I can&#039;t think of an all around easier or tastier dinner than these Sheet Pan Chicken Fajitas! They&#039;re made with seasoned chicken and vegetables, roasted all on one pan and served in warm flour tortillas with your favorite toppings.

Sheet Pan Chicken Fajitas

chicken breasts (sliced (against the

bell peppers (I use green, yellow and red

yellow onion (thinly sliced)

garlic (, minced)

Tablespoons oil ((vegetable or canola oil))

lime

cilantro (, chopped)

flour tortillas

Desired fajita toppings: Sour cream, sliced avocado cheese

Tablespoon chili powder

paprika

cumin

onion powder

garlic powder

oregano leaves

cayenne pepper (optional)

Salt and black pepper

Light grease a large sheet pan with non-stick cooking spray. Cut chicken and vegetables into strips. Lay the vegetables evenly on the pan and place the chicken on top of them.

Preheat oven to 425 degrees F.

Combine seasoning ingredients together in a small bowl. Stir well to combine. Sprinkle most of the seasoning over the chicken, and some of it over the vegetables as well. Spoon minced garlic on top of the chicken and drizzle olive oil over the entire pan. Toss everything well and spread it into an even layer across the pan.

Cook for 15-20 minutes or until chicken is cooked through (165 degrees if you test with a thermometer). Wrap the flour tortillas in foil and place them in the oven to warm during the last 5 minutes of cooking.

Remove everything from the oven. Squeeze fresh lime juice over the chicken and vegetables and sprinkle with cilantro. Serve in warm tortillas with extra toppings, if desired.

Bell Peppers (yellow, orange, red)

yellow Onions

Avocado Oil

Tortillas

Slice chicken breast into strips, bell peppers, onions (Fajita style) and place in a large bowl. 

Drizzle about 2 tablespoons avocado oil over the ingredients in the bowl and mix.&amp;nbsp;Season with Fiesta Rub mix and pour over a large sheet pan

Place in oven at 400 degrees for 25 minutes. Internal temp of chicken should be 160 to 165.

Grab your tortillas, salsa, and guacamole and enjoy

Sheet Pan Cauliflower Fajitas! Cauliflower takes the place of meat in these mouthwatering, flavorful vegetarian fajitas. Serve with tortillas, vegan sour cream, guacamole and maybe some refried beans on the side.

Sheet Pan Cauliflower Fajitas (Vegetarian Fajitas)

head cauliflower, chopped into bit sized florets

red peppers, sliced

green peppers, sliced

Preheat oven to 425 degrees and spray a large sheet pan or two smaller sheet pans with oil. Or use parchment paper.

Add all spices to a small bowl and mix. Set aside.

Place the chopped cauliflower, peppers, onions, spice mixture and olive oil in a large bowl. Mix well.

Add the mixture to sheet pan(s) and roast for 20-25 minutes, until the vegetables are soft with a crisp edge.

Serve with tortillas (corn or flour) with vegan sour cream, guacamole and perhaps a side of refried beans or spanish rice. Enjoy!

Sheet Pan Shrimp Fajitas

bell peppers (assorted colors),

red onion,

olive oil, divided

fajita seasoning, divided

corn tortillas (6 inch) (see note)

Preheat oven to 400°F.

On a large rimmed sheet pan, toss the bell peppers and onions with 1 tablespoon olive oil and 1 tablespoon fajita seasoning until everything is coated (I like to use my hands for this).

Mix the remaining oil and seasoning in a medium sized bowl. Add shrimp and stir until shrimp is well-coated. Let marinate in refrigerator while peppers and onions roast.

Place pan in preheated oven and bake for 20 minutes.

Add shrimp, stir, and bake for 8-10 minutes more or until shrimp is cooked through and looks pink and opaque. Meanwhile, warm tortillas if desired, and prepare toppings.

Serve immediately on warm tortillas with your favorite toppings.

