Easy and quick to make, absolutely incredible pan-seared salmon fillets stuffed with a deliciously creamy spinach and artichoke dip.

Stuffed Salmon with Spinach and Artichoke Dip

olive oil

salmon

salt and fresh ground pepper (to taste)

garlic, (minced)

baby spinach leaves

(14-ounces) artichoke heart quarters, (roughly chopped)

cream cheese, (room temperature)

Tablespoons plain yogurt

Parmesan cheese

red pepper flakes, (optional)

salt and fresh ground pepper, (to taste)

butter

lemon juice

Season salmon all over with salt and pepper.

Using a paring knife, slice a slit on the side of each salmon fillet to create a pocket; set aside.

FOR THE SALMON FILLETS

Heat olive oil in a skillet.

Add minced garlic and cook for 15 seconds.

Stir in spinach and cook for 1 minute.

Add artichoke hearts.

Stir in cream cheese, yogurt, parmesan cheese, and season with pepper flakes, salt and pepper; cook just until creamy.

Remove from heat and let cool for a minute or two.

FOR THE SPINACH AND ARTICHOKE DIP

Stuff the fish pockets with the prepared dip.

Heat olive oil in a large skillet over medium-high heat.

Add salmon fillets to the skillet, skin-side down, cooking 2 fillets at a time.

Cook for 6 minutes, or until cooked about three quarters of the way through. Do not move the fish around.

Using a spatula, carefully flip over the salmon fillets.

Add butter and squeeze lemon juice all over the fish; continue to cook for 5 more minutes. (Use 1 tablespoon of butter and 1 tablespoon of lemon juice per 2 fillets)

Repeat with the rest of the fillets.

Serve.

Creamed Spinach Stuffed Salmon Will Be Your New Favorite Weeknight Dinner

Creamy Spinach Stuffed Salmon in garlic butter is a new delicious way to enjoy salmon! Filled with cream cheese, spinach, parmesan cheese and garlic, this salmon beats anything found in a restaurant. A low carb salmon recipe that includes pan fried AND oven baked methods!

Creamy Spinach Stuffed Salmon

salt and pepper to season

olive oil (divided)

unsalted butter

oz (120 g) cream cheese (at room temp)

oz (120 g) frozen spinach (thawed)

parmesan cheese

Salt and pepper,

Place each salmon fillet on a flat surface. Season both sides with salt, pepper, 1 tablespoon olive oil and lemon juice. Cut a slit or pocket about 3/4 quarter of the way through, being careful not to cut all the way.

Squeeze excess liquid out of the spinach discard liquid. In a medium-sized bowl, mix together the spinach, cream cheese, parmesan cheese and garlic. Season with salt and pepper.

Fill salmon 'pockets' with 1-2 tablespoons of the spinach dip, spreading evenly with the back of the spoon.

Heat butter and remaining oil in a skillet (or non stick pan) over medium-high heat. Add the salmon and fry until golden (about 6 to 7 minutes). Carefully flip and allow to cook on the other side until golden and cooked through (another 6-7 minutes, depending on the size of your fillets).

Optional: cover with a lid and continue cooking for a further 2-3 minutes, if necessary, until cooked through.&nbsp;

Transfer to a warm plate to make garlic butter.

Garlic Butter: Melt the butter in the remaining oil/juices in the pan leftover from the salmon. Add the garlic and lemon juice; saute until garlic is fragrant (about 30 seconds). Remove and serve with the salmon.

For Stove Top:

Preheat oven to 350°F (175°C). Place stuffed salmon fillets in a shallow lightly greased baking pan.&nbsp;Bake for 10-15 minutes or until salmon is cooked through,&nbsp;opaque in&nbsp;centre&nbsp;and flakes easily with fork.&nbsp;

Pour pan juices out into a skillet or frying pan.&nbsp;Add butter, garlic and lemon juice; saute until garlic is fragrant (about 30 seconds). Remove and serve with the salmon.

cream cheese softened (use regular not whipped)

mayonnaise

baby spinach (cooked

Preheat oven to 350 degrees

cook spinach in a little bit of water till fully cooked, take off the heat and allow to cool

When spinach is cool squeeze out all of the water from the spinach (excess water will make the stuffing loose)

in a mixing bowl add in the softened cream cheese, mayonnaise, egg and old bay seasoning. Whip together until well blended.

fold in the spinach, roasted peppers, shredded mozzarella and crab meat (make sure crab meat has been well-drained, squeezing out any excess water). Mix gently and if the mixture is too loose you may add a little bread crumb to tighten it up.

place salmon on a baking sheet and season with salt and pepper

portion stuffing out and place on top of salmon fillet, then sprinkle breadcrumbs on top.

Stuffed Salmon Recipe with Shrimp and Crab is an indulgent restaurant-style meal that is perfect for a special occasion. It is a delicious dish and you can easily make it at home. Elevate your salmon repertoire with this easy shrimp and crab stuffed salmon.

Crab &amp; Shrimp Stuffed Salmon Recipe

center cut salmon filets,

raw shrimp, peeled and deveined with tails removed, chopped into ½" pieces

oz lump crab meat,

butter oil

¼ cup bell peppers (red, green,

egg, lightly beaten

garlic cloves,

parsley,

¼ teaspoon of paprika (or Old Bay seasoning)

panko breadcrumbs

Kosher Salt and Black Pepper, to taste

Lemon wedges

Place the salmon fillets on a large cutting board and pat dry with paper towels. Drizzle both sides of the salmon fillets with 1 tablespoon of olive oil. Season with kosher salt and freshly ground black pepper, to taste.

Cut a pocket into the thick top part of each of the fillets, only going about 3/4 of the way through. Be careful not to cut all the way through the fillet. Set aside.

In a large pan, melt 1 tablespoon of butter or olive oil over medium heat. Add minced garlic cloves, stirring often, until soft and fragrant (but not brown), about 1 minute. Stir in chopped shrimp and cook, stirring often, until opaque about 2-3 minutes. Do not overcook as they will also cook in the oven. 

In a small bowl combine the cooked shrimp, lump crab meat, lemon zest, lemon juice paprika, beaten egg, panko bread crumbs, and bell peppers. Season with salt and pepper, to taste.

Arrange salmon fillets skin side down on parchment or on a sheet pan sprayed with oil, or in a lightly buttered baking dish. Pull the slit apart to fill it with the shrimp and crabmeat stuffing. Spoon a couple of heaping tablespoons of the mixture into the slit, allowing it to spill out the top of the salmon.

Bake the stuffed salmon fillet for about 15 minutes at 400 degrees F. The tops will be slightly golden. 

Serve immediately with lemon wedges and parsley for garnish. I like to serve it with a simple salad and crusty bread.

Mix the softened cream cheese in a small bowl with the parsley, dill, old bay, lemon zest, salt, and pepper. Mix well to combine. Make a slit down the center of each fillet, then spoon the shrimp mixture into the slit (it will mound up a little).

Bake for 11-14 minutes, depending on how cooked you like your salmon.

Serve immediately.

Claire! This recipe was so delicious! I make salmon frequently and shrimp fairly often too but I never think of putting them together. Every time I think about this dish, I start drooling. Definitely a keeper!

This was tasty. I used lemon pepper in place of regular pepper, and it really brought out the salmon flavour. Next time I think I may add a tablespoon or two of maple syrup for a nice glaze!
