Caribbean Sorrel Drink

sorrel ((roselle/hibiscus sabdariffa))

water

cinnamon

star anise (, whole)

orange peel (, fresh (2-3 inches))

white sugar (,

Combine all ingredients, except the sugar, in a large pot.

Gently simmer for about 10 minutes, then remove from heat. Allow the mixture to sit for at least 30 minutes, up to 2 hours to infuse.&nbsp;&nbsp;

Strain the mixture into a glass pitcher. Set in fridge to chill.

When ready to serve, sweeten and/or dilute the mixture to your preference. Serve over ice.&nbsp;

Store unused portion in the fridge for up to 2 weeks. It is normal to see some sediment in the bottle after a few days.&nbsp;

Sorrel drink, also known as Zobo drink or Sobolo, is a tangy, refreshing, and satisfying drink that tastes amazing and is highly nutritious. Enjoy on a hot summer day or as a relaxing evening drink!

Sorrel Drink (Zobo Drink)

hibiscus leaves

tbsp chopped ginger

monk fruit sweetener (or sweetener of choice)

Pour the hibiscus leaves into a colander and rinse thoroughly under running water.

Chop the ginger into small pieces and the lemon in half.

Instructions

Add the sorrel to the instant pot.

Add 10 cups of water, lemon, ginger, and cinnamon sticks.

Set the instant pot to Manual and set it to 10 mins on high pressure.

When it is done, let it naturally release.

Strain the hibiscus leaves using a fine mesh strainer.

While it is still hot, add your choice of low carb sweetener and mix in.

Let it cool down and serve chilled.

To make in the instant pot

Add the sorrel to a pot on the strove.

Add 10 cups of water, lemon quarters, ginger, and cinnamon sticks.

Turn the heat to high and bring to a boil.

Turn the heat back to medium and let simmer for 15-20 minutes.

To make on the stove

Bring water to boil in a large pot. Add sorrel, ginger, orange peel, and allspice berries.

Remove from the heat and allow the sorrel to steep for 2 hours or cool and place in the refrigerator overnight

Strain the sorrel using a fine mesh strainer or a nut bag. Sweeten the sorrel drink with your favorite sweetener. Refrigerate and enjoy!

I did try making the sorrel drink recipe. However, my Jamaican and Trinidadian friends friends living in Bermuda suggested that in addition to your recipe I should add fresh spice leaves, lemon grass, sugar apple leaves , morengo (sp) leaves, etc.  This gave it a robust kick and a medicinal touch.  No alcohol.  Served in small quantities.  It was highly favored by my West Indian and Indian friends.    I also made the Jamaican fruit cake recipe and it was loved by all who tasted it.
