All of the sweet and caramely goodness of a traditional apple crisp, stuffed and baked inside fresh Autumn apples with the best crumble topping. Top it off with vanilla ice cream and caramel sauce for an incredible fall treat everyone will go crazy for!

Apple Crisp Stuffed Baked Apples

apples ((I used fuji apples))

butter

brown sugar

cinnamon

flour

oats

sugar

salt

Preheat oven to 400 degrees.&nbsp;First, prepare the crumble topping. In a medium bowl whisk together flour, oats, brown sugar, sugar, salt, and cinnamon. Cut in the butter with a pastry knife, or two forks, or with your hands until mixture is crumbly. Set aside.

Peel and chop 4 of the apples. Add chopped apples, butter, brown sugar, and cinnamon to a medium sauce pan and sauté over medium heat for 8-10 minutes or until apples are tender. Remove from heat.

Chop the tops off of the remaining 4 apples and use a spoon to scoop out the flesh. Discard the flesh or save it for another recipe.(See Note) You don't need to get every little bit out, just enough to make a "bowl" for the filling.

Fill scooped-out apples with apple filling from the sauce pan. Top with a generous amount of crumble topping.

Place stuffed apples on a baking sheet and bake for 10-15 minutes until crumble topping is crispy. Serve warm and top with ice cream and caramel sauce if desired. Enjoy!

These gooey beauties are made with minimal ingredients and taste just like an apple crumble! Top them with my healthy custard or some vegan vanilla ice cream for an extra pop of flavor!

Oatmeal Stuffed Baked Apples with Healthy Vegan Custard

Apples (any flavor will work!)

Rolled Oats

tbsp Almond Butter (or other nut

Cinnamon

tbsp Coconut Shreds

tbsp Maple Syrup

tbsp Coconut Oil (or plant milk

Almond Milk

Vanilla

¾ tbsp Cornstarch (mixed

Start by coring your apples. Slice off the top and remove the inside. You can remove the core with an apple corer then scoop out the flesh or use an ice cream scoop and rotate it around until the hole is big enough to fit the oatmeal filling.

In a small bowl mix together the rest ingredients until the oats are well coated.

Stuff your apples with your oatmeal mixture and pat it down so it all fits inside.

Place your apples onto a baking sheet along with the tops and bake at 375f for 25-30 minutes, until the apples are soft and gooey and the oatmeal filling is golden.

5 minutes before the apples are finished make the healthy vegan custard.

Add the plant milk, maple syrup and vanilla into a small pot over medium heat and bring to a simmer.

Mix together your cornstarch and water in a small bowl to make a slurry then add your slurry into the pot, whisking continuously until it thickens.

Pour your custard over your baked apples or top with some vegan vanilla ice cream!

Stuffed Caramel Apples with Chocolate Drizzle

apples (sliced, half and cored (I used Empire apples))

dulce de leche

chocolate chips (melted)

white chocolate chips (melted)

peanuts

tbsp shredded coconut

tbsp toffee bits

cinnamon sugar

If you didn't buy storebought dulce de leche, submerge a can of sweetened condensed milk in a large pot of water with the label removed, and keep on a slow boil for 3 hours, filling up pot with water every half hour or so as necessary. Let can cool for at least 30 min before opening and using.

Cut apples in half and cut out the core. Add dulce de leche and drizzle with melted chocolate, then top with your favourite toppings. My favourite combo is caramel and shredded coconut!
