Maple syrup and tarragon are wonderful enhancements for the flavor of sweet potatoes. It's an especially delicious addition to the Thanksgiving meal.

Maple and Tarragon Sweet Potatoes

maple syrup

orange juice

Preheat the oven to 350 degrees F.

Arrange the sweet potato slices in overlapping rows in an oiled shallow 2-quart casserole.

In a small bowl, combine the syrup, Earth Balance, juice, cinnamon, and salt. Pour evenly over the potatoes. Sprinkle the tarragon over the top.

Cover with lid or foil and bake, covered, for 25 to 30 minutes, or until the sweet potatoes are readily pierced with a fork, but are still firm.

Bake for 20 to 25 minutes longer, uncovered, or until glazed and golden around the edges. Cover and keep warm until needed, then serve from the casserole.

Contemporary Candied Sweet Potatoes

orange juice (preferably freshly-squeezed)

maple syrup or agave nectar

cinnamon (or more, to taste)

nutmeg

Preheat the oven to 375 degrees F.

Combine all the ingredients except the last two in a large mixing bowl. Stir until well combined.

Add the sliced potatoes and stir well, then transfer to a shallow 1 1/2 -quart round or 9- by 13-inch baking dish.

Bake, covered, until the sweet potatoes are just tender, about 40 minutes.

Stir once or twice during that time to distribute the liquid over the potatoes.

Don't worry if the potatoes break apart. If desired, sprinkle the nuts over the sweet potatoes at this time.

Bake uncovered for an additional 10 to 15 minutes, or until the glaze thickens. Cover and keep warm until ready to serve.

Garlic Honey Roasted Sweet Potatoes are a sweet and savory side dish of cubed sweet potatoes that are perfectly seasoned and glazed with butter, honey, and garlic!

Roasted Sweet Potatoes

potatoes,

butter, (melted)

garlic, (minced)

honey

rosemary

Salt and black pepper, (to taste)

Preheat oven to 375˚F.

Transfer the cubed sweet potatoes to a rimmed baking sheet and set aside.

Melt the butter, then whisk the garlic and honey into the melted butter. Drizzle the butter mixture over the potatoes; season with rosemary, salt, and pepper and toss to coat evenly.

Arrange the sweet potatoes in one single layer and roast for 25 to 30 minutes or until tender.

Remove from oven. Taste them for salt and pepper and adjust accordingly.

Serve.

I love this sweet and savory take on sweet potatoes. You can do so much more with them than just make casserole!

I made these the very first week I was trying to eat vegetarian. Not only did I sail through the first several days because I had these already prepped and ready for any meal- but when (inevitably) I wobbled and ate a cheeseburger, I was able to get right back on the horse the next day. Today I added some fresh ginger and some whole pistachio’s ( near the end of cooking).  I’m generally not a fan of rosemary in savory dishes, but they add an exquisite brightness to this slightly sweet and savory dish!  Thank you for this dish!

Candied Sweet Potatoes

bourbon

Preheat oven to 375 degrees F.

In a skillet, combine butter, brown sugar, bourbon, cinnamon, cloves, nutmeg, and pepper. Heat over medium heat for about 2 minutes after the butter has melted, stirring once.

In a large 13x9 baking dish, or skillet, add sliced potatoes. Pour melted butter mixture over the top and stir to combine. Sprinkle with fresh thyme. Cover dish with foil and bake for 20 minutes.

Remove foil, stir potatoes, and bake uncovered for an additional 20 minutes, or until potatoes are tender.

Allow dish to cool about 10-15 minutes before serving.

Slow Cooker Garlic Sweet Potato Mash

butter

garlic (crushed)

1% milk

sour cream

salt and fresh cracked ground pepper (to taste)

Place the sweet potatoes in the slow cooker and add just enough water to cover them.

Add salt to the water, then cover and set the slow cooker to 4 hours on LOW.

Just before the potatoes are ready, melt the butter in a small saute pan and sauté garlic until lightly golden.

Drain the potatoes in a colander and return them to the slow cooker.

Pour the garlic butter over them, add milk and sour cream and mash until smooth and creamy.

Adjust salt and pepper to taste and keep the slow cooker set to warm until ready to eat or up to 2 hours.

This is a good recipe, but I've found that it is even easier to do in the pressure cooker. Instead of the slow cooker just cook on high pressure for 3 minutes with a quick release.

Hi Gina - I have made this recipe for the past 6ish Thanksgivings and I look forward to it every year. This will be  my first time using the slow cooker, though. I'd like to double the recipe to ensure leftovers. Any idea if that will change the cook time?
