Chicken Salad With Tarragon Mayonnaise

chicken,

carrots

celery,

parsley, chopped

onion,

tarragon leaves

salt and pepper

tarragon vinegar (or more or less to taste)

mustard

olive oil

safflower oil

Remove any loose fat from the cavity of the chicken. Place the chicken in a large pot and add the neck, carrots, celery, parsley, onion and a few tarragon leaves. Season with salt and pepper and bring to boil. Simmer for 45 minutes, or until the chicken is cooked. Cool. (Freeze the cooking liquid for recipes requiring chicken stock.)

Meanwhile, make the mayonnaise. Beat the egg yolks until thick and sticky. Add the vinegar and mustard and mix thoroughly. A few drops at a time, add the olive and safflower oils, until the emulsion has thickened into a mayonnaise. Stir in the remaining tarragon leaves and season with salt and pepper.

Skin the chicken and cut the flesh into fairly thick strips. Toss the chicken in the tarragon mayonnaise until everything is thoroughly mixed. Correct seasonings.

Bring vinegar to a boil in a small saucepan.

Place tarragon leaves into a clean jar.   Pour in the vinegar and place a lid on the jar.

Store in a cool, dark place for 2 weeks.  Begin tasting after about a week, to check for your desired flavor.

When it tastes good to you, strain out the leaves and pour the vinegar into a lidded jar or bottle.

Thoroughly wash and dry the tarragon and a glass bottle. Place the 6 sprigs of tarragon in the bottle.

In a sauce pan, bring the vinegar to a boil. Once boiling, remove from the heat and pour the vinegar into the bottle using a funnel.

Cool to room temperature, then store in refrigerator or pantry for 10 days to allow the flavor to develop.

After the 10 days, you can replace the tarragon with new fresh tarragon so it&#8217;s bright green, or leave the existing herbs. Store in a cool dry place for up to 6 months.
