Add the baking powder and salt to the wings, close the bag, and toss to coat evenly.

Preheat your smoker to 250 degrees F using your favorite wood. Place the wings directly on the grill grates, close the lid, and smoke for 30 minutes.

Increase the heat in your smoker to 425 degrees F and continue cooking for 45 more minutes, or until the internal temperature of the wing reads 175 degrees F.&nbsp; You can rotate or flip the wings as needed to maintain even cooking and avoid any hot spots on the grill.

Remove the wing from the grill and serve. You can serve plain, toss in your favorite BBQ seasoning, or hot sauce.

Smoked Buffalo Chicken Wings Recipe

16-20 Chicken Wings,

olive oil

pepper

Frank’s Red Hot sauce

Pat dry the chicken wings with a paper towel.

Place a drying rack over a cookie sheet and place wings on top.

Place into a refrigerator, uncovered, for 1-3 hours to dehydrate (3 hours being optimal).  This is crucial to the end texture of the chicken. This process will prevent the wings steaming when you cook it, which creates a rubbery texture. We’re going for crispy here, trying to emulate the texture of fried wings.

When ready to cook, preheat smoker to 225 degrees, and remove wings from fridge.

In a large bowl, toss the wings with olive oil, salt, and pepper.

Place wings on the smoker for one hour.

Next, increase heat to 350 and let wings cook another 30 minutes. Conditions can change which can lead to more time. The key is to not pull the wings off until you get that crispy outside. You can tell by touch.

Remove from smoker and toss immediately with hot sauce mix.

Serve with your favorite ranch or blue cheese dip.

Bring butter and sauce to simmer (not boil!!) and remove from heat. Place into a large bowl to toss the wings in. *see notes

Tbsp Nick’s Poultry Rub

½ Tbsp Baking Powder or Corn Starch

If you have whole wings, separate the drums and flats using a knife and then place the wings in a large gallon ziplock.

Put 1 Tbsp of rub, the salt, and 1⁄4 cup of brown sugar in the ziplock, and then pour the beer over top. Seal the ziplock and place in the fridge overnight (brine for at least 12 and up to 24 hours)

Remove wings from the ziplock and place on a foil-lined cookie sheet. Blot dry using paper towels. Place the wings in a large bowl and toss with 2 Tbsp of the rub, and the corn starch.

Place the wings directly on the grill grate and smoke at 150 for 30 minutes.

After 30 minutes adjust your smoker to cook at 350. Cook the wings for an additional 45 minutes.

While the wings are cooking combine 6 ounces of IPA with 1 cup of brown sugar, red hot, and the butter. Simmer over medium heat until sauce reduces by half.

Pull the wings off the grill after 45 minutes and toss in the sauce, and then return to the smoker and let them cook for an additional 15 minutes.

Serve with your favorite dipping sauces or enjoy them plain.

Preheat the grill to 225 degrees.

Pat the chicken wings dry. Sprinkle the dry rub throughout.

Coat the grill grates on the smoker in olive oil using a cooking brush or towels to prevent sticking.

Place the wings on the smoker. Smoke for 2 hours.

I like for my wings to have a little char and I like them crispy. After 2 hours, adjust the temperature to 350 degrees. Cook for an additional 15-30 minutes until crisp. Flip halfway through.If you like sauced wings you can add the sauce during this step.

Remove the wings. Cool before serving.

Traeger Chicken Wings (Extra-Crispy!)

Preheat your Traeger or pellet grill to 225° Fahrenheit.

Add the seasonings to a small bowl and mix. Drizzle the wings with avocado oil and toss to coat. Dump the seasoning mix all over the wings and toss to coat as evenly as possible.

Place wings on the grill to smoke for 30 minutes.

After 30 minutes, turn the heat up to 450°. Flip the wings and cook for another 25-30 minutes, flipping every 5-6 minutes until fully cooked. Flipping helps to cook evenly and prevent burning. The wings are cooked through when they reach at least an internal temperature of 165° Fahrenheit. However, I prefer wings that are cooked to between 180°-190° and are crispy on the outsides.

While the wings are cooking, mix up the buffalo sauce if desired. After the wings are finished, toss them with the buffalo sauce to coat or serve it on the side for dipping.

These delicious wings are made on the pellet grill, cook in under an hour, and are one of the tastiest chicken wings I&#x27;ve ever had!

Toss with the oil and coat evenly with the Korean rub and the gochugaru.

Turn the grill on, and set it to 400°.

Make sure you WATCH THE WINGS and check them periodically. As with any recipe for the grill, you should cook to temp and what the food looks like and never, ever, ever according to a clock. The times are only there as a rough estimate.

Let the wings cook for another 30-45 minutes or until the chicken is fully cooked and the skin is as crispy as you like it.

Remove from the grill and toss with our Korean Wing Sauce.

Prepare the chicken wings by cutting them into parts and placing them in a large bowl.

Pat the wings down very well using paper towels until they are dry.

Start by mixing your rub with the baking powder until incorporated.

Pour the rub into the bowl with the chicken wings and mix until coated.

Place the chicken wings about a ½” inch apart from one another on a rack on a sheet tray.

Put the chicken wings uncovered in the refrigerator for 12 to 72 hours.

Preheat the smoker to 225°.

Place the wings onto the grates of the smoker about a ½” inch apart from one another and smoke until they reach an internal temperature of 150°.

Once they are done smoking, remove them from the smoker and briefly let them rest for 1 to 2 minutes.

Add the wings in batches to a deep fryer filled with neutral flavored oil at 350° and cook them for 2 minutes or until crispy and when they’ve reached 165° internally.

Or, you can cook the wings in batches over a hot grill between 450° to 550° for 1 to 2 minutes or until lightly charred and crispy.

Add the cooked wings from the fryer or the grill to a large bowl and coat in your favorite bbq sauce or buffalo sauce.

Serve them on a plate or platter.
