Our simple savoury pancake recipe is great with a sprinkling of strong cheddar and chunks of ham for an easy supper or weekend brunch

Savoury pancakes

plain flour

eggs,

milk

oil,

Using&nbsp;electric beaters or a hand <a href="https://www.bbcgoodfood.com/content/top-five-whisks">whisk</a>, combine the flour, eggs and milk with a big pinch of salt in a large bowl.

Heat a 20cm crêpe pan until very hot, then pour a little oil into the <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">pan</a>. Swirl the pan so the oil creates an even covering. Ladle a spoonful of the pancake mixture into the pan and tip the pan so the mixture fills the pan in an even layer. Cook for 30 seconds, then flip and scatter with some cheese and ham, and cook until the cheese is melting. Add a crack of black pepper and fold. Keep on a plate covered with foil in a warm oven while&nbsp;you make the remaining pancakes.

Multigrain flour ((preferably Elephant aata))

Baking powder

tsp Baking soda

tsp Chaat Masala ((optional))

Salt

Fresh Paneer /Cottage cheese (grated)

Carrots (You can add grated beetroot, peppers,corn, boiled peas.)

Spinach leaves (chopped)

Spring Onions (chopped)

tbsp Ginger (grated)

Green chillies (chopped)

tbsp Oil (Plus extra for brushing the griddle /pan)

lemon juice

Yogurt (plus water to make a thick yet flowy batter)

In a mixing bowl whisk together flour, baking powder, baking soda, chaat masala and salt.

In another bowl mix together paneer, chopped veggies, lemon juice, green chillies, ginger, coriander leaves.

Then add the yogurt and water and mix again.

Now add the flour to the wet mixture and whisk everything together. Let it sit for 10 minutes.

Heat a griddle/non stick pan on medium high heat and brush it with a some butter/oil. 

Now drop a ladleful (I used my 1/4 cup) of batter. Cover and cook for 2-3 minutes or until bubbles appear on top of the pancakes. 

Turn the pancakes over and allow to cook for 2 minutes or cooked through.

Serve it hot with some ketchup or fried eggs or some yogurt.

Use up leftover mashed potato in these breakfast pancakes, delicious with bacon and eggs

If you’ve got potatoes not mash, cook them in boiling water until tender. Drain well and press through a potato ricer or mash. Weigh out 250g and cool.

Sieve the flour and baking powder onto cooled mash. Whisk eggs and milk together and add to the potato mix with the chives. Whisk the batter until smooth.

Heat a large non-stick frying pan over a medium heat. Add ½ tsp sunflower oil and a dot of butter. When the fat is hot, start to cook the pancakes. Add 1 tbsp of batter for each pancake and cook 4 at a time. Cook for about 1 min until the underside is golden brown and small bubbles appear.

Flip the pancakes and cook until golden. Remove from the pan and keep warm while you cook the remaining pancakes in the same way, adding a tiny bit of oil and butter to the pan as and when needed. Serve the pancakes in stacks with creamy scrambled egg and crisp rashers of streaky bacon.

Dosa is a fine, crisp pancake. It takes a bit of time for soaking and grinding, but very little effort. Begin this recipe 2 days ahead.

Tradition might dictate pancakes today, but there's no law that says you can't make crepes instead. Topped with a sweet roast tomato sauce and grated mozzarella, they make a perfectly delicious dinner.

Zucchini pancakes with bacon & avocado

(1 cup) self-raising flour

buttermilk

(about 150 grams) zucchini, coarsely grated

Extra Virgin Olive oil spray

rindless bacon rashers, excess fat

punnet cherry tomatoes, quartered

avocado, halved, stone removed, peeled, sliced

basil leaves

red onion,

garlic clove, crushed

tsp balsamic vinegar

These deliciously light crepes are filled with creamy ricotta pesto with almonds and pine nuts.

Savoury Pesto Filled Crepes/Pancakes

plain flour (all-purpose flour)

freerange egg

ml milk

salt and white pepper

pine nuts and almonds mixed

garlic

ricotta cheese

Sift the flour into a bowl and break the egg into the centre.

Whisk the egg into the flour and then add the milk a little at a time as you whisk.

You want a batter that is smooth like cream.

