Combine pork belly, black pudding and bacon lardons in this Spanish rice dish. Meaty and filling, it feeds eight with little effort and is perfect for a cold night

Heat oven to 200C/180C/gas 6. Heat half the oil in a deep frying or sauté pan (or shallow <a href="https://www.bbcgoodfood.com/review/test-best-casserole-dishes">casserole dish</a>) measuring around 30cm in diameter. Over a high heat, colour the pork belly slices on each side in several batches, then transfer to a bowl. Add the remaining oil to the pan and lower the heat to medium, then add the black pudding and bacon and fry all over for several mins. Remove with a slotted spoon. <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">Fry</a> the onion and peppers for around 10 mins until soft and pale gold, then add the tomato and cook until soft. Add the garlic, smoked paprika and chilli flakes and cook for another 2 mins, then put the pork, black pudding and bacon back in the pan. Add the beans, stock and whichever herb you&#39;re using, and bring everything to the boil.

Sprinkle the rice around the pork belly, pushing it underneath the stock. Let the stock come to the&nbsp;boil again, season well, then transfer to the oven (leave it uncovered). Cook for 20 mins without stirring, then check to see how the rice is doing. The rice should be tender&nbsp;and the stock absorbed. If it&rsquo;s not ready, put back in the oven for another 5 mins, then check again. Taste for seasoning.&nbsp;

Squeeze lemon juice over the top and drizzle over some&nbsp;extra virgin olive oil just before serving, if you like.

The Puntillitas Fritas or fried baby squid as they are called in English is a very popular food from Southern Spain. 

Even though there is not a particular date of creation of this dish, it is believed that sailors from third-century A.C were the first ones to introduce different types of fried fish plates and since then they haven’t left the spotlight of Andalusian cuisine.

There is so much that you can do with potatoes as a side dish and Patatas Bravas is a traditional Spanish side dish that is perfect for tapas night.

Patatas Bravas

tomato puree

0.5 tsp chilli powder

sea salt and black pepper

parsley (to garnish)

Put the potatoes in a saucepan of boiling water and simmer for 7 minutes and drain.

Add the drained potatoes to a large baking tray with the olive oil, paprika and some salt and pepper and mix well. Roast in the oven at 190°C/350°F/Gas 5 for 35-40 minutes until the potatoes are cooked and crispy.

Heat a little oil in a pan and add the onion and garlic and gently cook for 4 minutes. 

Add the rest of the ingredients to the pan and stir and simmer for 10 minutes.

Put the potatoes in a bowl.

Top with the tomato mixture and garnish with parsley.

Heat the oil in a pan over a medium heat. Add the onion and pepper and cook for 2 minutes.

Add the rice and stir. Toast the rice in the pan for 2 minutes.

Add the rest of the ingredients (except the parsley). Stir and simmer for 15 minutes or until all the liquid has gone.

Remove from the heat, fluff up the rice with a fork and add the parsley.

250 g pork mince

In a large bowl, add all the ingredients for the meatballs.

Mix well and then form in to 20 meatballs.

Add some oil to a large frying pan and then brown them all all sides (this will take about 5 minutes). Remove them from the pan and set aside.

Start the sauce by adding some more oil to the pan and adding the shallots and garlic and gently cook for 2 minutes. Add the wine and then simmer for 2 minutes.

Add the rest of the sauce ingredients and simmer for 3 minutes.

Put the meatballs back in the pan with the sauce, mix well and simmer for 10 minutes until the meatballs are cooked through and the sauce has thickened.

Gambas al ajillo (Spanish Garlic shrimp)

raw shrimp

sweet Spanish paprika

dried chili flakes (add more if you

100 ml extra virgin olive oil

shot (60 ml fine sherry wine)

parsley (optional for garnish)

lemon (half of the zest)

prepare shrimp

Peel the shrimp completely, without the shells and heads, and season lightly with a pinch of salt. Soak in chilled water for 10 minutes.

Remove the shrimp from the water and set them aside. Meanwhile, peel the garlic and cut it into thin slices.

fry onions and garlic

In the skillet, set to medium heat, add half of the olive oil, and once hot add the finely chopped onion. Cook the onion until golden, then add the sliced garlic. Cook for around 3-4 minutes or until the garlic starts to golden slightly.

fry shrimp

Add the remaining oil and give it a minute to heat up. Add all of the shrimp and cook for around 3 minutes on each side or until golden.

add sherry and lemon

Once you flip the shrimp, add the sherry and a little lemon zest and stir occasionally to allow the shrimp to collect with the garlic and spices.

add chili (optional)

Add the chili, and toasted paprika, and stir through. Cook for another minute.

simmer lightly

Once everything has slightly browned, remove from the heat and sprinkle with some fresh parsley.

Either serve in small clay pots or just serve the skillet on a wooden chopping board. Always serve this dish with a mountain of fresh bread!

This recipe is easy to make, can be made in one pot, and comes together with little effort in under 45 minutes making it an ideal midweek dinner option.

Easy Spanish chicken thighs with chorizo and wine

extra virgin olive oil

chicken thighs

onion (diced fine)

3½ fl oz (100 milliliters red wine)

oz tomatoes (tinned or fresh)

oz beans butter

black and green olives (seeds removed)

tomato purée

rosemary

½ teaspoon dried chili flakes (optional

smoked paprika

chicken stock (premade

parsley (garnish)

lemon (garnish)

Salt and pepper (seasoning)

Season chicken with paprika and oil

Add the olive oil and chicken thighs to a pan and add half of the smoked paprika plus some salt and pepper for seasoning.

Rub all ingredients together then transfer chicken thighs to a plate.

Heat oil and brown chicken

Heat the pan on high heat and lightly brown the chicken thighs on all sides in batches to prevent crowding the pan. This should take around 8-10 minutes (2 batches). Once the chicken thighs are browned, transfer them to a plate for use later.

Step 1 - Season and sear chicken thighs

In the same pan, add the onion and garlic, and saute for 3-4 minutes. If the pan is dry, add a splash or two of chicken stock.

Add the chorizo pieces and fry for another 2-3 minutes or until the chorizo releases some of the red oil.

add paprika, rosemary, and tinned tomatoes. Simmer and add red wine.

Add the remaining paprika, chopped rosemary, and the tinned tomatoes and tomato puree. Simmer for 2-3 minutes, then add the red wine and continue to simmer for another 3 minutes. Add more chicken stock if the sauce is drying out.

Add broad beans and a little chicken stock as required.

Add the broad beans and mix through. Season to taste with salt and pepper and bring to a boil. Add a splash of chicken stock if the sauce is looking too thick or dry.

Step 2 - Fry veg and build sauce

add chicken pieces to the sauce. Cook for 10-12 minutes.

Reduce heat to medium and return the browned chicken pieces to the pan and cover with sauce. Add chili flakes on top (for some spice). Cover and simmer for 10-12 minutes or until the chicken is tender.

Step 3 - Add chicken thighs to sauce

Right before serving add the black and green olives and mix through. Remove the pan from the heat and allow to cool for 2-3 minutes before serving.

Garnish with some freshly chopped parsley and a generous squeeze of lemon and serve.

Step 4 - Garnish and serve

Amazing flavour. I added one chopped long red chilli and a red capsicum with the onion, and 200g of chorizo diced, and sweated down some spinach in the pan towards the end. Adding chicken stock as needed throughout (as per instructions) to keep the sauce to a consistent thickness is a good idea (don't chuck it all in at once - I used less than a cup all up). I forgot the lemon at the end but it was still gorgeous.
