TARTARE DE SAUMON

Enlever la peau du filet de saumon, et le passer sous l'eau pour enlever d'éventuelles écailles.

Peler un oignon et le hacher finement au mixer. Couper le filet en six morceaux et les passer au mixer avec les oignons, 2 cuillères à soupe d'huile d'olive, deux pincée de sel, un tour du moulin à poivre, et deux cuillères à café de jus de citron. Ne pas trop mouliner le saumon afin d'obtenir une structure pas trop fine.

Placer la préparation dans un saladier, couvrir et mettre au frigo pendant 2 heures. Servir frais avec du beurre et des toasts.

Chi Kofte (Armenian Steak Tartare) also has a Lebanese cousin called Kibbeh Nayyeh. They are nearly identical, featuring raw meat and bulgur wheat, but are shaped and served differently. With this recipe you can easily make both variations!

Start by making the gheyma. Heat the butter in a medium skillet over medium-high heat. When melted add the ground beef, stirring and breaking up into small pieces. When the beef has started to brown but is not completely cooked yet, add the onions and season with salt, pepper, and paprika. Continue to cook until the beef is well-browned and cooked through. Taste and adjust seasoning as desired. Stir in the parsley and remove from the heat. The gheyma can be made ahead and reheated as needed. It can also be frozen.

For the salad, mix together all the ingredients and set aside until ready to serve. It will be quite juicy.

Fill a small bowl with some water to use to wet your hands as needed during the mixing and shaping process. In a large mixing bowl, soak the bulgur with the 1 ½ cups cold water for about 15 minutes until absorbed but still wet. Add the meat and mix thoroughly with your hands. Season with salt, paprika, and pepper and mix well.  Mix in ¼ cup scallions and ¼ cup chopped parsley.

To shape the kofte, dip your hands in the water and grab a small handful of the mixture. Form it into a ball and then lightly begin to make a fist with your hand to make it a bit more oblong (but not completely flat) and leave finger imprints on one side. Place on a serving dish, dip your hands in water and repeat the process until all of the mixture has been used to form koftes. Garnish with the remaining green onions and parsley and serve with the gheyma, salad, and olive oil (if desired) on the side for topping.

tbsp flatleaf parsley, chopped

tbsp snipped chives

fresh white breadcrumbs,

lemon wedges and watercress, to serve

Mix together 125ml mayonnaise, 1 rounded tbsp roughly chopped capers, 1 rounded tsp creamed horseradish, 1 rounded tsp Dijon mustard, 1 small very finley chopped shallot and 1 tsp finely chopped flatleaf parsley. Set aside.

Lay 450g skinned Icelandic cod or haddock fillet and 2 bay leaves in a <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a>. Pour over 150ml milk and 150ml water.

Cover, bring to a boil, then lower the heat and simmer for 4 mins. Take off the heat and let stand, covered, for 10 mins to gently finish cooking the fish.

Meanwhile, <a href="https://www.bbcgoodfood.com/content/test-five-best-peelers">peel</a> and <a href="https://www.bbcgoodfood.com/content/top-five-paring-knives">chop</a> 350g Maris Piper potatoes into even-sized chunks. Put them in a <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> and just cover with boiling water. Add a pinch of salt, bring back to the boil and simmer for 10 mins or until tender, but not broken up.

Lift the fish out of the milk with a slotted spoon and put on a plate to cool. Drain the potatoes in a <a href="https://www.bbcgoodfood.com/content/test-five-best-colanders">colander</a> and leave for a min or two.

Tip the potatoes back into the hot pan on the lowest heat you can and let them dry out for 1 min, mashing them with a fork and stirring so they don't stick. You should have a light, dry fluffy mash.

Take off the heat and beat in 1 rounded tbsp of the sauce, then ½ tsp lemon zest, 1 tbsp chopped flatleaf parsley and 1 tbsp snipped chives.

Season well with salt and pepper. The potato should have a good flavour, so taste and adjust to suit.

Drain off liquid from the fish, grind some pepper over it, then flake it into big chunks into the pan of potatoes.

Using your hands, gently lift the fish and potatoes together so they just mix. You'll only need a couple of turns, or the fish will break up too much. Put to one side and cool.

Beat 1 egg on a large plate and lightly flour a <a href="https://www.bbcgoodfood.com/content/test-five-best-chopping-boards">board</a>. Spread 85g fresh white breadcrumbs on a <a href="https://www.bbcgoodfood.com/content/kimberley-wilsons-top-5-baking-trays">baking sheet</a>. Divide the fish cake mixture into four.

On the floured board, and with floured hands, carefully shape into four cakes, about 2.5cm thick. One by one, sit each cake in the egg, and <a href="https://www.bbcgoodfood.com/content/test-best-pastry-brushes">brush</a> over the top and sides so it is completely coated.

Sit the cakes on the crumbs, patting the crumbs on the sides and tops so they are lightly covered. Transfer to a plate, cover and chill for 30 mins (or up to a day ahead).

Heat 3-4 tbsp vegetable or sunflower oil in a large frying pan. To test when ready, drop a piece of the dry breadcrumbs in - if it sizzles and quickly turns golden brown, it is ready to use.

Fry the fish cakes over a medium heat for about 5 mins on each side or until crisp and golden. Serve with the rest of the sauce (squeeze in a little lemon to taste), lemon wedges for squeezing over and watercress.

