Perfect Sauteed Carrots

carrots (1 pound)

olive oil

kosher salt

Peel the carrots and slice them diagonally into rounds (on the bias).

Heat the olive oil in a large skillet over medium high heat. Add the carrots and cover. Cook for 4 minutes without stirring.

Remove the lid, stir, and add the 1/4 teaspoon kosher salt. Continue to saute uncovered 3 to 4 minutes until browned, stirring occasionally. Remove from the heat and stir in the fresh herbs and a few more pinches kosher salt to taste. Serve immediately.

Easy Sauteed Carrots

carrots

unsalted butter ((or olive oil))

salt ((optional))

honey ((optional))

Peel and trim the ends of the carrots.

Slice into rounds of equal thickness, about ¼ inch thick.

Place a medium skillet over medium heat. Melt the butter (or warm the oil). Add the carrots and stir to coat.

Cook, covered, for 8-10 minutes, or until soft when poked with a fork.

Remove the cover and cook, stirring occasionally, for an additional 2 minutes to let any excess water evaporate.

Sprinkle with salt and and honey, if using. Serve warm.

Sautéed Carrots and Spinach

oz fresh spinach (about 8 cups lightly packed)

carrots (2 cups sliced)

garlic

avocado oil

tsp sea salt

tsp pepper

Heat oil in a large skillet over medium heat, add the carrots and cover with a lid.

Cook for 2-3 minutes, reduce heat to medium-low and then stir in the garlic. Cover and continue for cook for 2-4 additional minutes until the carrots are softened. (If you prefer your vegetables more on the crisp side, cook for less time.)

Add the spinach, a few handfuls at a time, covering and allowing to wilt between additions until it has all been added. Stir to mix with the carrots.

Stir in the salt, pepper and any additional seasonings. Remove from heat.

Serve.

The Sauteed Carrots and Spinach recipe is one of my new favorite go-to side dishes! Healthy, tasty, and definitely a keeper in my recipe collection.

Thinly sliced carrots sauteed in butter with a dash of thyme and turmeric. A delicious side dish where the natural sweetness of the carrots is naturally coming through without the need to glaze them in added sugar.

Butter sautéed carrots

butter

tsp thyme (dried)

turmeric powder (optional)

Peel and thinly slice the carrots to 1 mm thick. I have used my food processor for even slices.

Set the skillet on medium-high heat and melt 40 g (3 tbsp) of butter. When melted, add the carrots. Cook for 5 of minutes moving them around the pan to evenly distribute the heat and steam around.

Add the thyme, turmeric and salt and stir in. Add the rest of the butter.

Keep cooking the carrots on a rather high heat for another 15 minutes always moving them around.

After a total of 20 minutes the carrots should have softened enough to properly have cooked through. They should display a nice caramelization and some should have nicely browned edges. Garnish with fresh thyme (if desired) and serve.
