Sugar Free Oatmeal Cookies are healthy oatmeal cookies with oats, flaxseed, bananas, coconut oil, dried fruit and no flour or sugar. Truly sugarless, gluten free and vegan!

Sugar Free Oatmeal Cookies {Easy, No Chill, Healthy Recipe}

tbsp flaxseed (ground)

water (room temperature)

large over ripen bananas

coconut oil (melted)

tsp pure vanilla extract

cinnamon

tsp baking soda

tsp salt

rolled oats (use certified GF, if necessary)

oat flour (use certified GF, if necessary)

mixed nuts & seeds (chopped, if too large)

Medjool pitted chopped dates raisins

Cooking spray (I use Misto)

In a small bowl, whisk flaxseed and water. Let sit for about 10 minutes while you are getting other ingredients ready.

Preheat oven to 350 degrees F, line large baking sheet with unbleached parchment paper and spray with cooking spray.

In a large bowl, mash bananas. Add coconut oil, vanilla extract, cinnamon, baking soda and salt. Add flaxseed mixture and whisk really well.

Add oats and oat flour; stir to combine. Add nuts and dried fruit; mix well. Dough will be very thick.

Using large ice cream scoop, place batter on previously prepared sheet and flatten with the back of a scoop into large size cookies. Cookies do not spread. I had about 6 cookies per sheet. Bake in batches for 20 minutes or until nuts start to brown a bit.

Remove from the oven and let cookies cool for a minute, then transfer onto a cooling rack to cool off completely.

Easy to make egg free cookies made low carb and gluten free. These coconut flour cookies are a simple treat that take little time to prepare.

Add all ingredients to food processor and pulse until a dough is formed.

Divide dough into 16 small balls and place them evenly on a parchment paper lined baking pan. Press each ball down to shape into cookies.

Bake in a 365F preheated oven for about 7-9 minutes or until edges of cookies have begun to brown.

Keto Snickerdoodles Cookie Recipe

Unsalted Butter (softened)

Preheat your oven to 175C/350F. Line a cookie sheet with parchment paper and set aside.

In a large mixing bowl, add the butter, egg and vanilla. Beat with your hand mixer until fluffy - about 4-6 minutes.

Add the remaining ingredients, except for the coating, and gently fold together until just combined.

In a small bowl, mix together the erythritol and cinnamon for the coating.

Use a cookie scoop to portion the mixture, roll each portion into a ball, then roll the ball into the coating. Place onto the cookie sheet and press down lightly. Repeat for the remaining cookies.

Chill for 1o minutes.

Bake for 10-14 minutes until the cookies are firm around the edges. Leave to cool on the cookie sheet.

Once cooled, enjoy!

Keto Snickerdoodle Recipe - Easy To Make Low Carb Cookies "Yum" (Gluten Free)

These easy hazelnut cookies have only 5 ingredients! They are light and fluffy on the inside, crunchy on the outside and perfect with a cup of coffee.

Hazelnut Flour Low Carb Keto Cookies

hazelnut meal (ground hazelnuts (90 grams))

tbsp powdered erythritol (or equivalent sweetener)

vanilla stevia glycerite ((equivalent to 2 tsp sugar))

vanilla

hazelnuts (to decorate)

Whip the egg whites until they form stiff peaks.

Fold in the hazelnut meal, erythritol, stevia and vanilla until well combined. I don’t like my cookies too sweet, so do make sure to taste the dough and adjust the sweetener to your liking.

With a spoon, drop the dough on a silicone baking sheet or a baking sheet lined with parchment paper. Flatten to your liking.

Bake at 160° Celsius (320°F) for 25 minutes or until lightly browned.

Let the cookies cool before touching them. They firm up as they cool down.

Makes 20 smallish cookies

Sugar Free Walnut Cookies

175 g / a generous 1 1/2 cups coarsely ground walnuts

Preheat your oven to 180 Celsius

Beat the egg with the sweetener and cinnamon

Add the ground walnuts

Have a little taste! If you have a sweet tooth, you may want to add another teaspoon of sweetener.

Form little balls and place on a baking sheet (I greased mine with walnut oil - I would have used baking paper had I not run out)

Bake for 10 minutes or until nicely browned

Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or silicon mat and set aside.

In a large mixing bowl, add the almond butter, egg, and vanilla. Using an electric hand mixture, cream everything together until combined.

Add all remaining ingredients to the bowl and mix again using your hands.

Scoop out a heaping Tbsp and form into tight balls then flatten to about 1/2 an inch thick. Place onto lined baking sheet. Repeat until all of the cookie mixture is gone.

Bake cookies for 10-12 minutes. Let cool completely before serving. ENJOY!

You can watch the short video for visual instructions.Line a baking sheet with parchment paper and preheat the oven to 350 F (175 C). At the same time, prepare the flax egg by combining the ground flaxseed and water, mixing well, and setting it aside for 5 minutes.

Add all dry ingredients to a bowl and stir to combine.

Pour in the wet ingredients (also the flax egg) and mix thoroughly.

Spoon the batter on the baking sheet, using a tablespoon per cookie.

Bake for 15 minutes, then let cool completely. Enjoy!

Thank you for sharing this recipe. I am 3 years post bariatrics sleeve. I have to be extremely careful with calories and sugars. I modified this cookie recipe slightly. Instead of pre-made peanut butter, I replaced it with 1 cup of powdered peanut butter (Walmart brand). I can't tolerate egg whites, so I used yoke only. 
By doing this I was able to reduce the carbohydrates and calories per cookie even more.

These easy Keto lemon cookies are the perfect combination of tart, zesty and sweet. A must make for lovers of summer and of all things lemon!

Keto Lemon Cookies

tbsp powdered erythritol ((6 tbsp if you like a sweet cookie))

egg (medium)

almond flour (use 2 tablespoons less for super-fine almond flour)

tbsp lemon juice ((1 large lemon))

lemon

powdered erythritol

lemon juice

lemon zest,

Cream the butter, cream cheese, 4 tbsp lemon juice and lemon zest together with the powdered erythritol until smooth. Use a food processor or an electric mixer.

Add the egg and mix until well-combined. Last, add the almond flour and mix.

The dough is fairly soft at this stage. Wrap it in cling film and place either in the fridge for 20 - 30 minutes or in the freezer for about 10 minutes.

Pre-heat the oven to 180 Celsius / 356 Fahrenheit.

Line a baking tray with parchment paper. Form 12 cookie dough balls and place them on the tray, flattening them slightly with your hand.

Bake for 15 minutes or until lightly browned at the bottom (and ever so slightly browned on top).

Remove from the oven and let cool completely.

Stir together the lemon juice, powdered erythritol and lemon zest for the glaze and spread over the cooled cookies.
