A simple authentic  Nuoc Cham Recipe - the flavorful Vietnamese dipping sauce and dressing for salads, spring rolls and noodle bowls. Vegan adaptable!

Nuoc Cham Recipe | Vietnamese Dipping Sauce

sugar (or honey, agave

water

lime juice

fish sauce (or vegan fish sauce)

chilies

In a small bowl or jar, stir sugar and warm water until sugar dissolves. Add lime juice and fish sauce and few sliced fresh chilies. The chilies will infuse the dressing with heat.

For a vegan version sub 3 tablespoons soy sauce for the fish sauce or try making the vegan fish sauce.

Made Nuoc Cham last night for our lettuce wraps. My partner nearly guzzles the stuff, it's that good. He's not a cook but he's happy to make this sauce. We used sugar; next time we'll try it with honey.

5 Minute Thai Peanut Sauce

peanut butter

soy sauce

Tablespoons rice wine vinegar

sesame oil

Tablespoons chili garlic sauce

½ Tablespoons agave

ginger

⅛ tsp Thai chili pepper flakes (optional for spice)

Add all the ingredients together in a small bowl and whisk until smooth. If you want a thinner consistency, add more hot water a tablespoon at a time. Serve as a spring roll dipping sauce, peanut noodle sauce, or alongside satay.

Add the red pepper flakes to the mixture. Adjust the quantity based on your desired level of spiciness.

Stir in the honey to add sweetness to the sauce.

Add the minced garlic to enhance the flavor. You can adjust the amount based on your preference.

Mix in the finely chopped green onion for a fresh and aromatic touch.

Finally, sprinkle sesame seeds into the sauce for added texture and nuttiness.

Whisk all the ingredients together until well combined.

Allow the sauce to sit for a few minutes to let the flavors meld.

Classic creamy Vietnamese peanut sauce for fresh spring rolls and summer rolls. This recipe makes about 2 cups.

Vietnamese Peanut Dipping Sauce for Spring Rolls (Tương Chấm Gỏi Cuốn)

neutral oil

water chicken stock

hoisin sauce

unsalted toasted peanuts (optional)

Sriracha chili sauce (optional)

Fry the garlic

In a small pot, heat oil on medium-high. Add garlic and sauté until fragrant (about 20 seconds).

Make the sauce

Add water or low-sodium stock and peanut butter. Whisk until smooth. Mix in hoisin sauce. Simmer on low for about one minute or until the mixture begins to bubble. Remove from heat. If too thick, whisk in a little bit more water/stock. If too thin, let it simmer a little longer for some moisture to evaporate. Keep in mind that the sauce will thicken as it cools.

Serve

Transfer to individual sauce bowls, top with a sprinkle of toasted peanuts (optional) and a drizzle of Sriracha chili sauce (optional). Serve with spring/summer rolls.

I made this recipe with regular peanut butter and it tasted just like my favorite peanut sauces at thai and vietnamese restaurants!

Vietnamese Pork & Shrimp Spring Rolls with Peanut Sauce (Gỏi Cuốn Tôm Thịt)

Healthy rolls that taste just like your favorite Asian restaurant makes!! Fill them with your favorite veggies along with shrimp, chicken, or tofu - totally customizable! The homemade peanut sauce for dipping is AMAZING!!

Fresh Spring Rolls with Peanut Sauce

honey (or

sesame oil (or

apple cider or rice vinegar

ginger (or to taste)

salt

black pepper (or to taste)

coconut milk (canned

shrimp

rice paper wrappers

cucumber

red (orange

carrots (use a store bought bag to save time)

basil

To a medium bowl, add all peanut sauce ingredients and whisk to combine until smooth and incorporated. Taste, check for seasoning and flavor balance, and make any necessary adjustments (i.e. more honey, more peanut butter, more salt, more sesame oil, etc.). If you like your sauce on the thicker side you may want to omit the coconut milk.

Garnish with peanuts and set aside to serve with spring rolls.

Peanut Sauce:

Clean, peel, and devein the shrimp. Add to a small kettle of salted boiling water. Allow shrimp to cook for about 2 to 3 minutes, or until just pink and opaque; don't overcook them. Small to medium-sized shrimp — which is what you want for this recipe — cook very quickly. Immediately submerge them in an ice bath after cooking; set aside.

To a large bowl, add lukewarm tap water. Working one at a time, dip one rice paper wrapper into the water until just beginning to soften. Wrappers will continue to soften even after they're out of the water and are impossible to work with when they're too soft so don't over-soak them.

Have all vegetables pre-chopped and within easy reach on your countertop.

Lay the softened rice paper wrapper onto your counter or cutting board and to the bottom one-third of the wrapper add about 3 shrimp, a few pinches of the lettuce mixture, a small bundle each of cucumbers and bell peppers, a pinch of carrots, a few basil leaves, and roll up like a burrito, tucking the ends in, and then rolling straight up.

Place completed rolls on a serving platter, making sure they do not touch.

Repeat steps 3 and 4 until all shrimp are used.

Serve immediately with peanut sauce.

These are fantastic--and the peanut sauce is where it's at for me!  I know what you mean about not over soaking the wrappers....a few of mine looked kind of sad!
