Jasmine Rice

Tbsp Canola oil

chicken broth

heavy cream

oz cream cheese

salt & pepper

oz fresh spinach (coarsely chopped)

parmesan cheese (grated)

Monterey Jack Cheese (grated)

Saute rice in oil for 2 minutes. Add the broth, heavy cream, cream cheese, spices and bring to a boil. Simmer for 10 minutes.

Stir in the spinach, parmesan cheese and simmer for 10 more minutes.

Stir in the Monterey Jack cheese and serve.

How to make creamy Spinach Rice

Spanakorizo (Greek Spinach Rice) is an easy side dish or hearty main. Rice is cooked with fresh spinach, onion, dill, lemon and tomato to create a delicious pilaf that's a traditional recipe from Greece.

Greek Spinach Rice (Spanakorizo)

olive oil

onions (diced)

dill (or 1 tsp dried)

white long-grain rice

water

tomato paste

salt and pepper

of ½ a lemon

Heat the oil in a large pan over a medium heat, add the onion and gently cook for 7 minutes or until softened but not browned.

Add the spinach and half the dill and cook, stirring, until the spinach has wilted and any liquid has evaporated.

Stir in the rice, water and tomato paste, then bring to the boil.

Reduce the heat and simmer, covered, for 20 mins or until the rice has cooked and absorbed all the water. Add more water if necessary.

Stir in the remaining dill and lemon juice, and season with salt and pepper.

Greek Spinach Rice

Palak rice, also known as Spinach rice is a healthy variation of pilaf or pulao made with spinach puree, rice, onions, herbs and spices. This delightful recipe is ready in 30 minutes and makes for a nutritious meal when paired with salad, pickle or raita.

Palak Rice (Spinach Rice)

spinach spinach puree)

green chilies (- chopped)

ginger (- chopped)

garlic (- chopped)

tej patta (or Indian bay leaf)

cloves

cinnamon

green cardamoms

mace strand (- thin single mace strand and not the whole mace)

star anise (- optional)

cumin seeds

onion (or 1 medium onion thinly sliced or ⅓ cup sliced onions)

lemon juice (- optional)

salt

Rinse basmati rice till the water runs clear of starch. Then soak the rice grains in enough water for 20 to 30 minutes. Later drain the water and keep the soaked rice aside.

When the rice is soaking, rinse the spinach leaves very well and roughly chop them. You will need 3 cups roughly chopped spinach.

Now add the spinach leaves in a blender or grinder jar. Also add green chilies, ginger and garlic cloves (all roughly chopped). For a moderatly spicy rice add 2 to 3 green chilies.

Blend to a smooth puree. Keep covered aside.

Preparation

In a pressure cooker, heat oil. 

Add the following spices and saute them till they splutter - tej patta, cloves, cinnamon, green cardamoms, mace strand, small star anise and cumin seeds.

Next add thinly sliced onions. Stirring often saute the onions till light golden or golden.

Add the spinach puree. Stir and saute for 4 to 5 minutes on a low heat.

Add the rice and mix rice very well.

Add salt as required and water. 1 cup water gives an al dente rice. For a softer texture in the rice you can add 1.25 cups water. I added 1.25 cups water.

Stir very well. At this step you can also add a few drops of lemon juice.

Cover and pressure cook spinach rice for 8 to 9 minutes or 2 to 3 whistles on medium to medium-high heat.

When the pressure falls down in the cooker on its own, then remove the lid and gently fluff the rice.

Serve palak rice hot with a side salad or pickle or raita. While serving, if you want you can garnish with some chopped coriander or mint leaves.

For some protein you can also add pan-fried tofu or paneer. Garnish the spinach rice with either of these.

Making palak rice

Heat olive oil in a large saucepan over medium-high heat. Add onion and cook until translucent, 5-7 minutes. Add garlic and cook 1 minute more.

Stir in oregano, half of the dill, and spinach. Cook, stirring frequently, until spinach wilts, about 3 minutes.

Stir in the rice, the vegetable broth, and bring to a boil. Cover, reduce to medium-low and let simmer 20 minutes.

Uncover, stir in butter, lemon juice and zest, and remaining dill. Season to taste with salt and pepper.

Serve with feta cheese, if desired. Enjoy!

Palak rice or palak pulao is a healthy, delicious and colorful dish made of spinach, spices &amp; rice. It can be served without any side or with a salad or raita. Palak Rice Recipe | Indian Spinach Rice

rice (uncooked (basmati for instant pot))

Rinse rice and cook in a pot or cooker. Rice must be grainy and not mushy.