Season with the salt and white pepper. I use white pepper to avoid black specks in the crepes and because I like the spiciness.

Toast the pine nuts and almonds (or simply use one or other of the nuts) in a dry pan till they are golden and release their scent.

Whizz 3/4 of the nuts in food processor along with the minced garlic, lemon zest and juice. Add the basil leaves reserving a few for decoration.

Stir in the ricotta till well blended.

Heat half the butter in a pan and pour in half of the batter. Spread around the pan and let it cook for almost 1 minute.

Flip the pancake and spread on half of your pesto mixture.

Fold or roll the pancake and tip on to a plate.

Repeat with the remaining mixture for the second pancake.

Decorate with remaining nuts and a few torn basil leaves.

This light and lovely seafood dish is sure to become a family favourite.

Korean Savory Pancakes Recipe (Pajeon Recipe)

garlic glove (peeled and grated)

vegetable oil (divided)

Combine the sauce ingredients in a small saucepan set over medium heat. Allow the mixture to come to a boil, then give it a good stir and turn the heat down to medium-low. Simmer for 5 to 7 minutes, until slightly reduced and thickened.

Slice the scallion into 1-inch pieces. Cut the carrots into very skinny matchsticks (or julienne).

In a large mixing bowl, whisk together the flour, cornstarch, sugar, and salt. Make a well in the center and pour in the seltzer, egg, and grated garlic. Stir gently with a spatula until just combined (there will be lumps). Gently fold in half of the scallions and carrots.

Heat two tablespoons of the vegetable oil in a 10&quot; cast iron skillet over medium heat. When the oil is hot and shimmering, pour in half of the batter and use the spatula to spread the batter out toward the edges of the pan. Scatter half of the remaining scallions and carrots over the top of the raw batter. Use the spatula to make sure they are partially submerged in the batter so they won't fall off when you flip the pancake.

Fry for 4 to 5 minutes, until the pancake is golden brown and the vegetables are lightly charred. Flip and cook another 4 to 5 minutes on the other side. Transfer to a paper-towel lined plate.

Add the remaining tablespoon of oil to the pan and repeat the process with the second half of the batter and veggies. Slice the cooked pancakes into pieces and serve with the warm dipping sauce.

Korean Savory Pancakes - Pajeon

Okonomiyaki are Japanese savoury pancakes packed with flavour and SO easy to make! Ready in less than 30 minutes, these &#039;as you like it&#039; pancakes are sure to be the new family favourite.

Easy Okonomiyaki Recipe - Japanese Savoury Pancakes

bacon slices (sliced, fat & rind removed)

flour / all purpose flour

cornstarch / cornflour

dashi powder (dissolved

onion onion

corn (tinned)

vegetable oil (for cooking)

tbsp kewpie mayonnaise

tbsp okonomiyaki sauce

tsp seaweed flakes / aonori

tsp bonito flakes / katsuobushi

Fry the bacon until cooked through and crispy, then set aside to cool. No need to use oil here, as the bacon will release its own oil as you cook it.

To make the batter, combine the eggs and dashi powder dissolved in the warm water in a small mixing bowl and beat gently. In a separate large mixing bowl add your all purpose flour and cornflour, then pour over with the egg and dashi stock mixture. Stir and combine until smooth.

Next, add the shredded cabbage, half of the spring onion, cooked bacon and corn into the batter mixture. Mix until all the dry ingredients are evenly coated (but don’t overmix, we want to keep that cabbage nice and fluffy). There shouldn’t be much excess batter liquid at the bottom - if there is, just add a little more chopped cabbage and mix through gently.

Heat a large frying pan over medium heat. Add in the vegetable oil and allow to heat up. Scoop out the mixture onto the pan, aiming for a circle shape about 10 cm / 4 inches wide. Cook each pancake for a few mins per side, until lightly browned on both sides.

Serve

Transfer your freshly cooked pancakes to serving plates, then top with drizzles of kewpie mayonnaise and okonomiyaki sauce. For even better tasting okonomiyaki, top with sprinklings of dried seaweed flakes, bonito flakes and a few slices of green onion to taste. You can also optionally top with the pickled ginger and Japanese 7 spice here.