Keto Sheet Pan Chicken Fajitas

Organic Chicken Breasts

Seasoning onion

Lime

Purple Onion, sliced

Bell Peppers, de-seeded and sliced (any color)

Sea Salt & Pepper (to taste)

Lettuce for Wraps (optional)

Optional Toppings: Avocado, Fresh Cilantro, Salsa, Sour Cream, Cheese, etc.

Preheat oven to 375 degrees F.  Line a baking sheet with parchment paper or silicon mat.

Cut chicken into thin strips.  Add all seasonings to chicken (to taste) and toss to coat.  Add the juice from 1 lime to the chicken and toss again to mix.

Transfer chicken to baking sheet.  Add the sliced onion and bell pepper to baking sheet.  Add avocado oil plus sea salt and pepper over the vegetables and toss to coat.  Spread onion and bell pepper out even on the baking sheet.  Bake for 15-20 minutes or until chicken is fully cooked through.  Toss chicken halfway through cooking, if needed.

When ready to serve, add chicken fajita mixture to lettuce cups, wraps, or over the top of steamed cauliflower rice.  Add your favorite toppings and Enjoy!!

A quick and easy one pan meal with tender chicken and colorful vegetables packed with the smoky, sweet flavor of traditional fajitas.

lbs boneless skinless chicken breasts (or boneless skinless chicken thighs)

bell peppers (red, yellow or green, seeds removed)

onion

cumin powder

tsp chili powder

garlic powder (or minced garlic)

salt and pepper

vegetable oil

flour tortillas (8 inch size)

lime (wedges)

fresh cilantro (chopped)

sour cream

avocado

Preheat oven to 400°F. Set aside a large baking sheet.

Place the onions and bell peppers on a work surface and slice into 1/2-inch wide pieces. Next, cut the chicken into 1/2-inch wide strips. Note: You may find it helpful to freeze the chicken for 30 minutes to firm the meat up for easier slicing.

Scatter the chicken, peppers, onions and peppers evenly across the baking sheet. Sprinkle cumin, chili powder, garlic, paprika, salt and pepper on top and drizzle with oil.

Using tongs or two spoons, toss all ingredients on the pan to coat evenly.

Bake for 15 minutes.

Remove from oven, and use tongs stir chicken and vegetables. Then slide them one-quarter of the way over, to make space for tortillas.

Mop up excess juices with a paper towel, and then add the tortillas to the pan. Return to the oven and bake for 5 more minutes.

Remove from oven and squeeze optional fresh lime on top. Serve in tortillas with optional cilantro, sour cream and avocado.

Sheet Pan Fajitas Recipe (For a Crowd!)

chicken

red bell peppers (sliced)

yellow bell pepper (sliced)

1-ounce packets Old El Paso™ Fajita seasoning

sour cream (guacamole, cilantro, lime wedges, etc.)

Preheat your oven to 425° Fahrenheit. Divide the chicken, bell peppers, and onions between two rimmed half-sheet pans.

In a small bowl, whisk together the fajita seasoning and vegetable oil. Drizzle half of the mixture over each of the sheet pans. Toss the chicken and vegetables until well coated in seasoning.

Place both sheet pans in the preheated oven. Roast for 10 minutes.

Turn on the oven’s broiler. Broil the fajitas, checking and stirring every 60-90 seconds, until charred to your liking (about 3-5 minutes total).

Serve with flour tortillas and choice of toppings.

Vegans Fajitas with Cauliflower Rice- a fast weeknight meal that is vegan and gluten-free. Or feel free to add chicken!

Vegan Fajitas with Cauliflower Rice

garlic- garlic

apple cider vinegar

salt

oregano

bell peppers

red onion

portobello mushrooms (or sub boneless skinless, chicken breasts

¼ of an onion, diced

“riced” cauliflower

coriander

cilantro

Mix the marinade ingredients together with a fork in a small bowl.