Wash palak thoroughly in lots of water. Drain completely. Add them to a small blender and puree to a smooth paste. You can also add few tablespoons of water to help blend smooth or alternately fine chop and use.

Heat a pan with oil, add cumin seeds and bay leaf.

When the cumin begins to sizzle, add garlic &amp; saute until it turns fragrant for about 40 to 60 seconds.

Add onion and green chilli . Saute until the onions turn golden.

Then add potatoes. Saute until they become tender. If needed sprinkle some water and cook.

Sprinkle garam masala, salt and turmeric. Pour palak puree and saute until the raw smell goes off.

Add mint leaves and saute for a min or two. Switch off the stove.

Transfer the cooled rice, squeeze in the lemon juice. Mix everything well. Taste test and add more salt if needed

Serve palak rice hot or warm.

How to make Palak Rice (Method 1)

Heat oil in a pot. Add cumin and bay leaf. When the cumin sizzles, saute ginger garlic paste.

Then add onions and green chilies. Fry until transparent. Add potatoes or any other veggies you intend to use. Stir fry for 2 to 3 mins.

Stir in the garam masala, salt and turmeric. Transfer the pureed palak and saute until the raw smell goes away.

When the mixture turns thicker, add uncooked rice.

If using pressure cooker, pour 1¾ cups water for basmati rice. (2 cups if using normal rice).  If cooking in a pot use 2 cups water.

Pressure cook on a medium high flame for 1 whistle for basmati rice. If using normal rice pressure cook for 2 whistles.

Release the pressure manually with the help of a spatula if using basmati rice.

Fluff up palak rice with a fork.

Method 2 - One pot Spinach Rice

This spinach rice dish is simple, easy and wonderfully comforting, without being heavy. Great as a side or as a vegetarian main.

water ((or vegetable stock, if you prefer))

lemon juice ((ie from 1/2 lemon, approx))

Remove any tough stems from the spinach and roughly chop the leaves. Slice the spring onion into thin slices and finely chop the red onion.

Warm a little over half the oil in a medium pan over a medium heat and add the spring onion and red onion. Cook the onions for a couple minutes to soften them without browning  (add a little more oil or reduce heat, if needed).

Add the spinach and wilt it down in the heat of the pan. Stir regularly and lift up the cooked spinach from the bottom to the top to help it wilt a little faster.

Once the spinach has all wilted down, add the rice and water or stock. Stir to combine and scrape down any spinach that has become stuck to the sides of the pan.

Once it comes to a simmer, cover and reduce the heat. Cook for around 20 - 25 minutes until the rice has cooked and absorbed the liquid.

Add the dill, the remaining oil and the lemon juice and stir to mix through. Serve either as it is or topped with a little crumbled feta on top.

One Pot Spinach Rice

Heat oil in a large skillet on medium heat. Add garlic and saute until fragrant for about 30 sec

Add spinach, beans, rice and cook for a couple of minutes. Now add water, chicken stock or vegetable stock (if vegan) and bring the mixture to a boil

Season with curry powder, salt and pepper. Adjust salt and pepper according to taste

Simmer the rice mixture for 18-20 min (or until rice is tender) on low heat with lid on

Spinach Rice and Chickpeas

(185 g) uncooked white basmati rice

ginger

garlic (minced (about 1 teaspoon))

hot green chile (such as serrano, finely chopped)

(230 g) frozen spinach (thawed and squeezed)

(90 g) chopped tomato

-1 teaspoon garam masala

(15-ounce [425 g]) chickpeas

bay leaves

(240 ml) water

Red pepper flakes

Rinse the rice, then soak in warm water to cover for at least 15 minutes while you begin the recipe.

Put the oil in the Instant Pot and tilt the pot to coat the bottom. Add the ginger, garlic, green chile, spinach, tomato, garam masala, chickpeas, bay leaves, salt, and water. Drain the rice, add it to the pot, and give it a good stir.

Lock the lid into place, set the Pressure Release Knob to Sealing, select the Pressure Cook/Manual setting at high pressure, and set the cook time to 5 minutes.

Once the cooking cycle is done, let the pressure release naturally for 8 minutes, then carefully set the Pressure Release Knob from Sealing to Venting to release any remaining pressure. Open the lid and fluff the rice. Remove the inner pot (to keep the rice from continuing to cook) or transfer the rice to a serving bowl.

Garnish with lemon juice, red pepper flakes, and cilantro.
