down to low and simmer gently for 2 minutes to bring all the flavours together.

Add pasta and kale. Toss well for 1 minute to coat pasta well with the sauce - it will thicken. If the sauce gets too thick, use the reserved pasta cooking water to loosen it up (Note 4).

Serve immediately, garnished with freshly grated parmesan

lb farfalle pasta

lb sweet sausage,

garlic, (minced)

oz button or wild mushrooms, (sliced

dry white wine

heavy cream

tsp red pepper flakes

fresh parsley, (finely chopped)

parmesan cheese, (grated)

parsley and grated parmesan

Cook pasta according to package instructions for al dente. Reserve 1 cup of the pasta water when draining.

While the pasta is cooking, heat a large saute pan over med/high heat and add olive oil.

Add sausage and cook until browned and cooked through, 10 - 12 minutes.

Add garlic and cook 1 minute, then add the mushrooms, stirring well. Continue to cook about 5 minutes, stirring frequently so the garlic doesn't burn.

Add the white wine and cook until reduced by half, about 5 minutes.

Add cream and about 1/2 cup of the reserved pasta water (you can add more if needed as it cooks). Stir in the red pepper flakes, salt, pepper, parsley, and parmesan. Cook until the sauce has thickened, adding more pasta water if needed.

Add the cooked pasta and toss well.

Top with a sprinkle of parsley and parmesan to serve.

Add olive oil to an oven-safe skillet over medium high heat until just smoking. Add sausage and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.

This is my second recipe review EVER and I am 56yrs. old. This was a VERY tasty quick, one pot meal that I made today. I followed this recipe exactly as written and it turned out mighty tasty for sure. My only problem with the whole thing was that it wasn't spicy enough for me. However, this  is SO versatile and excellent as a base recipe . After my first bowl I sprinkled some Tony Chachere's Original Creole seasoning on my second bowl and it was even better. Of course I will be making this again but I will add peas, broccoli or green peppers to it for a veggie flair as well as my Tony C . for an added kick. My friend suggested adding shrimp to the combo for a little Cajun twist which sounds great. Overall I gave this 4 stars because it truly is good as is and it is a great starting point for anything you might want to add in.

Heat the oil in a large frying pan. Squeeze the sausages from their skins into the pan and break up into small pieces. Cook over a medium-high heat for 8-10 mins until browned and crispy in places. Remove using a slotted spoon and set aside.

Boil a full kettle. Add the leeks to the pan and season. Cook over a low heat for 10-12 mins until softened and just starting to caramelise. Meanwhile, fill a large pan with the boiled water and some salt, and cook the pasta following pack instructions. Drain, reserving 150ml of the cooking water.

Add the garlic and fennel seeds to the leeks and cook for 2 mins. Stir through the mustard and sausages, then pour in 100ml of the pasta water and let it bubble for 1 min. Tip in the pasta, sprinkle over the lemon zest and toss everything together, adding a little more pasta water if needed. Divide between plates and top with Parmesan and black pepper before serving.

Bring a large pot to boil and cook the pasta according to package directions.

In a large skillet add the sausage. Cook and crumble until it is no longer pink. Set aside on a plate.

Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the sausage back to the pan and add the pasta and stir until heated throughout.

extra virgin olive oil

penne ((14 ounces)

Italian pork sausages

black truffles (I used 2 small ones (optional))

200 ml fresh cream ((6-7floz))

glass white wine

Remove the casing from the sausages and crumble the meat filling. Peel and chop the onion finely.

Bring a large pot of water to a boil for the pasta, add salt and bring to the boil again.

Meanwhile, heat the oil in a large frying pan or skillet over a medium heat. Add the onion and cook until it starts to soften then add the crumbled sausage meat.

Brown the sausage, while stirring with a wooden spatula to prevent it from sticking.&nbsp;Pour in the wine. Allow the alcohol to evaporate while stirring. Lower the heat, cover, and finish cooking the sausage in its own juices for 10 minutes

Uncover, taste and season with salt and pepper as required. Pour in the cream and bring the sauce to a gentle simmer. Add a few truffle shavings (if using) and half the pecorino. Reduce the sauce for 3–4 minutes, then turn off the heat, cover and set aside.

Cook the pasta in the salted boiling water until al dente according to the instructions on the packet. Save some of the pasta cooking water and drain the pasta. Add it to the pan with the sausage and cream sauce.

Over a low heat, mix the pasta and sauce together– you can add a little pasta cooking water if it seems too thick

Serve immediately with  a generous sprinkling of grated pecorino, some freshly ground black pepper and truffle shavings .

Creamy Sausage and Saffron Pasta alla Monzese

360 g rigatoni or penne ((12-13 ounces))

60 g Grana Padano

tsp saffron threads (or 1 sachet saffron powder)

Marsala wine (or Madeira, port

If using saffron threads put them in a little hot water to soak. Remove the skin from the sausage and cut the meat into chunks. Brown the sausage meat in a drizzle of extra virgin olive oil in a deep frying pan or skillet

Put a large pot of water on to boil for the pasta. Add salt once it starts to boil and bring to the boil again.

When the luganega (sausage) is well browned, add the Marsala. Let the alcohol evaporate and then add cream and season with salt and pepper. Continue cooking on a medium heat for about 10 minutes.

Add the water and saffron to the sauce. Stir and mix well. Raise the heat to thicken the sauce.

Cook the pasta al dente according to the instructions on the packet. When the pasta is ready save a cup of the cooking water and drain it. Add the pasta to the pan along with the grated cheese. Mix everything together well. If the sauce seems dry add some of the pasta cooking water.  Serve immediately

Bigoli pasta with Luganega sausage

tbsp extra virgin olive oil.

stock ((i used 1 classic Knorr stock cube))

Remove the skin from the sausage and break the meat into small piece with your hands or a knife. You want the sausage pieces to be quite small but not as fine as minced meat.

Heat the olive oil in a frying pan or skillet.  Add the peeled and chopped onion and peperoncino flakes (if required). Cook until the onion starts to soften.

&nbsp;Add the sausage meat to the frying pan and brown it.&nbsp;

Add half a glass of white wine and turn up the heat. When the alcohol has evaporated add the chopped parsley,  tomato pulp and/or halved fresh tomatoes and the stock.

Simmer uncovered on a low to medium heat for 20-25 minutes. Stir occasionally. Add salt and pepper to taste.

While the sauce is cooking, boil a pan of water for the pasta. Add salt once the water starts to boil and bring to the boil again.

Cook the pasta al dente according to the instructions on the packet.

When the pasta is cooked, drain it and add it to the pan with the sausage ragu. Mix the pasta and the sauce together.

Serve immediately with grated Grana or Parmigiano if required.

So, so yummy!! I used spicy Italian pork sausage and didn't combine the pasta with the sauce at the end, I just served the pasta and topped with the sauce since I saw others have an issue with the pasta being too dry.

I put in the tomatoes to cook with the garlic for about ten minutes and then turned the heat down to simmer and then added the cream and cheese. If you added the cream and cheese when the sauce was boiling, your sauce would separate and wouldn't come out creamy. So turn it down to a simmer and cook for about five more minutes and you're good to go!

I omitted the basil since I didn't have any on hand and it still turned out wonderful. Highly recommend for a quick, delicious dinner.

The family really enjoyed this dish. I used half and half and it was still really good. It was easy and quick to make.