Cut the bell peppers and portobellos into 1 inch thick slices. Cut the onions into ½ inch thick wedges.

Place on a parchment-lined baking sheet, in a single layer not overlapping.  Brush with the marinade (or toss in a bowl first).

Roast in on the middle rack in the oven 25-35 minutes, tossing halfway through.

While this is roasting, make the Cilantro Cauliflower Rice. Heat oil in a large skillet over medium heat. Add onion, and saute 3-4 more minutes until tender and fragrant. Add riced cauliflower and salt. Saute over medium heat for about 10 minutes, stirring often. Add coriander, zest and lime juice. Adjust salt and lime. Turn heat off until ready to serve.

Assemble the bowls, divide cauliflower rice among bowls, top with roasted veggies (or chicken). Garnish with cilantro, chipotle mayo, avocado, limes, etc.

This recipe was delicious! I doubled it for lunches for my husband and I this week. Next time, I would mix together all the veggies and marinade in a bowl because it was really tedious to brush it on each individual piece. Additionally, I checked my veggies at 20 minutes and the peppers and onions black underneath. I would either reduce the heat or check them earlier next time. The veggies were soooo good and I will definitely be using this marinade again!!

Vegan Sheet Pan Fajitas

red bell pepper, sliced

16-ounce block super firm tofu*, cubed

avocado oil

fresh cilantro, chopped

lime, sliced

8-12 Warmed flour or corn tortillas,

Prep

Preheat the oven to 425F; Grease or line a large baking sheet with parchment paper and set aside.

Seasoning Blend

Mix the chili powder, cumin, garlic powder, and salt together in a small bowl; set aside.

Veggies &amp; Tofu

add the bell peppers, jalapeños, mushrooms, onion, and tofu directly to the baking sheet and spread out evenly. Sprinkle the seasoning mixture over the veggies and tofu, then drizzle with avocado oil. Use tongs or a spatula to gently toss the vegetables and tofu until everything is evenly coated in spice.

Bake

Bake on the top rack of the oven for 20 minutes, then remove and toss everything well. Return to the oven and bake for an additional 15 to 20 minutes, until the edges of the peppers are browned. Warm your tortillas once you return the veggies to the oven for the second bake.

Serve: Remove the baking sheet from the oven, and sprinkle the juice of 1 lime wedge over the veggies; toss and top with cilantro. Serve immediately with warmed tortillas, the remaining lime wedges, and any additional toppings as desired. Leftovers will keep in the fridge for up to 5 days.

I made these into burrito bowls with some cilantro lime rice. Easy and delicious! And my carnivorous husband didn’t realize that there was tofu in them.

This was delicious!  I roasted the tofu on a separate sheet pan so it wouldn't be affected by the moisture from the veggies.

This was amazing and so delicious! It’s so simple to the point where I don’t know how I didn’t think of it myself, but I love that you can make it extremely quickly, in 1 pan! I actually made a half batch of the sauce from the creamy green enchilada casserole as a sauce for the tacos, and it was such a great addition.

These sheet pan chicken fajitas are loaded with flavor but take just minutes to prep and bake. You'll have a hearty dinner on the table in less than 30 minutes with this foolproof recipe!

Preheat oven to 400 degrees. Place 1 pound chicken, 1 sliced onion, and 3 sliced peppers in a single layer on a large baking sheet. 

Sprinkle with 1 tablespoon chili powder, 1 tablespoon cumin, 1 teaspoon garlic powder, 1 teaspoon paprika, 1 teaspoon dried oregano, 1/2 teaspoon onion powder, and a couple large pinches of Kosher salt and fresh cracked pepper. Toss to coat evenly. 

Bake for 10 minutes. Then stir meat and veggies on the pan and bake for 5 more minutes.

Broil on high 2-3 minutes just to get the edges of everything crispy and a little charred. 

Serve on flour tortillas with all your favorite fajita toppings!