‘Yukhoe’ is a Korean variation of western Beef Tartare. On Cook Like a Chef, chef-host Katie Ardington is inspired by the original to present a version anyone can master at home. The trick for perfect slices of raw premium beef tenderloin? Freeze the beef for just long enough to firm it up. Next? Make a Korean style dressing with soy, sesame, ginger, garlic, and pungent gochujang chili paste. Her version is garnished with matchsticks of crisp-sweet Asian pear, quail egg yolks, and crunchy sesame seeds.

Korean Beef Tartare (Yukhoe)

¼ cup (60 ml) soy sauce

(15 ml) sesame oil

(15 ml) honey

(15 ml) minced fresh ginger

garlic,

green onions,

(30 ml) gochujang chili paste

Asian pear,

quail eggs, yolks

(60 ml) white sesame seeds, toasted

Cut beef into -inch (.75 cm) slices. Stack slices and cut again into ribbons.

In a mixing bowl, make a dressing by whisking together soy sauce, sesame oil, honey, ginger, garlic, half of the green onions, and gochujang chili paste.

Combine the dressing with the beef ribbons.

Arrange portions of Asian pear matchsticks on plates, top with the dressed beef.

Garnish with yolks, sesame seeds, and remaining green onions. Serve cold.

petite liche de 600 grams environ

Vider et levez les filets de la liche, vous pouvez les faire lever par votre poissonier. Enlevez la peau et détaillez la chair en très petits dés. Réservez dans un bol. 

Emincez très finement l&#039;oignon nouveau. Pelez le poivron et détaillez-le en très petite brunoise ( très petit dés), ajoutez-les aux dés de liche. 

Assaisonnez avec le vinaigre de mandarine, l&#039;huile d&#039;olive, le sel et une pincée de piment d&#039;Espelette.

Râpez quelques zestes des 3 agrumes et mélangez de façon à ce que tous les ingrédients se mêlent. Réservez 30 min au frais et dressez au dernier moment, juste avant de les déguster sur des cuillères ou dans de petites verrines

Dans un grand bol, mélanger le jus de citron, les moutardes, le jaune d’oeuf, les câpres et le sambal oelek. Ajouter l’huile en filet en fouettant continuellement. Rectifier l’assaisonnement.

À l’aide d’un couteau, hacher finement la viande. Ajouter la vinaigrette, les herbes et l’échalote  à la vinaigrette. Saler, poivrer et bien mélanger. Si désiré, ajouter du sambal oelek au goût. Accompagner le tartare de croûtons de pain baguette grillés, de frites maison et de salade verte.

Est ce que je peux prendre une viande de gibier congelée, est ce risquė pour la santė étant donné qu'on decongèle  ? Merci !

Ce n’est pas que la recette originale n’est pas super loin de là! Mais pour les plus audacieux, ajoutez du fromage en grains haché très finement pour encourager nos producteurs de fromage. Pour les cowboys culinaires, mangue hachée en plus ;) Très bizarre, mais le résultat est surprenant!

Certains de mes amis disent que je fais LE meilleur tartare du monde grâce à cette recette. Je l'ai fait un nombre incalculable de fois. C'est facile et vraiment délicieux. Meilleur qu'au resto. Et beaucoup moins cher!

Je ne compte plus le de fois où j’ai fait cette recette mais surtout, c’est grâce à elle que mon conjoint mange maintenant du tartare!

Vraiment le meilleur que j'ai mangé, ajouté un petit cornichon haché très finement et gardé l'assaisonnement mais pour seulement 1 lb de boeuf !

Pour avoir essayé plusieurs recettes de tartare de boeuf, c'est de loin le meilleur! 
Je n'en mange plus au resto car je suis toujours déçue :)

500 g de filet ou

échalotes ciselées (ou oignons blancs)

cuillers à soupe de câpres

bouquet de persil plat

cornichons

jaunes d'oeufs

cuillers d'huile de tournesol ou colza

cuillers à soupe de worcestershire sauce

cuillers à soupe de moutarde

quelques gouttes de tabasco

sel et poivre du moulin

Clarifier les œufs (séparez les jaunes des blancs).

Dans un saladier, mélanger les jaunes d'oeufs avec la moutarde ajoutez la Worcestershire sauce puis l'huile, comme pour une mayonnaise.

Incorporez ensuite les échalotes (ou oignons), le persil, les câpres et les cornichons avec la viande.

Mélanger puis assaisonner avec le sel, le poivre et le Tabasco.

Servir le tartare de boeuf sur assiette. Pour une présentation propre vous pouvez utiliser un cercle pour le dressage.

A simple shrimp tartare with a layer of avocado lime marinated raw shrimps topped with lovely strawberry. You&#39;ll impress your guests with this one, and no cooking involved!

Shrimp tartare with avocado and strawberries

200 g small fresh shrimps (could use frozen ones too)

strawberries

chives (finely chopped)

limes (juiced)

salt and pepper

Clean the shrimp, if not done, take the veins out and wash them in cold water.

Add the shrimp to a small bowl with the lime juice, salt (enough to barely cover them).

Let marinate in the refrigerator from minimum 3 to 12 hours (longer the firmer the texture).

Cut the avocado, strawberry and chives.

Add to the avocado, olive oil, chives, a lime squeeze, salt and pepper and mix.

In the center of a plate, add a small cookie cutter (the metal cylinder) add a bottom layer of avocado mix, then the lime marinated shrimps then top with strawberries.
